背景技术
魔芋(Amorphophallus konjac K koch简称kj)又名蒟蒻,主要分布在亚洲,我国资源丰富,种植面积是东南亚产区的80%,主要分布在大巴山的湖北、四川、陕西及云南等地,魔芋的扁形地下根茎含有丰富的葡甘聚糖(Konjac Glucomannan简称KGM)是由许多D-葡萄糖和D-甘露糖按1∶1.69摩尔比,通过β-14糖苷键结合而成的复合多糖—魔芋纤维素.
纤维素是我们膳食结构中非常重要,不可缺少的组成份。世界粮农组织建议正常人群对纤维素的摄入量应为27克/日,美国防癌协会推荐的标准为每天30-40克,欧洲共同体食品科学委员会推荐的标准为每人每天30克,我国营养协会在2000年建议成年人适宜摄入量为 30克/日,然而美国国家健康统计中心Hyatt sville的调查表明:“消费者现在日均纤维素摄入量仅为14-15克,远远低于标准的要求”。据调查我国国民从日常食物中摄取的膳食纤维只有8-12克/日,营养学家的研究表明,摄入2000大卡的饮食时就需要补充25克纤维素,而摄入2500大卡就得补充30克膳食纤维,也就是说越吃得好(高脂高蛋白)就越要多补充膳食纤维,否则就导致肥胖,高血脂,高血糖…等心脑血管疾病。膳食纤维特别是魔芋可溶性膳食纤维,其保健和药用功能的多样性超过任何其它纤维素,研究证实魔芋纤维具有良好的平衡营养清理肠道的功能。
2010年8月12日卫生部为了促进营养改善工作,提高群众健康水平制定了《营养改善工作管理办法》,其总则指出“营养改善工作应当以平衡膳食,合理营养,适量运动为中心。”膳食纤维具有极好的调节体内营养平衡的作用。早在1998年美国FDA建议:“补充必要的膳食纤维可有效地降低血液中的胆固醇、甘油三脂、预防肥胖,可促进肠道蠕动,软化宿便,预防便秘,预防结肠癌和直肠癌,可清除体内毒素,可调节高脂、高蛋白、糖类在肠道内的吸收,降低餐血糖,可促进肠道中有益菌的增殖,增强人体免疫力。”美国walsh用双盲法实验肯定了魔芋纤维素平衡营养,通便减肥作用,如人体实验:举重运动员在不限制其正常饮食,饮水的情况下,服食16%魔芋食品,三天减轻2.45公斤(为原体重的3.2%)。
今天人们生活水平不断提高,膳食结构正在迅速发生改变,日常摄入的碳水化合物已主要来自精制食品,高脂、高蛋白大量增加,而纤维素大大降低,致使肥胖,高血压,高血脂,高血糖等心脑血管疾病迅速成为人类健康和生命的严重威胁。多吃蔬菜水果是一个重要的措施。但是蔬菜水果的含水量很高,吃100克水果或蔬菜其中仅含零点几克的纤维素(如小白菜仅含0.7%白萝卜仅0.8%含纤维素较多的苹果也只含1.2%克),一天能吃多少呢?针对摄入高脂高蛋白高糖的中老年人群(30-60),必须增加纤维的补充摄入,因为只有增加纤维素的摄入量才能调节,平衡人体对高脂、高蛋白、高糖的吸收,从而促进健康长寿。
魔芋中主要成分是葡甘聚糖,当魔芋粉与水接触时,水分子进入魔芋粉颗粒并被吸入到魔芋颗粒的分子链中,逐渐使颗粒膨胀至原来体积的约200倍,是一种优良的可溶性膳食纤维。在现有公布的发明专利中魔芋粉的使用均为直接添加,但由于魔芋膳食纤维的膨胀性特性,单独包装添加量均小于等于2毫克,且口感较差,达不到膳食纤维应该具有的健康功能。
为此我们研制了通过生物发酵技术制备的高含量的具备一定功能性的健康固体饮料——魔芋膳食素。
发明内容:
本发明的目的是为了弥补现有技术的不足,提供一种以魔芋膳食纤维为主、辅以蓝莓、沙棘、茯苓、枸杞等多种天然植物成份制成的,用以平衡营养、快速清理肠道、改善便秘、平稳餐后血糖、控制体重等功效的膳食固体饮料。
为了解决上述技术问题本发明的所采用的技术方案为:
一种以魔芋膳食纤维为主的天然植物制成的多营养膳食固体饮料,的膳食固体饮料由主料包和辅料包组成;
主料包由下述组分及其重量份构成:
小麦胚芽粉50-70份;魔芋膳食纤维5-10份;燕麦粉5-8份;麦芽糊精4-6份;高活性酵母1-2份;奶液2-5份;
辅料包由下述组分及其重量份构成:
抗性糊精0.5-1.5份;沙棘粉0.5-1.5份;蓝莓粉0.5-1.5份;茯苓粉0.5-1.5份;枸杞粉0.5-1.5份;螺旋藻粉0.05-0.15份;黄秋葵粉 0.05-0.15份;甜菊糖苷0.01-0.03份;
膳食固体饮料的生产工艺由主料包制作工艺和辅料包制作工艺;
主料包制作工艺如下:取小麦胚芽粉50-70份,粘度为 20000-35000mpa.s魔芋膳食纤维5-10份、燕麦粉5-8份、麦芽糊精 4-6份、高活性酵母1-2份、奶液2-5份,备用;将上述备用的各组分一起置入奶液中进行溶解,充分搅拌混匀至面团状,细腻光滑,手感柔软,呈现魔芋胶特性,备用;将面团状物置入室温在25℃-30℃的发酵容器内,发酵40-60分钟,经充分酵解膨胀,直至表面光滑无颗粒,弹性力度好,再将面团状物制成面饼,放入烘箱内烘烤,当温度升至200℃时,再焙烤10分钟,退火,静待2-3分钟后取出冷却,备用;将冷却后的薄面饼粉碎至均匀的颗粒状,制成主料包;
辅料包制作工艺如下:取抗性糊精0.5-1.5份、沙棘粉0.5-1.5份、蓝莓粉0.5-1.5份、茯苓粉0.5-1.5份、枸杞粉0.5-1.5份、螺旋藻粉 0.05-0.15份、黄秋葵粉0.05-0.15份、甜菊糖苷0.01-0.03份,一并转入容器内混匀,经精磨筛制成粉末,粉末筛目数为40-60目,混合后即为辅料包;
将上述制成的主料包和辅料包按70-90份主料包和10-30份辅料包的配比提取再混匀,即为魔芋膳食固体饮料。
作为一种优选,主料包由下述给份及其重量份构成:
小麦胚芽粉60份;魔芋膳食纤维7.5份;燕麦粉6.5份;麦芽糊精5份;高活性酵母1.5份;奶液3.5份。
作为一种优选,奶液以乳粉用水溶成奶液,奶液浓度为2%-5%。
作为一种优选,辅料包由下述组分及其重量份构成:
抗性糊精1份;沙棘粉1份;蓝莓粉1份;茯苓粉1份;枸杞粉 1份;螺旋藻粉0.1份;黄秋葵粉0.1份;甜菊糖苷0.02份。
作为一种优选,抗性糊精、沙棘粉、蓝莓粉、茯苓粉、枸杞粉、螺旋藻粉、黄秋葵粉和甜菊糖苷均为天然植物原果采取低温萃取或直接精磨粉碎,然后脱水烘干制成。
作为一种优选,主料包制作工艺中发酵温度为28℃、发酵时间为50分钟;辅料包制作工艺中粉末筛目数为50目。
为了制成不同配方固体饮料也可以添加辅料包2,辅料包2由下列组份制成:百合粉、金银花粉、芸豆粉、山药粉、红枣粉、薏米粉、棕榈酸维生素A、维生素B1、维生素B2、维生素B6、维生素B12、维生素 C、维生素D3、维生素E为原料,;
本发明具有以下的有益作用:
1.使用的魔芋胶(是对魔芋精粉进行深加工的产物)其主要成分葡甘聚糖含量达90%以上,粘度在20000-35000(mpa.s),本产品可以加入10%以上的魔芋胶。
2.魔芋胶粘性较大,遇水膨胀可达自身体积的80倍以上,很难大量添加到食品中,且口感粘稠,若直接添加原粉,黏腻难以下咽。本发明工艺解决了魔芋胶在食品中添加困难的难题,且通过膳食纤维的生物发酵工艺,溶解细腻,口感爽滑,体验感好。
3.魔芋膳食素的主料包中添加的小麦胚芽粉、燕麦粉等成分还具有以下特点:
小麦胚芽:是从优质小麦粒中萃取的精华,是一种高蛋白、高维生素E、低热、低脂、低胆固醇的营养品。含有维生素B族、维生素D、不饱和脂肪酸、核酸、叶酸、二十八烷醇和钙、铁、锌、硒等10余种矿物质等,是非常理想的微量金属元素的供给源,是“天然维生素E 的仓库”,是“人类的天然营养宝库”。
燕麦:属低热食品,含有极其丰富的亚油酸,可降低甘油三脂的低密度脂肪蛋白,促使胆固醇排泄,防治糖尿病,有利于减少糖尿病的血管并发症的发生;还可可通便导泄,对于习惯性便秘患者有很好的帮助,对脂肪肝、浮肿等也有辅助疗效,是中老年人增强体力、延年益寿的健康食品。
4、魔芋膳食素制作中还添加了抗性糊精、沙棘粉、蓝莓粉、茯苓粉、枸杞粉、螺旋藻粉、黄秋葵粉、甜菊糖苷为辅料,这些都是天然植物果蔬成分,热量低,营养丰富,富含各种人体需要的营养成分,特别是膳食纤维、维生素、微量元素等,还有一些药食同源类植物成分,可以调节机体功能,平衡体内营养,维持代谢顺畅,增强机体免疫力。
茯苓在中国的传统医学中,药用已有二千多年的历史,《神农本草经》中把茯苓列为上品,古人称茯苓为“四时神药”,因为它功效非常广泛,不分四季,将它与各种药物配伍,不管寒、温、风、湿诸疾,都能发挥其独特功效。茯苓味甘、淡、性平,入药具有利水渗湿、益脾和胃、宁心安神之功用。现代医学研究:茯苓能增强机体免疫功能,茯苓多糖有明显的抗肿瘤及保肝脏作用。
枸杞的营养成分丰富,枸杞子中含有大量的蛋白质、β一胡萝b 素、叶黄素、氨基酸、维生素和铁、锌、磷、钙等人体必需的营养成分,有促进和调节免疫功能、保肝和抗衰老三大药理作用。枸杞多糖对人体具有改善新陈代谢、调节内分泌、促进蛋白质合成、加速肝脏解毒和受损肝细胞的修复,抑制胆固醇和甘油三酯的功能,历代医家治疗肝血不足、肾阴亏虚引起的视物昏花和夜盲症,常常使用枸杞子。中医认为枸杞味甘,性平,入肝肾经,具有补气强精、滋补肝肾、抗衰老、止消渴、暖身体的功效。
黄秋葵有蔬菜王之称,含有由果胶、牛乳聚糖及阿拉聚糖等多糖组成的粘性物质,营养丰富,它的果胶为可溶性纤维。有健胃肠,滋补阴阳之功效。据测定每百克黄秋葵中含蛋白质2.5克、脂肪0.1克、糖类2.7克,纤维素A含量660国际单位,钙81毫克、磷63毫克、铁0.8 毫克,是一种新世纪理想的高档绿色营养保健蔬菜。
蓝莓果有极强的药用价值及营养保健功能,国际粮农组织将其列为人类五大健康食品之一。蓝莓营养丰富,不仅富含蛋白质、维生素等常规营养成分,矿物质和微量元素含量也相当可观,还含有极为丰富的黄酮类和多糖类化合物,因此又被称为“水果皇后”和“浆果之王”。主要成分花青素是一种纯天然的抗衰老营养补充剂,是目前人类发现的最有效的抗氧化生物活性剂。
沙棘果实营养丰富,据测定其果实中含有多种维生素、脂肪酸、微量元素、亚油素、沙棘黄酮、超氧化物等206种对人体有益的活性物质和各种氨基酸。具有抗疲劳和增强机体活力及抗癌等特殊药理性能,具有保护和加速修复胃黏膜、增加肠道双歧杆菌的作用。其中维生素C含量极高,每100克果汁中,维生素C含量可达到825—1100毫克,是猕猴桃的2—3倍,素有维生素C之王的美称。
螺旋藻蛋白质含量高,而脂肪、纤维素含量低,是维生素B12和β-胡萝卜素含量最高的食品。它含有具有防癌、治癌作用的藻类蛋白, 以及其他大量矿质元素和提高机体免疫力的生物活性物质。干粉的蛋白质含量高达60%~72%,相当于大豆的1.7倍、小麦的6倍、全脂奶粉的2.9倍。它全价浓缩了人体最需要的各种维生素。螺旋藻还是叶绿素的天然宝库,量多质优,叶绿素a的分子结构与人的血红素十分相似,是人类合成血红蛋白的直接原料,堪称“绿色血液”。
甜菊糖苷:是一种天然植物性甜味剂,甜度为蔗糖的200倍,适度可口,是最接近砂糖的甜味剂,食用后不被吸收,不产生热能,故为糖尿病、肥胖病患者良好的天然甜味剂。

下面结合实施例对本发明做进一步的说明。
实施例1
一种以魔芋膳食纤维为主的天然植物制成的多营养膳食固体饮料,魔芋膳食固体饮料由主料包和辅料包组成;
主料包由下述组分及其重量份构成:
小麦胚芽粉50份;魔芋膳食纤维5份;燕麦粉5份;麦芽糊精 4份;高活性酵母1份;奶液2份;
辅料包由下述组分及其重量份构成:
抗性糊精0.5份;沙棘粉0.5份;蓝莓粉0.5份;茯苓粉0.5份;枸杞粉0.5份;螺旋藻粉0.05份;黄秋葵粉0.05份;甜菊糖苷0.01 份;
魔芋膳食固体饮料的生产工艺由主料包制作工艺和辅料包制作工艺;
主料包制作工艺如下:取小麦胚芽粉50份,粘度为20000mpa.s 魔芋膳食纤维5份、燕麦粉5份、麦芽糊精4份、高活性酵母1份、奶液2份,备用;将上述备用的各组分一起置入奶液中进行溶解,充分搅拌混匀至面团状,细腻光滑,手感柔软,呈现魔芋胶特性,备用;将面团状物置入室温在25℃℃的发酵容器内,发酵40分钟,经充分酵解膨胀,直至表面光滑无颗粒,弹性力度好,再将面团状物制成面饼,放入烘箱内烘烤,当温度升至200℃稳定时,再焙烤10分钟,退火,静待2-3分钟后取出冷却,备用;将冷却后的薄面饼粉碎至均匀的颗粒状,制成主料包;
辅料包制作工艺如下:取抗性糊精0.5份、沙棘粉0.5份、蓝莓粉0.5份、茯苓粉0.5份、枸杞粉0.5份、螺旋藻粉0.05份、黄秋葵粉0.05份、甜菊糖苷0.01份,一并转入容器内混匀,经精磨筛制成粉末,粉末筛目数为50目,混合后即为辅料包;
将上述制成的主料包和辅料包按70-90份主料包和10-30份辅料包的配比提取再混匀,即为魔芋膳食固体饮料。

膳食固体饮料的生产工艺由主料包制作工艺和辅料包制作工艺;
主料包制作工艺如下:取小麦胚芽粉60份,粘度为30000mpa.s 魔芋膳食纤维8份、燕麦粉7份、麦芽糊精5份、高活性酵母1.5份、奶液4份,备用;将上述备用的各组分一起置入奶液中进行溶解,充分搅拌混匀至面团状,细腻光滑,手感柔软,呈现魔芋胶特性,备用;将面团状物置入室温在28℃的发酵容器内,发酵50分钟,经充分酵解膨胀,直至表面光滑无颗粒,弹性力度好,再将面团状物制成面饼,放入烘箱内烘烤,当温度升至200℃稳定时,再焙烤10分钟,退火,静待2-3分钟后取出冷却,备用;将冷却后的薄面饼粉碎至均匀的颗粒状,制成主料包;
辅料包制作工艺如下:取抗性糊精1份、沙棘粉1份、蓝莓粉1 份、茯苓粉1份、枸杞粉1份、螺旋藻粉1份、黄秋葵粉1份、甜菊糖苷0.02份,一并转入容器内混匀,经精磨筛制成粉末,粉末筛目数为50目,包装即为辅料包;
将上述制成的主料包和辅料包按70-90份主料包和10-30份辅料包的配比提取再混匀,即为膳食固体饮料。
实施例3
一种以魔芋膳食纤维为主的天然植物制成的多营养膳食固体饮料,的膳食固体饮料由主料包和辅料包组成;
主料包由下述组分及其重量份构成:
小麦胚芽粉70份;魔芋膳食纤维10份;燕麦粉8份;麦芽糊精 6份;高活性酵母2份;奶液5份;
辅料包由下述组分及其重量份构成:
抗性糊精1.5份;沙棘粉1.5份;蓝莓粉1.5份;茯苓粉1.5份;枸杞粉1.5份;螺旋藻粉0.15份;黄秋葵粉0.15份;甜菊糖苷0.03 份;
膳食固体饮料的生产工艺由主料包制作工艺和辅料包制作工艺;
主料包制作工艺如下:取小麦胚芽粉70份,粘度为35000mpa.s 魔芋膳食纤维10份、燕麦粉8份、麦芽糊精6份、高活性酵母2份、奶液5份,备用;将上述备用的各组分一起置入奶液中进行溶解,充分搅拌混匀至面团状,细腻光滑,手感柔软,呈现魔芋胶特性,备用;将面团状物置入室温在30℃的发酵容器内,发酵60分钟,经充分酵解膨胀,直至表面光滑无颗粒,弹性力度好,再将面团状物制成面饼,放入烘箱内烘烤,当温度升至200℃稳定时,再焙烤10分钟,退火,静待2-3分钟后取出冷却,备用;将冷却后的薄面饼粉碎至均匀的颗粒状,制成主料包;
辅料包制作工艺如下:取抗性糊精1.5份、沙棘粉1.5份、蓝莓粉1.5份、茯苓粉1.5份、枸杞粉1.5份、螺旋藻粉0.15份、黄秋葵粉0.15份、甜菊糖苷0.03份,一并转入容器内混匀,经精磨筛制成粉末,粉末筛目数为60目,包装即为辅料包;
将上述制成的主料包和辅料包按70-90份主料包和10-30份辅料包的配比提取再混匀,即为膳食固体饮料。

所述主料包由下述组分及其重量份构成:
小麦胚芽粉50-70份;魔芋膳食纤维5-10份;燕麦粉5-8份;麦芽糊精4-6份;高活性酵母1-2份;奶液2-5份;
所述辅料包由下述组分及其重量份构成:
抗性糊精0.5-1.5份;沙棘粉0.5-1.5份;蓝莓粉0.5-1.5份;茯苓粉0.5-1.5份;枸杞粉0.5-1.5份;螺旋藻粉0.05-0.15份;黄秋葵粉0.05-0.15份;甜菊糖苷0.01-0.03份;
所述膳食固体饮料的生产工艺由主料包制作工艺和辅料包制作工艺;
所述主料包制作工艺如下:取小麦胚芽粉50-70份,粘度为20000-35000mpa.s魔芋膳食纤维5-10份、燕麦粉5-8份、麦芽糊精4-6份、高活性酵母1-2份、奶液2-5份,备用;将上述备用的各组分一起置入奶液中进行溶解,充分搅拌混匀至面团状,细腻光滑,手感柔软,呈现魔芋胶特性,备用;将所述面团状物置入室温在25℃-30℃的发酵容器内,发酵40-60分钟,经充分酵解膨胀,直至表面光滑无颗粒,弹性力度好,再将面团状物制成面饼,放入烘箱内,烧烤温升至200℃稳定时,再放入焙烤10分钟,退火,静待2-3分钟后取出冷却,备用;将冷却后的薄面饼粉碎至均匀的颗粒状,制成主料包;
所述辅料包制作工艺如下:取抗性糊精0.5-1.5份、沙棘粉0.5-1.5份、蓝莓粉0.5-1.5份、茯苓粉0.5-1.5份、枸杞粉0.5-1.5份、螺旋藻粉0.05-0.15份、黄秋葵粉0.05-0.15份、甜菊糖苷0.01-0.03份,一并转入容器内混匀,经精磨筛制成粉末,粉末筛目数为40-60目,混合后即为辅料包;
将上述制成的主料包和辅料包按70-90份主料包和10-30份辅料包的配比提取再混匀,即为所述魔芋膳食固体饮料。
2.根据权利要求1所述的一种以魔芋膳食纤维为主的天然植物制成的多营养膳食固体饮料,其特征在于,所述主料包由下述给份及其重量份构成:
小麦胚芽粉60份;魔芋膳食纤维7.5份;燕麦粉6.5份;麦芽糊精5份;高活性酵母1.5份;奶液3.5份。
3.根据权利要求1或2所述的一种以魔芋膳食纤维为主的天然植物制成的多营养膳食固体饮料,其特征在于,所述奶液以乳粉用水溶成奶液,奶液浓度为2%-5%。
4.根据权利要求1所述的一种以魔芋膳食纤维为主的天然植物制成的多营养膳食固体饮料,其特征在于,所述辅料包由下述组分及其重量份构成:
抗性糊精1份;沙棘粉1份;蓝莓粉1份;茯苓粉1份;枸杞粉1份;螺旋藻粉0.1份;黄秋葵粉0.1份;甜菊糖苷0.02份。
5.根据权利要求1或4所述的一种以魔芋膳食纤维为主的天然植物制成的多营养膳食固体饮料,其特征在于,所述抗性糊精、沙棘粉、蓝莓粉、茯苓粉、枸杞粉、螺旋藻粉、黄秋葵粉和甜菊糖苷均为天然植物原果采取低温萃取或直接精磨粉碎,然后脱水烘干制成。
6.根据权利要求1所述的一种以魔芋膳食纤维为主的天然植物制成的多营养膳食固体饮料,其特征在于,所述主料包制作工艺中发酵温度为28℃、发酵时间为50分钟;所述辅料包制作工艺中粉末筛目数为50目。
