Abstract
本发明提供了一种小麦胚芽复合营养粉固体饮料及其制备方法,属于属于固体饮料食品加工领域。该固体饮料由小麦胚芽粉、藜麦粉、黑米粉、玉米粉、苦荞粉、燕麦粉、苹果粉、抹茶粉、低聚果糖、辣木叶粉、绿豆粉、西柚粉、魔芋精粉、樱桃果粉、维生素E、维生素C、维生素B1和维生素B2组成。本发明以小麦胚芽粉为主原料,搭配多种兼具营养价值和食疗保健作用的组分制成具有改善肠道、润肠通便、软化血管、解毒等功效的营养保健食品,其还能够增强机体免疫力和抗衰老能力;本发明的产品具有保质期长、食用方便的特点。

技术领域
本发明属于固体饮料食品加工领域,特别涉及一种小麦胚芽复合营养粉固体饮料及其制备方法。
背景技术
随着我国人民生活水平的不断提高,人们对身体健康的保健意识不断加强,饮食要求也越来越高,同时进入老龄化社会,老年人身患各种慢性疾病,由此带来的各种病痛的困扰,要求不单是口服各种药物控制缓解慢性病的发展,尤为重要的是通过日常饮食的合理搭配提高老年人的营养状态,使自我免疫力得到提高,从而提高老年人的生活质量。所以养生保健食品、营养食品逐渐成为人们尤其老年人的喜爱食品。目前市场上保健食品、营养食品种类丰富,主要是对谷物类食品提取蛋白质、对各种动植物提取营养成分制成的产品,针对慢性病老年人替代食品,对消费者提供某方面的营养素。
蛋白质是人体必需的营养物质之一,虽然目前蛋白质固体饮料市面售卖已很普遍,但现有的蛋白质固体饮料普遍存在着吸收利用率低的问题,营养组成搭配也较为单一,蛋白质粉一般只包含动物蛋白或者植物蛋白的单一蛋白,或者同时包含动物蛋白和植物蛋白,但是搭配不合理,或者辅助成分搭配不协调,不利于人体吸收等,无法满足人体基本需求。科学研究表明,谷物饮料是一类营养丰富、有益健康的饮料,已经逐渐成为众多研究的热点。
小麦胚芽被视为养生的天然宝物,具有食品和保健的双重功效。不但含有全面、丰富均衡的营养,而且,经常食用可保持人体的心脏、血液、骨骼、肌肉、神经的功能正常。它所含的蛋白质是一种优质的植物蛋白,含有人体必需的8种氨基酸,是提高机体免疫力、提高抗病能力的最基本物质;含有丰富的维生素,即维生素A、B族、C等,特别是含有贵重的天然维生素E,每百克高达34.9毫克以上,含量居食物之首,有软化血管、防治心脑血管病、延缓衰老等诸多功效;含有钙、钾、镁、铁、锌、铬、硒、磷、锰、铜等多种矿物质和微量元素,有调节血压、控制血糖、保护心脏的作用;含有多不饱和脂肪酸,尤其是人体内无法合成必需的亚油酸含量极高,可降低血脂,避免和减少心血管病的发生,所含的谷胱甘肽,是一种很强的抗癌物质,使体内化学致癌物质失去毒性,冲泡后的麦胚宝呈诱人的奶黄色,是胚芽自身的黄酮素,对心血管方面的疾病均有很好的治疗作用,它含有大量的膳食纤维,不但降低胆固醇、降低血糖,而且有润肠通便之功效,加速致癌物的排出,免患肠癌,麦胚还含有卵磷脂、胡萝卜素、核酸、叶酸等50多种天然营养成分。
发明内容
本发明的目的在于提供一种小麦胚芽复合营养粉固体饮料及其制备方法。
为了实现上述目的,本发明采用的技术方案如下:
一种小麦胚芽复合营养粉固体饮料,由按重量比计的小麦胚芽粉35-45%、藜麦粉0.5-1.5%、黑米粉0.5-1.5%、玉米粉1-3%、苦荞粉0.5-1.5%、燕麦粉0.5-1.5%、苹果粉8-11%、抹茶粉1-3%、低聚果糖8.5-10.5%、辣木叶粉1-3%、绿豆粉1-3%、西柚粉8-12%、魔芋精粉7-9%、樱桃果粉9-11%、维生素E 0.0005-0.0015%、维生素C 0.003-0.007%、维生素B1 0.001-0.003%和维生素B2 0.001-0.003%组成。
作为优选,本发明上述的小麦胚芽复合营养粉固体饮料,由按重量比计的小麦胚芽粉40%、藜麦粉1%、黑米粉1%、玉米粉2%、苦荞粉1%、燕麦粉1%、苹果粉10%、抹茶粉2%、低聚果糖9.99%、辣木叶粉2%、绿豆粉2%、西柚粉10%、魔芋精粉8%、樱桃果粉10%、维生素E 0.001%、维生素C 0.005%、维生素B1 0.002%和维生素B2 0.002%组成。
本发明上述的小麦胚芽复合营养粉固体饮料中,小麦胚芽粉采用80m目熟化粉,藜麦粉、黑米粉、玉米粉、苦荞粉、燕麦粉、苹果粉、抹茶粉、辣木叶粉、绿豆粉、西柚粉、魔芋精粉均采用120目细粉,低聚果糖的为纯度98%。
本发明还提供了上述小麦胚芽复合营养粉固体饮料的制作方法,采用常规营养粉制作方法将各组分制备成细粉,然后分别准确称取各组分,充分混合均匀后,灭菌、灌装。
本发明中,合理搭配了小麦胚芽粉、藜麦粉、黑米粉、玉米粉、苦荞粉、燕麦粉、苹果粉、抹茶粉、辣木叶粉、绿豆粉、西柚粉、樱桃果粉等多种兼具营养价值和食疗保健作用的组分;其中,小麦胚芽粉具有软化血管、防治心脑血管病、延缓衰老、调节血压、控制血糖、保护心脏、润肠通便、提高机体免疫力的作用;藜麦粉均衡补充营养,具有增强机体功能、修复体质、调节免疫力、抗癌、保护心血管的作用;黑米粉有利于降血糖、降血压,有抗衰老作用;玉米粉具有降血压、降血脂、抗动脉硬化、预防肠癌、美容养颜、延缓衰老等多种保健功效;苦荞粉具有软化血管、调节血管渗透性,降低血糖及血清胆固醇含量,清除体内自由基,阻断或减轻自由基对细胞和组织的损伤的作用;燕麦粉具有降低胆固醇、降血脂、调节血糖、改善消化功能、促进胃肠蠕动、润肠通、便改善血液循环、抗氧化、消除体内自由基的作用;苹果粉能够降低胆固醇,促进细胞微循环,提高细胞活性;抹茶粉富含茶多酚,能清除机体内过多的有害自由基,增强机体免疫、防癌、防衰老能力,降低血糖、血脂、血压,预防心脑血管疾病;辣木叶粉有降血糖、降脂、降压、抗肿瘤、抗氧化、通便、利尿、驱虫、改善睡眠等功效,长期食用可增强人体免疫功能,延缓衰老、预防疾病;绿豆粉能够改善肠道菌群,减少有害物质吸收,具有解毒、利水、抗菌、降血脂、抗衰老的作用;西柚粉能够增强人体的解毒功能、降低低密度脂蛋白胆固醇的含量,减轻动脉血管壁的损伤,维护血管功能,预防心脏病;樱桃果粉能够增强体质、抗贫血,具有健脑益智、解毒祛湿、收敛止痛、美白祛斑作用;低聚果糖能延长保质期,调节肠道功能、促进双歧杆菌或乳酸杆菌等在结肠中的生长,活化钙、镁、铁等矿物质和微量元素,促进矿物质和微量元素吸收,改善产品的口味,降低食品的热值,使产品口昧更细腻柔和、更凊爽。
综上所述,由于采用了上述技术方案,本发明的有益效果是:本发明以小麦胚芽粉为主原料,搭配多种兼具营养价值和食疗保健作用的组分制成具有改善肠道、润肠通便、软化血管、解毒等功效的营养保健食品,其还能够增强机体免疫力和抗衰老能力;本发明的产品具有保质期长、食用方便的特点。

为了使本发明的目的、技术方案及优点更加清楚明白,以下结合实施例,对本发明进行进一步详细说明。应当理解,此处所描述的具体实施例仅用以解释本发明,并不用于限定本发明。
实施例1
本实施例提供的小麦胚芽复合营养粉固体饮料,由小麦胚芽粉40公斤、藜麦粉1公斤、黑米粉1公斤、玉米粉2公斤、苦荞粉1公斤、燕麦粉1公斤、苹果粉10公斤、抹茶粉2公斤、低聚果糖9.99公斤、辣木叶粉2公斤、绿豆粉2公斤、西柚粉10公斤、魔芋精粉8公斤、樱桃果粉10公斤、维生素E 0.001公斤、维生素C 0.005公斤、维生素B1 0.002公斤和维生素B20.002公斤组成。
本实施例的小麦胚芽复合营养粉固体饮料制备方法是:先将小麦胚芽、藜麦、黑米、玉米、苦荞、燕麦、苹果、抹茶、辣木叶、绿豆、西柚、樱桃果分别清洗干净,其中,苹果、樱桃果去核,苹果、樱桃果、西柚脱水处理后粉碎成120目细粉,小麦胚芽熟化处理,然后熟化的小麦胚芽、藜麦、黑米、玉米、苦荞、燕麦、抹茶、辣木叶、绿豆分别烘干处理后粉碎成120目细粉,取120目魔芋精粉、纯度为98%的低聚果糖与各物料的细粉充分混合均匀,灭菌、灌装。
本实施例中,制备的产品按20g/袋、30袋/盒的标准包装,营养粉固体饮料冲泡后具有明显的果香味,气味芳香,口感柔和爽滑,冲调性好,水分含量不超过5%,复合国家执行标准GB/T 29602-2013的相关标准。
实验例
实验目的:本发明的产品对动物消化功能促进作用研究
实验动物:4周龄的断乳SD大鼠雌性40只,体重65-75g,据大鼠体重随机分为4组,每组10只大鼠:
实验方法:
对照组:仅饲料喂养;
实验组1:按5%的质量比掺入实施例1的小麦胚芽复合营养粉固体饮料的饲料喂养;
实验组2:按10%的质量比掺入实施例1的小麦胚芽复合营养粉固体饮料的饲料喂养;
实验组3:按20%的质量比掺入实施例1的小麦胚芽复合营养粉固体饮料的饲料喂养;
各实验组大鼠均在室温25℃、相对湿度68%的条件下饲喂1月,实验过程中,动物自由摄食和饮水,记录每日摄食量,每周称一次体重,实验结束时计算体重增重和食物利用率,结果如表1所示:

实验结果表明:如表1,实验组1-3的大鼠的进食量和增重及食物利用率均高于对照组,说明实验组1-3的复合营养粉固体饮料具有明显的促进消化功能;实验组1-3之间,随着营养粉添加量的增加,进食量和增重及食物利用率也随之增加,说明实施例1的复合营养粉固体饮料在一定范围内,随着添加量的提高,促进消化功能的效果越显著。
Claims (5)
1.一种小麦胚芽复合营养粉固体饮料,其特征在于:由按重量比计的小麦胚芽粉35-45%、藜麦粉0.5-1.5%、黑米粉0.5-1.5%、玉米粉1-3%、苦荞粉0.5-1.5%、燕麦粉0.5-1.5%、苹果粉8-11%、抹茶粉1-3%、低聚果糖8.5-10.5%、辣木叶粉1-3%、绿豆粉1-3%、西柚粉8-12%、魔芋精粉7-9%、樱桃果粉9-11%、维生素E 0.0005-0.0015%、维生素C0.003-0.007%、维生素B1 0.001-0.003%和维生素B2 0.001-0.003%组成。
2.根据权利要求1所述小麦胚芽复合营养粉固体饮料,其特征在于:由按重量比计的小麦胚芽粉40%、藜麦粉1%、黑米粉1%、玉米粉2%、苦荞粉1%、燕麦粉1%、苹果粉10%、抹茶粉2%、低聚果糖9.99%、辣木叶粉2%、绿豆粉2%、西柚粉10%、魔芋精粉8%、樱桃果粉10%、维生素E 0.001%、维生素C 0.005%、维生素B1 0.002%和维生素B2 0.002%组成。
3.根据权利要求1所述小麦胚芽复合营养粉固体饮料,其特征在于:所述小麦胚芽粉采用80m目熟化粉。
4.根据权利要求1所述小麦胚芽复合营养粉固体饮料,其特征在于:藜麦粉、黑米粉、玉米粉、苦荞粉、燕麦粉、苹果粉、抹茶粉、辣木叶粉、绿豆粉、西柚粉、魔芋精粉均采用120目细粉,采用的低聚果糖纯度为98%。
5.一种如权利要求1所述小麦胚芽复合营养粉固体饮料的制作方法,其特征在于,采用常规营养粉制作方法将各组分制备成细粉,然后分别准确称取各组分,充分混合均匀后,灭菌、灌装。
