一种酵素胶原蛋白杂粮果蔬即食代餐粥,包括如下重量份的原料组成:1-3份酵素粉,1-3份胶原蛋白,2-4份燕麦,2-4份小麦胚芽、2-4份亚麻籽粉,2-4份魔芋胶,3-5份玉米粒,3-5份紫米粒,2-4份黑米粒,2-4份紫薯片,2-4份南瓜片,2-4份黑米片,4-6份莲藕粉,3-5份葛根粉,1-3份红豆粉,2-4份薏米粉,1-3份黑芝麻粒,3-5份红枣颗粒,4-6份枸杞,2-4份蔓越莓干,2-4份蓝莓干,3-6份葡萄干。

步骤1、将水果洗净,切块,放入陶缸中进行发酵,加入10-30%红糖或蜂蜜之后每天搅拌1-2次,进行20-30天初级发酵,得到酵素初提液;
步骤2、向所述酵素初提液中加入1-10%的菌种进行发酵,发酵温度为30-40℃,时间为180天以上,得到发酵完成的酵素液;所述的1-10%的菌种为质量百分数,以酵素初提液质量为标准。
步骤3、将所述发酵完成的酵素液进行真空冷冻干燥,得到所述酵素粉。所述发酵完成的酵素液中包含酵素果肉和发酵液。
进一步的,步骤1中所述水果放入陶缸时,同时加入水果总量10-30%的糖,进行初级发酵。所述的水果为青柠檬、葡萄、龙眼、荔枝、哈蜜瓜、西瓜、芭乐、芒果、火龙果、橙、猕猴桃、诺丽果、桃、香蕉、梨、木瓜、大枣、百香果中至少6种的组合。

步骤1、将燕麦在100-120℃烘焙5-10min,得到熟燕麦;
步骤2、将所得熟燕麦与除胶原蛋白和酵素粉的上述其他所有原料按照比例混合,搅拌均匀,得到原料混合物;
步骤3、在搅拌条件下,向所述原料混合物中加入水,水的质量为所述原料混合物质量的2-3倍,水的温度为90-100℃,充分搅拌均匀,静置5min后,再添加胶原蛋白和酵素粉,即得所述的酵素胶原蛋白杂粮果蔬即食代餐粥。

步骤2、将所得熟燕麦与除胶原蛋白和酵素粉的上述其他所有原料按照比例混合,搅拌均匀,得到原料混合物;
步骤3、在搅拌条件下,向所述原料混合物中加入水,水的质量为所述原料混合物质量的2.5倍,水的温度为100℃,充分搅拌均匀,静置闷泡5min后,再添加胶原蛋白和酵素粉,即得所述的酵素胶原蛋白杂粮果蔬即食代餐粥。
其中,所述酵素粉采用如下方法制备:
步骤1、将水果洗净,切块,放入陶缸中进行密封发酵,加入20%红糖之后每天搅拌2次,进行25天初级发酵,得到酵素初提液;所述的水果为等质量的西瓜、芭乐、芒果、火龙果、橙、猕猴桃、诺丽果、桃、香蕉、梨、木瓜、大枣和百香果。
步骤2、向所述酵素初提液放入发酵罐中,加入酵素初提液质量5%的乳酸菌进行发酵,发酵温度为35℃,时间为240天,得到发酵完成的酵素液;
步骤3、将所述发酵完成的酵素液进行真空冷冻干燥,得到所述酵素粉。
本发明不局限于上述最佳实施方式,任何人在本发明的启示下都可得出其他各种形式的产品,但不论在其配方或组份上作任何变化,凡是具有与本申请相同或相近似的技术方案,均落在本发明的保护范围之内。
Claims (9)
1.一种酵素胶原蛋白杂粮果蔬即食代餐粥,其特征在于:包括如下重量份的原料组成:1-3份酵素粉,1-3份胶原蛋白,2-4份燕麦,2-4份小麦胚芽、2-4份亚麻籽粉,2-4份魔芋胶,3-5份玉米粒,3-5份紫米粒,2-4份黑米粒,2-4份紫薯片,2-4份南瓜片,2-4份黑米片,4-6份莲藕粉,3-5份葛根粉,1-3份红豆粉,2-4份薏米粉,1-3份黑芝麻粒,3-5份红枣颗粒,4-6份枸杞,2-4份蔓越莓干,2-4份蓝莓干,3-6份葡萄干。
2.根据权利要求1所述的酵素胶原蛋白杂粮果蔬即食代餐粥,其特征在于:包括如下重量份的原料组成:2份酵素粉,2份胶原蛋白,3份熟燕麦,3份小麦胚芽、3份亚麻籽粉,3份魔芋胶,4份玉米粒,4份紫米粒,3份黑米粒,3份紫薯片,3份南瓜片,3份黑米片,5份莲藕粉,4份葛根粉,2份红豆粉,3份薏米粉,2份黑芝麻粒,4份红枣颗粒,5份枸杞,3份蔓越莓干,3份蓝莓干,5份葡萄干。
3.根据权利要求1所述的酵素胶原蛋白杂粮果蔬即食代餐粥,其特征在于:所述亚麻籽粉、所述莲藕粉、所述葛根粉、所述红豆粉和所述薏米粉的粒径为150-400目。
4.根据权利要求1所述的酵素胶原蛋白杂粮果蔬即食代餐粥,其特征在于:所述玉米粒、紫米粒、黑米粒、黑芝麻粒、红枣颗粒、紫薯片、南瓜片和黑米片在混合前,均采用低温烘焙制熟。
5.根据权利要求1所述的酵素胶原蛋白杂粮果蔬即食代餐粥,其特征在于:所述酵素粉采用如下方法制备:
步骤1、将水果洗净,切块,放入陶缸中进行密封发酵,加入10-30%红糖或蜂蜜之后每天搅拌1-2次,进行20-30天初级发酵,得到酵素初提液;
步骤2、向所述酵素初提液中加入1-10%的菌种进行发酵,发酵温度为30-40℃,时间为180天以上,得到发酵完成的酵素液;
步骤3、将所述发酵完成的酵素液进行真空冷冻干燥,得到所述酵素粉。
6.根据权利要求5所述的酵素胶原蛋白杂粮果蔬即食代餐粥,其特征在于:步骤1中所述水果放入陶缸时,同时加入水果总量的10-30%的糖或纯蜂蜜,进行初级发酵。
7.根据权利要求5所述的酵素胶原蛋白杂粮果蔬即食代餐粥,其特征在于:步骤1中所述的水果为青柠檬、葡萄、龙眼、荔枝、哈蜜瓜、西瓜、芭乐、芒果、火龙果、橙、猕猴桃、诺丽果、桃、香蕉、梨、木瓜、大枣、百香果中至少6种的组合。
8.根据权利要求5所述的酵素胶原蛋白杂粮果蔬即食代餐粥,其特征在于:步骤2中所述菌种为酵母菌、乳酸菌、双歧杆菌中的一种或至少两种的组合。
9.权利要求1-8任一所述的酵素胶原蛋白杂粮果蔬即食代餐粥的制作方法,其特征在于:包括如下步骤:
步骤1、将燕麦在100-120℃烘焙5-10min,得到熟燕麦;
步骤2、将所得熟燕麦与除胶原蛋白和酵素粉的上述其他所有原料按照比例混合,搅拌均匀,得到原料混合物;
步骤3、在搅拌条件下,向所述原料混合物中加入水,水的质量为所述原料混合物质量的2-3倍,水的温度为90-100℃,充分搅拌均匀,静置5min后,再添加胶原蛋白和酵素粉,即得所述的酵素胶原蛋白杂粮果蔬即食代餐粥。
