本发明属于代餐食品技术领域,尤其是涉及一种用于控制高血糖的特殊医学用途配方营养代餐粉及其制备方法。
背景技术
随着人们生活水平的不断提高和饮食方式的改变、生活节奏的加快,加上大多数因素往往在于不良生活习惯和环境而导致的高血糖、高血脂、高血压等疾病在普通人群中呈现日益增加的趋势,其中高血糖表现尤为明显。糖尿病患病率和糖尿病患者急剧上升,高血糖人群如不及时治疗并改变生活习惯,很容易发展为糖尿病。糖尿病是一种因胰岛素绝对或相对缺乏引起的以高血糖为特征的代谢性疾病,一旦患上糖尿病,将终身无法根治,严重影响生命质量,糖尿病及其并发症给人类社会发展带来了严重的负担。糖尿病危害人类生命安全,由此引发的心理问题、社会问题也日益突出。
对于糖尿病患者及高血糖人群,在及时使用药物治疗的同时,面临的最关键问题就是日常饮食,如果饮食控制或选用食物不当,有可能导致血糖的波动,甚至加剧高血糖风险。糖尿病患者及高血糖人群,应当尽量选用无糖或低糖的食品作为日常补充。
代餐粉集营养均衡、效果显著、食用方便等优点于一身,代餐粉自身均衡的营养,明显的饱腹感,吃了以后不会饿,并且可以保证基础的营养需求,完全可以不再吃饭。
但是,目前市场上的代餐粉的营养价值较低,并且难以控制对糖类的摄入量,因此市场上急需一种适合高血糖人群服用的营养代餐粉,能对高血糖人群起到一定的保健作用,并且对糖尿病患者具有一定的辅助降血糖作用。
发明内容
本发明的目的是为了解决上述技术问题存在的不足,提供一种用于控制高血糖的特殊医学用途配方营养代餐粉及其制备方法。本发明含有多种血糖调节因子,能对高血糖人群起到一定的保健作用,并且对糖尿病患者具有一定的辅助降血糖作用,口感良好,营养丰富,食用方便,可以作为高血糖人群的日常代餐食品。

步骤一、滚筒式炒制机在100~105℃,预热5~10min,把大麦苗5-7份、豇豆3-5份、豌豆3-5份、黄豆3-6份、红豆3-6份、薏苡仁6-14份、苦荞麦6-14份、白芸豆1-3份、赤小豆1.5-3份、奇亚籽0.5-1.5份、肉桂0.3-0.6份、南瓜3-7份、魔芋6-10份、玉米5-7份、小米5-8份、小麦5-8份、白芝麻5-8份、花生5-8份、黑芝麻5-8份,到入滚筒式炒制机中,炒制3~6min;升温至120~130℃炒制5~10min;降温至100~105℃继续炒制3~7min;最后在60~65℃下炒制5~8min;然后进行粉碎和研磨,得到第一混合粉,粒度为0—0.044 mm 、0.044mm—0.074mm、0.074-1mm、 1-3mm、3-5mm中的两个或两个以上的粒度区间;
步骤二、把苹果1.5-3份、沙棘果1.5-3份,进行压榨和过滤,反复3-4次,合并过滤,低温干燥、浓缩,在进行粉碎得到第二混合粉;
步骤三、把猴头菇1.5-3份、、牛蒡子2-4份、地骨皮1-3份、金钱柳粉3-5份、桑叶4-6份、螺旋藻4-6份、五味子3-5份、茯苓1-3份、羊栖菜5-7份、怀山药3-5份、莱菔子0.5-1.5份、枸杞1.5-3份,分成二等份,其中第一份放入发酵池中24-72h,发酵完成后,用清水清洗晾干,第二份放入发酵池,用塑料薄膜盖好,温度20℃下停置自然发酵12-24h,第一份、第二份进行混合;进行烘焙,在温度25-200度,使水分含量控制在10~20%,然后在锅中炒制,用小火炒10-20分钟,等到锅上有气体升起就说明已经炒好了;然后放入研磨机进行研磨2-3小时,研磨后的得到第三混合粉,粒度小于10μm;
步骤四、第一混合粉,第二混合粉,第三混合粉和大豆低聚肽粉1-3份、小麦低聚肽粉1-3份、苦瓜多肽粉4-6份、燕麦肽粉1-3份、葛根肽粉1-3份、卵磷脂1-1.5份、低聚半乳糖1.5-3份、果聚糖3-5份、大豆蛋白粉1-3份、全脂乳粉3-7份,混合,再加入富铬酵母1-1.5份、富硒酵母1-1.5份,搅拌均匀,真空包装,包装规格为45-50g/袋。
其中步骤一采用分段炒制的方法,由于原料在相同温度下的熟化程度不同,因此这样可保证各原料的熟化度,食用时直接采用温开水冲服即可;
其中步骤一粒度为0—0.044 mm 、0.044mm—0.074mm 、0.074-1mm、 1-3mm、3-5mm中的两个或两个以上的粒度区间;这是为了不是一味细粉,有些小的颗粒,可以增加食用着的口感,尤其可以提高年轻人的咀嚼感受。
其中步骤三把原料分为二等份,一种为干发酵,一种为湿发酵,这样可以充分把这是物质的细胞壁打破,在后续的研磨的过程中,药用物质,更容易溢出,从而达到最佳的药用效果。另外,原料发酵后,苦的味道减少可提高最终产品的醇度和口感。
步骤三研磨后的得到第三混合粉,粒度小于10μm,由于在步骤三中原料有一定的药用作用,由于一般的破碎无法完全打破原料的细胞壁, 因为细胞中有效药用成份的溶出需穿过数个甚至数十个细胞壁, 而且相当一部分细胞成份不可能穿过细胞壁,这一部分只能白白浪费掉,因此无法使细胞内的有效成分全部充分释放出来,本发明通过研磨的方式使其达到超微粉,使细胞内的有效成分全部充分释放出来,从而提高原料的药物利用度,而且研磨后的粒度很细小,更有利于人体对药物的吸收利用,使细胞内的有效成分全部充分释放出来,提高猴头菇中有效成分的溶出速度和溶出率。
由于原料的复杂性,本发明把45种原料分为五大类,并根据这五大类的特性,分为不同的制备方法,再根据这五类的原料所含药用成分的性能,分别用不同的方法进行提取药用活性成分,在治疗糖尿病的同时,也起到保肝、保肾、补血等保健功能,达到调理五脏六腑,平衡人体阴阳,补充人体微量元素,综合调理糖尿病。
本发明用于控制高血糖的特殊医学用途配方营养代餐粉及其制备方法的优点是:本发明的代餐粉主要包括低糖营养成分、降糖成分以及代餐成分,其中,低糖营养成分用于补充蛋白质、微量元素、不溶性膳食纤维等,降糖成分包括主要降糖成分和辅助降糖成分,代餐成分主要用于增加食用者的饱腹感。不仅口感细腻,可以增加饱腹感,而且使得人们在食用代餐粉减肥过程中不会出现营养不良的现象。其中,含有多种血糖调节因子,对高血糖人群具 有一定的保健作用,对于糖尿病患者具有一定的辅助降血糖功效,口感良好,营养丰富,食用方便,可以作为高血糖人群的日常代餐食品,并对高血糖人群具有辅助调节血糖功效。该代餐粉大部分原料都具有低糖、高蛋白、低能量、高膳食纤维的优点,组合在一起既能作为糖尿病人的代餐食品,也能对糖尿病人的疾病有一定辅助调节的作用,并且对于血糖偏高的人群有一定的保健作用。

本发明用于控制高血糖的特殊医学用途配方营养代餐粉提供的的原料中:
1、大麦苗为禾本科植物大麦的幼苗。大麦苗中所含的维生素、矿物质及蛋白质是人类与动物的必需营养。
2、豇豆提供了易于消化吸收的优质蛋白质,适量的碳水化合物及多种维生素、微量元素等,可补充机体的招牌营养素。此外,豇豆富含的磷脂有促进胰岛素分泌,参与糖代谢的作用,是糖尿病人的理想食品。
3、豌豆粉富含铜、铬等微量元素,铜有利于造血以及骨骼和脑的发育;铬有利于糖和脂肪的代谢,能维持胰岛素的正常功能;且豌豆中所含的胆碱、蛋氨酸有助于防止动脉硬化。
4、黄豆粉:(1)黄豆中的大豆蛋白和豆固醇能显著改善和降低血脂和胆固醇,从而降低患心血管疾病的风险。(2)黄豆脂肪富含不饱和脂肪酸和大豆磷脂,能保持血管弹性,改善大脑,防止脂肪肝的形成。(3)黄豆富含皂苷、蛋白酶抑制剂、异黄酮、钼、硒等抗癌成分,能抑制前列腺癌、皮肤癌、肠癌、食管癌以及几乎所有其他癌症。(4)黄豆中的植物雌激素与人体产生的雌激素非常相似。可作为妇女更年期综合征辅助治疗的最佳食品。它不仅经济有效,而且没有副作用。(5)黄豆中也含有丰富的钙,这对更年期骨质疏松症也是有效的。

6、薏苡仁粉:薏苡仁粉含有维生素E、薏苡素、硒微量元素等营养成分。(1)利水消肿薏米丹渗甘补,即能利水消肿,又能健脾补中。常用于治疗脾虚湿盛所导致的腹胀、小便不利、水肿、脚气浮肿等症状。(2)健脾止泻薏米可以渗除脾湿,健脾止泻,尤其善于治疗脾虚湿盛所导致的泄泻。(3)渗湿除痹薏米能够渗湿除痹,能舒筋脉,缓和拘挛,可用于治疗脾虚湿盛而筋脉挛急疼痛等病症。(4)清肠排脓薏米可以清肠之热,排脓消痈,可用于治疗肺痈胸痛,咳吐浓痰,亦可用于治疗肠痈等症。(5)美白肌肤薏米中含有一定的维生素E,能够帮助保持人体皮肤光泽细腻,消除粉刺、色斑,改善肤色。并且它对于由病毒感染引起的赘疣等有一定的治疗作用。(6)防治脚气薏米中含有丰富的维生素B,对防治脚气病十分有益。(7)防癌抗癌薏米所含的硒元素能有效抑制癌细胞的繁殖,可用于霄癌、子宫颈癌的辅助治疗。(8)薏米含有丰富的水溶性纤维,可以由吸附胆盐(负责消化脂肪),使肠道对脂肪的吸收率变差,进而降低血脂肪、降血糖。健康人常吃薏米,能使身体轻捷,减少肿瘤发病概率。尤以脾虚湿盛的消化道肿瘤及痰热挟湿的肺癌更为适宜。在日本,薏米被看成典型的“抗癌食品”,还能减轻肿瘤患者放化疗的毒副作用。

8、燕麦粉:燕麦粉中的β-葡聚糖可减缓血液中葡萄糖含量的增加,预防和控制肥胖症、糖尿病及心血管疾病。且燕麦富含的膳食纤维具有清理肠道垃圾的作用。
9、魔芋粉:魔芋中富含着很多种类的魔芋多糖,以葡萄甘露聚糖为主,这种物质在魔芋中有一半以上。在研究实验中,证明其对于降糖有很好的作用,在这里面效果最好的当属KGM-11,对于多糖活性方面,多糖分子量的大小比较重要,对其有着十分明显的影响。
10、南瓜粉:南瓜中的环丙基氨基酸CTY能促进胰脏分泌胰岛素,增加Glut-2的含量,同时含有的锌,铬是胰岛素的重要组成部分,对胰岛素细胞起有保护作用。南瓜多糖也能够起到降低ALX大鼠血糖的作用,其中,南瓜粗多糖中的中性多糖在实验中,针对ALX型糖尿病小鼠具有显而易见的降糖作用,以上实验表明,在南瓜中,有一类大分子的多糖类物质,这类物质是比较活跃的,能够起到降低血糖的作用。
11、白芝麻:芝麻是我国传统的油料作物,芝麻又称胡麻,被称为八谷之冠。芝麻有白黑之分,白芝麻多作食用,黑芝麻多入药用。

14、牛蒡子粉:牛蒡子提取物对大鼠能显著长时间的降低血糖,并提高对碳水化合物的耐受量。正常小鼠以含牛蒡0.25%的饮食或其煎剂代替饮水28d,结果不影响小鼠体内葡萄糖平衡参数,而对链球素糖尿病小鼠,牛蒡可防治糖尿病症状。
15、肉桂粉:肉桂中含有黄烷醇多酚类抗氧化物质,能提高胰岛素对血糖水平的稳定作用和降低胰岛素抵抗。肉桂中的某些成分具有类似于胰岛素的性质,也有助于血糖水平的控制。
16、地骨皮粉:地骨皮煎剂给家兔灌胃,血糖短时间上升,然后持续下降,在4-5小时降低最明显,平均降低14%,维持4-8小时,然后恢复正常。地骨皮煎剂口服对实验性糖尿病小鼠胰岛B细胞的形态结构损害也有一定减轻作用。地骨皮对小鼠葡萄糖性及肾上腺素性高血糖均有显著降血糖作用。
17、金钱柳粉:金钱柳叶中富含的水提物和醇提物(皂苷、黄酮),均可以保护血管通透性,扩张管状动脉和改善血液循环,能够有效的调节人体糖代谢,激活胰岛器官功能,从而起到降血糖的作用。经研究表明,金钱柳具有恢复病变胰岛细胞的结构和功能,增加外围组织的胰岛素受体,从而达到降压的作用。临床实验表明,金钱柳叶中含有的皂苷、三萜、黄酮、多糖等有效成分,具有很强的降血脂作用。特别是微量元素硒能够有效改善脂质代谢,对人体内血清总胆固醇的升高具有明显的抑制作用。
18、桑叶粉:桑叶提取物为桑科植物桑的干燥叶的水提或醇提物,含有黄酮、生物碱、多糖等多种活性物质,具有降血糖、抗菌、降血压、抗炎等药理作。桑叶对四氧嘧啶所致大鼠实验性的糖尿病及肾上腺素、胰高血糖素、抗胰岛素引起的小鼠高血糖,均有降低血糖抗糖尿病的作用。桑叶中的脱皮甾酮也有降血糖作用,能促使葡萄糖转变为糖原。桑叶中的某些氨基酸能刺激胰岛素的分泌,可为体内胰岛素的分泌和释放的调节因素而降低胰岛素分解速度以降低血糖。尚有一些无机元素对降糖机制也起了一定的作用。
19、螺旋藻粉:螺旋藻富含叶绿素、藻青素、肌酸等物质,具有减轻癌症放疗、化疗的毒副反应,提高免疫功能,降低血脂等功效。螺旋藻中存在螺旋藻多糖、镁、铬等多种降糖物质,可通过多种途径(如促进胰岛素分泌、减缓糖吸收、促进物质代谢,抗氧化等)调节血糖代谢。
20、五味子粉:五味子能促进肝糖原的合成,使糖代谢加强,又能增加肝细胞蛋白质的合成。
21、茯苓粉:茯苓是一种中药名,为多孔菌科真菌茯苓的干燥菌核。茯苓粉具有利水消肿、渗湿健脾、宁心的功效。主要可以用于治疗:第一、水肿病,本品味甘而淡,甘则能补,淡则能渗,药性平和,既可以祛邪,也可以扶正,利水而不伤正气,为利水消肿的要药。第二、治疗痰饮,本品善渗泄水湿,使湿无所聚,痰无由生。第三、脾虚泄泻也能治疗,本品能够健脾渗湿止泻,尤其善于治疗脾虚湿盛泄泻。第四、心悸、失眠,本品能够益心脾而宁心安神,因此可以治疗心悸和失眠。
22、果聚糖:果聚糖是一类有利于人体健康的碳水化合物,是多个葡萄糖分子通过β-糖甘键连接而成。由于人体中不含有能分解果聚糖的酶,因此不能消化吸收果聚糖,但果聚糖进入结肠后可以成为肠胃菌的营养物质。人体食用含果聚糖的食物,可以选择性地促进双较杆菌的生长,减少与肿瘤发生有关的物质产生,此外短链的果聚糖可以作为一种低热量的甜味成分。因此,果聚糖是一类有益于人类健康的可溶性碳水化合物。

步骤一、滚筒式炒制机在100~105℃,预热5~10min,把大麦苗5份、豇豆5份、豌豆3份、黄豆3份、红豆6份、薏苡仁14份、苦荞麦14份、白芸豆1份、赤小豆1.5份、奇亚籽1.5份、肉桂0.6份、南瓜3份、魔芋10份、玉米5份、小米5份、小麦8份、白芝麻8份、花生8份、黑芝麻8份,到入滚筒式炒制机中,炒制3~6min;升温至120~130℃炒制5~10min;降温至100~105℃继续炒制3~7min;最后在60~65℃下炒制5~8min;然后进行粉碎和研磨,得到第一混合粉,粒度为0—0.044 mm 、0.044mm—0.074mm 、0.074-1mm、 1-3mm、3-5mm中的两个或两个以上的粒度区间;
步骤二、把苹果1.5份、沙棘果3份,进行压榨和过滤,反复3-4次,合并过滤,低温干燥、浓缩,在进行粉碎得到第二混合粉;
步骤三、把猴头菇3份、、牛蒡子2份、地骨皮3份、金钱柳粉5份、桑叶4份、螺旋藻6份、五味子5份、茯苓3份、羊栖菜5份、怀山药5份、莱菔子1.5份、枸杞3份,分成二等份,其中第一份放入发酵池中24-72h,发酵完成后,用清水清洗晾干,第二份放入发酵池,用塑料薄膜盖好,温度20℃下停置自然发酵12-24h,第一份、第二份进行混合;进行烘焙,在温度25-200度,使水分含量控制在10~20%,然后在锅中炒制,用小火炒10-20分钟,等到锅上有气体升起就说明已经炒好了;然后放入研磨机进行研磨2-3小时,研磨后的得到第三混合粉,粒度小于10μm;

随机选取600名志愿者对本发明三个实施例得到的特医食品进行测试,食用方法为:每袋产品经500mL的温开水进行冲调,代替任意一餐或多餐进行食用,连续食用三个月,并反馈食用效果。结果显示:96.8%的食用者评价本发明提供的特医食品对于高血糖有显著的调节作用。
本发明的有关实验资料如下:
1.实验的目的
研究本发明的用于控制高血糖的特殊医学用途配方营养代餐粉的食用效果。
2.实验方法
受试者每天按推荐剂量食用样品,连续食用3个月。试验期间不改变原来的饮食习惯,正常饮食。
3.实验设计
随机选择600名高血糖志愿者分成3组,每组200例,分别食用本发明实施例1-3制备的制品,排除以下患者:⑴患有恶性疾病,如肿瘤、严重心、肝、肾疾病;甲状腺疾病;⑵实验开始前1个月内曾服用降糖、降压、降脂药物。
将上述600例受试者每天早、中、晚饭后半小时食用本发明特医食品,连续食用3个月,其余时间不限制饮食,不改变生活方式。
本实验采用患者自身对照法评价各组的效果。
3.1检测指标
在进行实验前和实验结束时,各组均检测以下身体指标:血压、葡萄糖、总胆固醇、甘油三酯、高密度胆固醇、低密度胆固醇。
患者实验前后自身对照任一血压指标和生化指标的变化大于1%为有效,大于5%为显效,小于1%的为无效。
4.实验结果
各组的具体实验结果如表1所示。

5.实验结论
本发明的用于控制高血糖的特殊医学用途配方营养代餐粉各原料在特定的配比下相互配合、共同作用,具有显著的降低血糖的作用。上述实施例仅仅是为了清楚地说明所作的举例,而并非对实施方式的限定。对于所属领域的普通技术人员来说,在上述说明的基础上还可以做出其它不同形式的变化和变动。这里无需也无法对所有的实施方式予以穷举。而由此所引伸出的显而易见的变化和变动仍处于本发明创造的保护范围之中。

1.一种用于控制高血糖的医学配方营养代餐粉,其特征在于:包括以下重量百分比的原料:大麦苗粉5-7份、豇豆粉3-5份、豌豆粉3-5份、黄豆粉3-6份、红豆粉3-6份、薏苡仁粉6-14份、苦荞麦粉6-14份、白芸豆粉1-3份、赤小豆粉1.5-3份、奇亚籽粉0.5-1.5份、肉桂粉0.3-0.6份、南瓜粉3-7份、魔芋粉6-10份、玉米粉5-7份、小米粉5-8份、小麦粉5-8份、白芝麻粉5-8份、花生粉5-8份、黑芝麻粉5-8份;苹果提取物1.5-3份、沙棘果粉1.5-3份;猴头菇粉1.5-3份、、牛蒡子粉2-4份、地骨皮粉1-3份、金钱柳粉3-5份、桑叶粉4-6份、螺旋藻4-6份、五味子3-5份、茯苓粉1-3份、羊栖菜粉5-7份、怀山药粉3-5份、莱菔子粉0.5-1.5份、枸杞粉1.5-3份;大豆低聚肽粉1-3份、小麦低聚肽粉1-3份、苦瓜多肽粉4-6份、燕麦肽粉1-3份、葛根肽粉1-3份、卵磷脂1-1.5份、低聚半乳糖1.5-3份、果聚糖3-5份、大豆蛋白粉1-3份、全脂乳粉3-7份;富铬酵母1-1.5份、富硒酵母1-1.5份。
