背景技术
肥胖是一种营养代谢综合失调性疾病和低度全身慢性炎症。世界卫生组织认为,肥胖与艾滋病、吸毒、酗酒并列为世界四大社会问题,医学界称之为人类死亡率高的癌症、冠心病、糖尿病、高血压、高血脂、心脑血管疾病都与肥胖直接有关。肥胖正在成为一个广受关注的流行病。
牛蒡为菊科牛蒡属二年生草本植物,其叶、根及种子都可入药,为药食两用食物。牛蒡具有多种生物活性,主要包括抗菌、抗突变、防癌、抗氧化、抗衰老、抗疲劳、免疫调节、降血糖、降血脂等,具有很高的药用价值和营养价值。牛蒡根作为牛蒡的功效部位之一,不仅含有丰富的蛋白质、低聚糖等营养成分,而且含有牛蒡酸、醛类、多炔类及挥发油等多种小分子活性成分。
随着经济的日益发展,人们生活水平和健康意识不断提高,对减肥产品的需求越来越讲究营养性、安全性。目前市场上还没有以牛蒡根为主要原料的用于减肥的代餐产品。

本发明的目的在于提供一种集保健和营养于一体的牛蒡减肥食品。
本发明的另一目的在于提供上述牛蒡减肥食品的制备方法,原料的营养损失少,制得的产品口感好。
为实现上述目的,本发明的一种牛蒡减肥食品,由以下质量百分比的原料组成:牛蒡根粉38~45%、铁棍山药粉10~20%、山楂粉8~15%、大麦青粉2~6%、枸杞粉1~2%、大豆分离蛋白10~20%、麦芽糖醇2~3%、脱脂乳粉3~4%、大豆磷脂2~3%、魔芋粉1~2%、辅料1~2%;其中,所述的辅料包括0.1~0.2%维生素C、0.1~0.2%维生素B6、0.1~0.2%叶酸、0.2~0.5%氨基酸、0.5~0.9%辅酶。
优选的,所述的牛蒡减肥食品由以下质量百分比的原料组成:牛蒡根粉40%、铁棍山药粉17%、山楂粉10%、大麦青粉5%、枸杞粉2%、大豆分离蛋白15%、麦芽糖醇2.5%、脱脂乳粉3.5%、大豆磷脂2.5%、魔芋粉1%、辅料1.5%;其中,所述的辅料包括0.15%维生素C、0.15%维生素B6、0.15%叶酸、0.4%氨基酸、0.65%辅酶。
进一步地,所述的牛蒡根粉通过以下步骤制得:精选二年生新鲜牛蒡根,剔除腐烂、虫蛀、霉变、干裂不合格品,将合格的牛蒡根整齐间距堆放到冷库中,在~1~3℃下冷藏6个月以上,使牛蒡中的淀粉、糖类经过6个月以上的低温发酵陈化转化为菊糖和低聚糖;取出牛蒡根,用清水冲洗,将洗净的牛蒡根去皮,去皮后置于含2‰的柠檬酸和1‰的抗坏血酸的护色液中护色,护色后置于-38℃~-30℃低温冻干,得到牛蒡根干制品,通过超微冲击磨按颗粒要求细度粉碎。

优选的,所述的牛蒡根粉、铁棍山药粉、山楂粉、大麦青粉、枸杞粉的粒度为300~500目,更容易使营养物质被人体吸收。
上述牛蒡减肥食品的制备方法,包括以下步骤:
(1)按配比分别称取大豆分离蛋白、麦芽糖醇、脱脂乳粉、大豆磷脂、辅料,混合后溶于水中,配制成质量百分含量为8%~12%的营养液;
(2)按配比分别称取牛蒡根粉、铁棍山药粉、山楂粉、大麦青粉、枸杞粉、魔芋粉,混合后向其中加入步骤(1)的营养液,搅拌均匀后投入一料仓中,进行挤压造粒,制得粒径1~2mm球形颗粒;
(3)将制得的颗粒平铺摊开,在60~80℃烘干15~20min;
(4)对步骤(3)中烘干的颗粒进行灭菌,然后进行真空包装,检查合格即得。
本发明所述的牛蒡减肥食品中,各成分作用如下:
牛蒡根:牛蒡根主要含硫炔类、多炔类、多酚类、挥发油、菊糖以及氨基酸等化学成分;药理活性主要有抗菌、抗突变、防癌、抗氧化、抗疲劳、降血糖、降血脂和免疫调节等。
铁棍山药:铁棍山药中含皂苷、粘液质、胆碱、山药碱、淀粉、糖蛋白、自由氨基酸、多酚氧化酶、维生素C、碘质、16种氨基酸,还有硒、铁、铜、锌、锰、钙等多种微量元素;味甘、性平、无毒,具有健脾、补肺、固肾、益脑、益精养颜、抗衰老、抗肿瘤、抗疲劳、抗有害物质刺激、调节代谢、增强免疫机能、促进生长、调节内分泌、调节心肺功能、兴奋制血系统、调节神经系统等功效。
山楂:山楂系蔷薇科山楂属草本植物,富含有机酸、黄酮、维生素及矿物质等,其具有降血脂、抑菌、抗动脉粥样硬化和抗癌等功效。
大麦若叶:大麦若叶是大麦生长到20~30公分的幼苗,含有多种天然维生素、矿物质、45%左右的天然食物纤维、30%左右的蛋白质及SOD活性酶等多种抗氧成份,碱性度高达66.5,可以中和体内酸性毒素、平衡酸碱、有效改善酸性体质,还可以养颜美容;增加饱腹感,有助控制体重;预防及改善高血压、高血脂、糖尿病、脂肪肝、动脉硬化等症状;降低患癌风险。
枸杞:含枸杞多糖、甜菜碱、氨基酸、胡萝卜素、维生素B1、B2、C,钙、磷、铁等成分;味甘、性平,可以防止动脉粥样硬化,滋补肝肾,抑制脂肪肝,促进肝细胞的再生,具有提高机体免疫力、降血压、降血脂、降血糖、补气强精、抗衰老、止消渴、暖身体、抗肿瘤的功效。

本发明具有如下有益效果:
(1)抑制能量转化:可以减少80%以上的葡萄糖转换为脂肪,促使多余的葡萄糖转化为能量被人体利用,减少脂肪堆积;还可以抑制机体对油腻食物的需求,使饮食自然地偏向清淡,却不影响正常饮食。
(2)燃烧脂肪和控制反弹:添加的氨基酸、维生素、辅酶,可抑制体内脂肪生成,促进体内脂肪燃烧,同时不断地改善体内脂肪的分布状态。

上述牛蒡减肥食品的制备方法,包括以下步骤:
(1)原料的准备:
精选二年生新鲜牛蒡根,剔除腐烂、虫蛀、霉变、干裂不合格品,将合格的牛蒡根整齐间距堆放到冷库中,在0℃下冷藏6个月以上,使牛蒡中的淀粉、糖类经过6个月以上的低温发酵陈化转化为菊糖和低聚糖;取出牛蒡根,用清水冲洗,将洗净的牛蒡根去皮,去皮后置于含2‰的柠檬酸和1‰的抗坏血酸的护色液中护色,护色后置于-30℃低温冻干,得到牛蒡根干制品,通过超微冲击磨研磨成粒度为500目的牛蒡根粉;

上述牛蒡减肥食品的制备方法,包括以下步骤:
(1)原料的准备:

本发明牛蒡减肥食品的用法与用量:每天早、中、晚各一次,每次25~75克,用温开水冲泡服用均可,也可与果汁,牛奶等液体饮品混合冲泡使用。
将本发明三组实施例制得的牛蒡减肥食品在500例伴有不同程度肥胖的人群(体重120~200斤)中使用4周,每天食用三次,每次50克,作为代餐使用,减肥效果见下表:

本发明的牛蒡减肥食品口感好,食用后有饱腹感,不含添加剂,无任何毒副作用,减肥效果显著,皮肤变光滑,且无反弹情况发生。
Claims (9)
1.一种牛蒡减肥食品,其特征在于,其由以下质量百分比的原料组成:牛蒡根粉38~45%、铁棍山药粉10~20%、山楂粉8~15%、大麦青粉2~6%、枸杞粉1~2%、大豆分离蛋白10~20%、麦芽糖醇2~3%、脱脂乳粉3~4%、大豆磷脂2~3%、魔芋粉1~2%、辅料1~2%;其中,所述的辅料包括0.1~0.2%维生素C、0.1~0.2%维生素B6、0.1~0.2%叶酸、0.2~0.5%氨基酸、0.5~0.9%辅酶。
2.根据权利要求1所述的牛蒡减肥食品,其特征在于,其由以下质量百分比的原料组成:牛蒡根粉40%、铁棍山药粉17%、山楂粉10%、大麦青粉5%、枸杞粉2%、大豆分离蛋白15%、麦芽糖醇2.5%、脱脂乳粉3.5%、大豆磷脂2.5%、魔芋粉1%、辅料1.5%;其中,所述的辅料包括0.15%维生素C、0.15%维生素B6、0.15%叶酸、0.4%氨基酸、0.65%辅酶。
3.根据权利要求1或2所述的牛蒡减肥食品,其特征在于,所述的牛蒡根粉通过以下步骤制得:精选二年生新鲜牛蒡根,剔除腐烂、虫蛀、霉变、干裂不合格品,将合格的牛蒡根整齐间距堆放到冷库中,在-1~3℃下冷藏6个月以上;取出牛蒡根,用清水冲洗,将洗净的牛蒡根去皮,去皮后置于含2‰的柠檬酸和1‰的抗坏血酸的护色液中护色,护色后置于-38℃~-30℃低温冻干,得到牛蒡根干制品,通过超微冲击磨按颗粒要求细度粉碎。
4.根据权利要求1或2所述的牛蒡减肥食品,其特征在于,所述的铁棍山药粉通过以下步骤制得:精选无虫蛀、无霉烂、不变质、无杂质的新鲜铁棍山药,用清水冲洗,将洗净的铁棍山药去皮,去皮后置于含2‰的柠檬酸和1‰的抗坏血酸的护色液中护色,护色后置于-38℃~-30℃低温冻干,得到铁棍山药干制品,通过超微冲击磨按颗粒要求细度粉碎。
5.根据权利要求1或2所述的牛蒡减肥食品,其特征在于,所述的山楂粉通过以下步骤制得:精选成熟、无病虫害的新鲜山楂,剔除烂果后洗净阴干,去核后置于-38℃~-30℃低温冻干,得到山楂干制品,通过超微冲击磨按颗粒要求细度粉碎。
6.根据权利要求1或2所述的牛蒡减肥食品,其特征在于,所述的大麦青粉通过以下步骤制得:精选大麦若叶,用清水冲洗,洗净后置于-38℃~-30℃低温冻干,得到大麦若叶干制品,通过超微冲击磨按颗粒要求细度粉碎。
7.根据权利要求1或2所述的牛蒡减肥食品,其特征在于,所述的枸杞粉通过以下步骤制得:精选无虫蛀、无霉烂、不变质、无杂质的枸杞摘去残留梗和蒂后清洗干净,洗净后置于-38℃~-30℃低温冻干,得到枸杞干制品,通过超微冲击磨按颗粒要求细度粉碎。
8.根据权利要求1或2所述的牛蒡减肥食品,其特征在于,所述的牛蒡根粉、铁棍山药粉、山楂粉、大麦青粉、枸杞粉的粒度为300~500目。
9.一种权利要求1或2所述的牛蒡减肥食品的制备方法,其特征在于,包括以下步骤:
(1)按配比分别称取大豆分离蛋白、麦芽糖醇、脱脂乳粉、大豆磷脂、辅料,混合后溶于水中,配制成质量百分含量为8%~12%的营养液;
(2)按配比分别称取牛蒡根粉、铁棍山药粉、山楂粉、大麦青粉、枸杞粉、魔芋粉,混合后向其中加入步骤(1)的营养液,搅拌均匀后投入一料仓中,进行挤压造粒,制得粒径1~2mm球形颗粒;
(3)将制得的颗粒平铺摊开,在60~80℃烘干15~20min;
(4)对步骤(3)中烘干的颗粒进行灭菌,然后进行真空包装,检查合格即得。
