技术领域
本发明涉及一种代餐粉,尤其是一种降糖藜麦代餐粉及其制备工艺。
背景技术
当今城市生活节奏很快,失眠、熬夜等均易导致人代谢功能紊乱,患上疾病。三高是指高血压、高血糖和高血脂三症,它们通常相互关联。如:糖尿病人很容易同时患上高血压或高血脂症,而高血脂又是动脉硬化形成和发展的主要因素,动脉硬化患者血管弹性差加剧血压升高。所以,出现这三种疾患中的任何一种,后期都易形成了“三高症”。
高血糖,最常见的高血糖症是糖尿病。糖尿病是一种慢性、终生性疾病,是一种严重危害人体健康的常见病,由于胰岛素相对或绝对不足,使体内碳水化合物、脂肪、蛋白质等营养素代谢异常。此病可引起多种并发症,严重时可以引起全身性疾病,使人致残、致盲,甚至致死。糖尿病的症状为“三多一少”,即多尿、多饮、多食及体重下降。高血糖病人要注意控制饮食,低糖低盐,加强锻炼,如果过段时间再查血糖还是高,也应考虑用降血糖的药。
现有技术治疗“三高症”主要依靠降“三高症”药物和饮食控制。药物降低“三高症”的效果明显,是严重的三高病人非常依赖的药物。但长期服药对患者的肾脏和肝脏都带来较大负担,损害健康。对于一些血糖不是特别高的病患,从健康角度来看,还应以饮食调控为主。此外,上班族经常没有时间享受早晨,而据研究表明,不吃早餐易导致胆结石和胃部疾病。通常我们常见的代餐粉有藕粉、豆粉、芝麻糊、燕麦片等,且含糖量较高,不适合高血糖者食用,此外这些代餐粉的营养成分也很单一、也没有降糖、降脂等保健效果。
发明内容
(一)要解决的技术问题
针对现有技术的不足,本发明的目的是提供一种营养搭配丰富、长期服用具有明显降糖作用的藜麦代餐粉。
(二)技术方案
为了达到上述目的,本发明采用的主要技术方案包括:
一种降糖藜麦代餐粉,由包含下述重量份数的原料配方制成:藜麦8-12份、青稞8-12份、苦荞8-12份、薏仁7-9份、魔芋8-12份、香蕉7-9份、葛根8-10份、黑芝麻2-4份、南瓜3-5份、燕麦3-5份、红小豆3-5份、绿豆3-5份、黑大豆2-4份、芡实2-4份、山药(熟)3-5份、大麦苗青粉2-4份、黄精(制)2-4份。
优选地,所述降糖藜麦代餐粉是由包含下述重量份数的原料配方制成:藜麦10份、青稞10份、苦荞10份、薏仁8份、魔芋10份、香蕉8份、葛根9份、黑芝麻3份、南瓜4份、燕麦4份、红小豆4份、绿豆4份、黑大豆3份、芡实3份、山药(熟)4份、大麦苗青粉3份、黄精(制)3份。
以上各组分的重量份过少时,无法充分发挥相应组分的功效,而各组分的重量份过多时又冲淡了其余组分的功效。此外,由于本发明是藜麦代餐粉,口感风味是一项至关重要的参考指标。上述组分是经过多次试验调配的结果,如随意增加或减少一种组分,可能会导致代餐粉的味道变得不易受绝大部分人群喜爱和接受,特别是有些成分单独食用时味道较涩、口感较硬,则不宜加入过多。本发明的藜麦代餐粉开水冲泡后,味香、软绵具有些许糯感,符合绝大多数人群的口感需求。
本发明还提供一种降糖藜麦代餐粉的制备工艺,包括下述步骤:
S1清洗:将藜麦、青稞、苦荞、薏仁、魔芋、香蕉、葛根、黑芝麻、南瓜、燕麦、红小豆、绿豆、黑大豆、芡实、山药、黄精清洗干净后、烘干;
将大麦青苗清洗后、采用热蒸汽将大麦青苗烫熟或将大麦青苗放入沸水中焯熟,处理温度为95-110℃,然后将大麦青苗在40-80℃的热风干燥机中烘干;或者将大麦青苗清洗后,进行冷冻干燥;
S2制粉:将藜麦、青稞、苦荞、薏仁、黑芝麻、燕麦、红小豆、绿豆、黑大豆、芡实、大麦青苗粉碎成细粉;
S3熟化:对上述细粉采用微波熟化工艺使细粉瞬间熟化;将魔芋、香蕉、葛根、带瓜皮南瓜、山药、黄精切块或切片后,蒸熟;
S4预糊化处理:按相应的重量比例,将熟化的细粉和蒸熟的魔芋、香蕉、葛根、南瓜、山药及黄精在搅拌机内高速搅拌成糊状物;
S5干燥:将糊状物涂布在双滚干燥机上,设定干燥温度为130-160℃,在干燥温度下将糊状物干燥,控制水分在5%以下;
S6破碎:将干燥的糊状物破碎成粉末,分装。
(三)有益效果
本发明的有益效果是:
本发明的藜麦代餐粉以藜麦、青稞、魔芋、薏仁等为基料制成开水冲泡即食代餐粉,配以“药食同源”的葛根、山药、芡实、苦荞、黄精等中药组分,起到降糖、补脾健胃、降脂祛湿的作用、能够达到补充人体必须的多种蛋白质和氨基酸、加快肠道排空、减少糖和热量摄入,达到塑身减肥的功效。
本发明代餐粉在制备时,熟化包括湿法熟化(蒸煮)或瞬间熟化(微波)双重工艺,根据不同原料不同熟化方式,保持了原有味道及不破坏营养。
本发明配方的主要设计特点:
①:低脂低热量
配方原料的脂肪含量都很少,且热量低,在充分满足人体的饮食快感的同时不会热量摄入少,能达到均衡饮食效果。
②:富含葡甘聚糖
魔芋中含葡甘聚糖,葡萄甘露聚糖达45%以上。葡甘聚糖可是一种具有强大膨胀力的物质,进入人体后,可以增加饱腹感,消除饥饿,因为在体内的消化速度很慢,所以能减少人的食量,控制体重。
③:富含膳食纤维
藜麦和青稞、魔芋、大麦苗青汁均富含膳食纤维,其膳食纤维的含量高达60%以上,是目前膳食纤维含量较高的食物。膳食纤维可以加强肠道蠕动,使粪便软化,加速排便,缩短食物在常道内的停留时间,给机体排毒减重,这样就从源头上杜绝了脂肪来源。
④:升糖指数低
藜麦的升糖指数仅为35,远低于大米(85)等谷物,其他配料升糖指数大部分低于50,是常见食物升糖指数较低的,进入人体没有大量转化糖的成分。
⑤:黑芝麻、黑豆、山药、黄精搭配有助于补肾益气,促进新陈代谢。
⑥:薏仁配绿豆具有排毒去湿气的功效。
综合以上各配方成分,结合中医理论,糖尿病的健康管理过程实际是人体机体系统的互相作用与修复的过程,胰腺功能失调是由于消化代谢系统紊乱而形成的堵塞,通过长期食用代餐粉平衡各器官系统的作用,补肾益气、祛湿祛痰、促进新陈代谢功能,进而增强胰腺分泌功能的过程。

本发明提供一种降糖藜麦代餐粉,由包含下述重量份数的原料配方制成:藜麦8-12份、青稞8-12份、苦荞8-12份、薏仁7-9份、魔芋8-12份、香蕉7-9份、葛根8-10份、黑芝麻2-4份、南瓜3-5份、燕麦3-5份、红小豆3-5份、绿豆3-5份、黑大豆2-4份、芡实2-4份、山药(熟)3-5份、大麦苗青粉2-4份、黄精(制)2-4份。
在本发明中,以上各组分在本发明中的功效和特点如下:
藜麦:可以分为甜藜麦和苦藜麦。白藜麦又称为象牙藜;黑藜麦则比白藜麦甜。藜麦均衡含有人体自身不能合成的全部8种必需氨基酸。(人体不能合成的必需氨基酸作用分别是:赖氨酸、色氨酸、苯丙氨酸、蛋氨酸、苏氨酸、异亮氨酸、亮氨酸、缬氨酸)藜麦是全谷全营养完全蛋白碱性食物,胚芽占种子的30%,且具有营养活性,优质藜麦的蛋白质含量高达16%-22%(牛肉20%,与牛肉相当),品质与奶粉及肉类相当,富含多种氨基酸,其中有人体必需的全部9种必需氨基酸,比例适当且易于吸收,尤其富含植物中缺乏的赖氨酸,钙、镁、磷、钾、铁、锌、硒、锰、铜等矿物质营养含量高,富含不饱和脂肪酸、类黄酮、B族维生素和E族维生素、胆碱、甜菜碱、叶酸、α-亚麻酸、β-葡聚糖(可减缓血液中葡萄糖含量的增加,预防和控制肥胖症、糖尿病及心血管疾病。)等多种有益化合物,膳食纤维素含量高达7.1%,胆固醇为0,不含麸质,低脂,低热量(305kcal/100g),低血糖(GI升糖值35,血糖标准为55),几乎都是常见食物里最优秀的。藜麦硒元素含量很高。硒被国内外医药界和营养学界尊称为“生命的火种”,享有“长寿元素”、“抗癌之王”、“心脏守护神”、“天然解毒剂”等美誉。

藜麦的功效主要有:①长期食用藜麦可以减低胆固醇、保护心脏、藜麦中纤维素含量达到3.7%,而其中可溶性的纤维达到36%、不可溶纤维素64%。两种纤维素对调节血糖水平、降低胆固醇和保护心脏都具有非常重要的作用。②藜麦有助孕功效。藜麦含有丰富的蛋白质,能够为机体提供身体所必须的氨基酸,还含有丰富的铁、钙、镁、钾、磷、锌等,有助于女性在备孕期间更加健康。更重要的是,藜麦还含有丰富的维生素和也算,对胎儿的生长发育也非常有益。③藜麦是糖尿病人的福音。藜麦含含有丰富的镁、锰等其他矿物质,生成的一种酶能参与体内葡萄糖的利用和胰岛素的分泌,并且藜麦属于低升糖指数的食物,规律性地食用藜麦和其他一些含全谷粮会减少二型糖尿病的发生。④提高记忆力。藜麦含有丰富的氨基酸,其中包括人体必需的9中氨基酸,这些氨基酸的含量比例适当,非常易于吸收,尤其富含植物缺少的赖氨酸,钙、镁、磷、钾、铁、锌、硒、锰、铜等矿物质营养含量。因此,对于用脑多的上班族和学生来说,早餐吃藜麦非常有必要。⑤减肥。藜麦热量低,纤维含量多,能防止体内积累过多热量导致的肥胖。其所含的优质的高纤维碳水化合物,进食后,饱腹感很强,既能减少用餐次数也能减少用餐量,还满足每天的营养需求。早晨吃藜麦有助于控制一整天的热量,起到控制体重的作用。
青稞:性平、味咸,具有清肠、调节血糖、提高免疫力、降低胆固醇等功效。青稞中的膳食纤维总含量达到了16%,其中不可以被分解的占到了9.68%,这些膳食纤维在进入到人体的肠道以后,不能被分解,这样就可以增加粪便的体积,加快粪便排出体外。含有多种对人体有益的微量元素,例如铁、钙、磷、锌等。最为重要的是,青稞里面含有抗癌元素——硒。硒元素已经被确认为是人体必需的微量元素,而且是唯一一种具有防癌抗癌的元素。青稞中含有的淀粉比较独特,是一种叫做支链淀粉的物质,这种物质中含有大量的凝胶粘液,在经过加热后,呈现弱碱性,对于抑制胃酸过多,保护胃黏膜等具有重要的作用。青稞是世界上麦类作物中含有的β—葡聚糖含量最多的作物,具有降血脂、降胆固醇、预防心脑血管疾病等疾病的作用。另外,青稞中还含有一些其他的稀有珍贵的营养成分,例如硫胺素、核黄素、尼克酸等,这些物质对于促进人体健康发育具有重要的作用。
苦荞:苦荞能降血压、降血糖、降血脂,改善微循环等作用,又称“三降”食品。苦荞即苦荞麦,学名鞑靼荞麦。比甜荞即荞麦的营养价值高出很多。特别是生物类黄酮的含量是荞麦的13.5倍。长期食用,可改善身体状况,降低高血糖、高血压、高血脂的发病率,能有效防治糖尿病,并且具有一定的抗癌作用。哈尔滨医科大学公共卫生学院一项调查表明,主食荞麦地区的人群,其血糖水平和糖尿病患病率明显低于不食用荞麦地区的人群。动物实验表明,苦荞类黄酮可以使高血脂小鼠的甘油三酯水平和高血脂大鼠的胆固醇及甘油三酯水平明显降低;但是它不降低二者的高密度脂蛋白水平,因此苦荞类黄酮具有降血脂作用。苦荞麦中富含的生物类黄酮主要成分是芦丁,又名VP,其主要功效是软化血管,改善微循环,清热解毒、活血化瘀、拔毒生肌、益气提神,有降血糖和尿糖的作用。
薏仁:又称苡仁,味甘淡微甜,营养丰富,含碳水化合物52%-80%,蛋白质13%-17%,脂肪4%-7%,油以不饱和脂肪酸为主,其中亚麻油酸占34%,并有特殊的薏仁酯。中医常用于清热利湿,除风湿,利小便,益肺排脓,健脾胃,强筋骨。不论用于滋补还是用于治病,作用都较为缓和,微寒而不伤胃,益脾而不滋腻。据报道,薏米治病的成份薏苡仁酯,不仅具有滋补作用,而且还是一种抗癌剂,能抑制艾氏腹水癌细胞,可用于胃癌及子宫颈癌。薏米的根中所含的薏米醇,除具有上述的薏苡仁酯的作用外,还有降压、利尿、解热和驱蛔虫的效果,适用于高血压、尿路结石、尿路感染等。
魔芋:主治降血压、降血糖,还具有补钙、平衡盐分、洁胃、整肠、排毒、防治便秘、降血脂、减肥健美等作用。魔芋含淀粉35%,蛋白质3%,以及多种维生素和钾、磷、硒等矿物质元素,还含有人类所需要的魔芋多糖,即葡甘露聚糖高达30%。魔芋属的一些种类块茎富含魔芋多糖,尤其是白魔芋、花魔芋品种含量高达50—65%。魔芋中含量最大的葡萄甘露聚糖具有强大的膨胀力,有超过任何一种植物胶的粘韧度,即可填充胃肠,消除饥饿感,又因所含热量微乎其微,故可控制体重,达到减肥健美的目的。
香蕉:香蕉是淀粉质丰富的有益水果。味甘性寒,可清热润肠,促进肠胃蠕动。香蕉含有称为“智慧之盐”的磷,又有丰富的蛋白质、糖、钾、维生素A和C,同时纤维也多,堪称相当好的营养食品。香蕉果肉每100克含糖15%以上,酸0.2~0.3%,蛋白质1.5%,还有丰富的磷53毫克、钙19毫克、钾400毫克、维生素C24毫克。香蕉还含有果胶、多种酶类物质以及微量元素等。香蕉富含钾和镁,钾能防止血压上升、及肌肉痉挛,镁则具有消除疲劳的效果。
葛根:主要用于表证发热,项背强痛,麻疹不透,热病口渴,阴虚消渴,热泻热痢,脾虚泄泻。对三高患者、尤其是糖尿病患者的口渴烦躁、阴虚热病有改善作用。葛根具有解肌退热,生津止渴,升阳止泻之功效。现代研究显示,葛根含有葛根素、大豆苷元等黄酮类物质,具有扩张血管降压作用,抗氧化、降血糖作用。
黑芝麻:黑芝麻含有大量的脂肪和蛋白质,还含有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分。有健胃、保肝、促进红细胞生长的作用,用于滋补肝肾,益血润肠,通便等。黑芝麻药食两用,具有“补肝肾,滋五脏,益精血,润肠燥”等功效,被视为滋补圣品。常食黑芝麻,具有:1补钙,2、降血压,3、乌发润发,4、养颜润肤、塑身减肥、抗衰老。每百克黑芝麻中含蛋白质21.9克,脂肪61.7克,钙564毫克,磷368毫克,铁50毫克,还含有芝麻素、花生酸、芝麻酚、油酸、棕榈酸、硬脂酸、甾醇、卵磷脂、维生素A、B、D、E等营养物质。正因为黑芝麻含有如此丰富的营养,因而在延缓人的衰老及美容方面,才起了极大的作用。
南瓜:补中益气,降血脂,降血糖,清热解毒,保护胃粘膜、帮助消化。适用于脾虚弱、营养不良者经常食用。南瓜的瓜皮防治糖尿病,降低血糖、消除致癌物质、促进生长发育。南瓜含有丰富的胡萝卜素和维生素C,可以健脾,预防胃炎,防治夜盲症,护肝,使皮肤变得细嫩,并有中和致癌物质的作用。黄色果蔬还富含两种维生素A和D;维生素A能保护胃肠黏膜,防止胃炎、胃溃疡等疾患发生;维生素D有促进钙、磷两种矿物元素吸收的作用,进而收到壮骨强筋之功。南瓜中还有一种“钴”的成分,食用后有补血作用。南瓜含有丰富的维生素A、b、c及矿物质,必需的8种氨基酸和儿童必需的组氨酸,可溶性纤维、叶黄素和磷、钾、钙、镁、锌、硅等微量元素。近代营养学和医学表明,多食南瓜可有效防治高血压,糖尿病及肝脏病变,提高人体免疫能力。南瓜中含有丰富的锌,参与人体内核酸、蛋白质的合成是肾上腺皮质激素固有成分,为人体生长发育的重要物质。南瓜中对人体的有益成分有:多糖、氨基酸、活性蛋白、胡萝卜素及多种微量元素等。
燕麦:燕麦富含膳食纤维,能促进肠胃蠕动,利于排便,热量低,升糖指数低,降脂降糖。1997年美国FDA认定燕麦为功能性食物,具有降低胆固醇、平稳血糖的功效。燕麦中的β-葡聚糖可减缓血液中葡萄糖含量的增加,预防和控制肥胖症、糖尿病及心血管疾病。燕麦富含的膳食纤维具有清理肠道垃圾的作用。
红小豆:又称赤小豆,有行血补血、健脾去湿、利水消肿之效。具有利尿作用,对心脏病和肾病、水肿患者均有益,含糖类,三萜皂甙(triterpenoidsaponin)。每百克含蛋白质20.7g,脂肪0.5g,碳水化物58g,粗纤维4.9灰分3.3g,钙67mg,磷305mg,铁5.2mg,硫胺素(thiamine)0.3lmg,核黄素(riboflavine)0.11mg,烟酸(nicotinic acid)2.7mg。具有良好的润肠通便、降血压、降血脂、调节血糖、预防结石、健美减肥的作用。
绿豆:别名青小豆。每100克绿豆中含有蛋白质23.8克,碳水化合物58.8克,脂肪0.5克,钙80毫克,磷360毫克,铁6.8毫克。还含有胡萝卜素、维生素B1、维生素B2、维生素E和尼克酸及多种矿物质元素。绿豆所含蛋白质主要为球蛋白,并含有蛋氨酸、色氨酸、酪氨酸等多种氨基酸;在所含磷脂中有磷脂酰胆碱、磷脂酰乙醇胺、磷脂酰肌醇、磷脂酰甘油,磷脂酰丝氨酸等成分。绿豆的药理作用为降血脂、降胆固醇、抗过敏、抗菌、抗肿瘤、增强食欲、保肝护肾。绿豆粉有显著降脂作用,绿豆中含有的球蛋白和多糖,能促进动物体内胆固醇在肝脏分解成胆酸,加速胆汁中胆盐分泌和降低小肠对胆固醇的吸收。
黑大豆:即黑豆。成分含丰富的蛋白质、不饱和脂肪酸、磷酯、钙、磷、铁、钾、钠、胡萝卜素、维生素B1、维生素B2、维生素B12、烟酸、叶酸、棉子糖、水苏糖、胆碱、大豆异黄酮、皂苷、多糖类物质(清除人体自由基)、黑豆色素等。黑豆可以降低人体血液中胆固醇、保持机体功能完整,延缓机体衰老、降低血液粘度。黑豆中所含的不饱和脂肪酸,可促进胆固醇的代谢、降低血脂,预防心血管疾病,且黑豆的纤维质含量高,可促进肠胃蠕动,预防便秘,是不错的减肥佳品。
芡实:性能与莲子相似,主要有补脾胃和涩精、止带、止泻、补中益气等作用,为滋养强壮性食物。主含淀粉、蛋白质、脂肪、碳水化合物、钙、磷、铁、硫胺素、核黄素、尼古酸、抗坏血酸等,具有益肾固精,健脾止泻,除湿止带的功效,起收敛、滋养作用。
山药:又称薯蓣、土薯,为一种药食同源的食物。山药具有滋养强壮,助消化,敛虚汗,止泻之功效,主治脾虚腹泻、消化不良的慢性肠炎。其块茎中平均含粗蛋白质14.48%,粗纤维3.48%,淀粉43.7%,糖1.14%,钾2.62%,磷0.2%,钙0.2%,镁0.14%,灰分5.51%,铁53.57ppm,锌29.22ppm,铜10.58ppm,锰5.38ppm。人类所需的18种氨基酸中,山药中就含有16种。用于治疗高血压、糖尿病、哮喘、神经衰弱和腰痛等病症。其营养价值包括健脾益胃助消化、滋肾益精、益肺止咳、预防心血管病、延年益寿、减肥健美。现代科学分析,山药的最大特点是含有大量的黏蛋白。黏蛋白是一种多糖蛋白质的混合物,对人体具有特殊的保健作用,能防止脂肪沈积在心血管上,保持血管弹性,阻止动脉粥样硬化过早发生;可减少皮下脂肪沉积;能防止结缔组织的萎缩,预防类风湿关节炎、硬皮病等胶原病的发生。其所含的多巴胺,具有扩张血管、改善血液循环的重要功能,该成分在治疗中占有重要位置。
大麦苗青粉:大麦叶粉是草药的一种,是碱性食物,又大麦若叶粉。含有大量的维生素C、β—胡萝卜素和抗氧化酵素,净化血液、促进新陈代谢,具有增强机体抗感染、抗菌、镇痛等作用。《中国保健食品原料手册—第二版》:据调查认为,麦嫩苗汁液是世界上单项资源中营养物质含量最丰富,最均衡,最适合人体细胞需要的物质,是营养细胞,修复细胞创伤的最佳选择。大麦若叶粉是碱性食物,含有丰富的膳食纤维、维生素、微量元素,特别含有上百种活性酶,对人体细胞起着重要作用。
黄精:性平,味甘,归脾、肺、肾经。具有补气养阴,健脾,润肺,益肾之功效。主治脾胃气虚、肺虚燥咳、经血不足等症。现代研究显示,黄精含有黄精多糖、黄精皂苷、黄酮等多种成分。能增强机体免疫能力,防治动脉粥样硬化,显著降低甘油三脂和总胆固醇,清除自由基和抗菌等作用。
实施例1
本实施例提供一种降糖藜麦代餐粉,由下述重量份数的原料组分制成:藜麦10份、青稞10份、苦荞10份、薏仁8份、魔芋10份、香蕉8份、葛根9份、黑芝麻3份、南瓜4份、燕麦4份、红小豆4份、绿豆4份、黑大豆3份、芡实3份、山药(熟)4份、大麦苗青粉3份、黄精(制)3份。
按照如下工艺制备本实施例的降糖藜麦代餐粉:
S1清洗:将藜麦、青稞、苦荞、薏仁、魔芋、香蕉、葛根、黑芝麻、南瓜、燕麦、红小豆、绿豆、黑大豆、芡实、山药、黄精清洗干净后、烘干至可粉碎成粉末即可。采用优质有机大麦刚越冬长至25-40CM的幼麦苗嫩叶为原料,清洗干净,-10℃下冷冻干燥。
S2制粉:将藜麦、青稞、苦荞、薏仁、黑芝麻、燕麦、红小豆、绿豆、黑大豆、芡实、大麦青苗粉碎成细粉,过80目筛。
S3熟化:对上述细粉采用微波熟化工艺加热2-3分钟,使细粉瞬间熟化;将魔芋、香蕉、葛根、带瓜皮南瓜、山药、黄精切块或切片后,隔水蒸熟,完全软化。
S4预糊化处理:按上述重量份比例,将熟化的细粉和蒸熟的魔芋、香蕉、葛根、南瓜、山药及黄精在搅拌机内高速搅拌成颜色均匀的糊状物。
S5干燥:将糊状物涂布在双滚干燥机上,设定干燥温度为150℃,在干燥温度下将糊状物干燥,控制水分在5%以下。
S6破碎:将干燥的糊状物破碎成粉末,灭菌,封装。
实施例2
本实施例提供一种降糖藜麦代餐粉,由下述重量份数的原料组分制成:藜麦12份、青稞8份、苦荞10份、薏仁6份、魔芋12份、香蕉6份、葛根10份、黑芝麻2份、南瓜5份、燕麦5份、红小豆5份、绿豆5份、黑大豆2份、芡实4份、山药(熟)3份、大麦苗青粉4份、黄精(制)2份。
按照如下工艺制备本实施例的降糖藜麦代餐粉:
S1清洗:将藜麦、青稞、苦荞、薏仁、魔芋、香蕉、葛根、黑芝麻、南瓜、燕麦、红小豆、绿豆、黑大豆、芡实、山药、黄精清洗干净后、烘干至可粉碎成粉末即可。
采用优质有机大麦刚越冬长至25-40CM的幼麦苗嫩叶为原料,清洗干净,采用热蒸汽将大麦青苗烫熟或将大麦青苗放入沸水中焯熟,处理温度为100℃,然后将大麦青苗在45℃的热风干燥机中烘干。
S2制粉:将藜麦、青稞、苦荞、薏仁、黑芝麻、燕麦、红小豆、绿豆、黑大豆、芡实、大麦青苗粉碎成细粉,过80目筛。
S3熟化:对上述细粉采用微波熟化工艺加热2-3分钟,使细粉瞬间熟化;将魔芋、香蕉、葛根、带瓜皮南瓜、山药、黄精切块或切片后,隔水蒸熟,完全软化。
S4预糊化处理:按上述重量份比例,将熟化的细粉和蒸熟的魔芋、香蕉、葛根、南瓜、山药及黄精在搅拌机内高速搅拌成颜色均匀的糊状物。
S5干燥:将糊状物涂布在双滚干燥机上,设定干燥温度为150℃,在干燥温度下将糊状物干燥,控制水分在5%以下。
S6破碎:将干燥的糊状物破碎成粉末,灭菌,封装。
使用试验
(一)感官评价
选取40-55岁的测试人群共36名,分为2组,每组18人,按照每人每天25g的食用量,开水冲泡实施例1-2的代餐粉作为早晨。分别对本发明实施例1-2提供的代餐粉进行风味感官评价,评价结果见表1。

从表1的评价结果中可以看出,本发明制备的藜麦代餐粉风味总体满意度高,是一种营养丰富,口感风味好,易于人群接受的功能早餐粉。
(二)调节血脂功能
1.按照如下标准选择受试人群
参照《中国成人血脂异常防治指南(2016年修订版)》以下四项中符合任意一项及一项以上,连续2次均提示异常者,即可确诊为血脂异常:
患者抽血前无高脂饮食、无饮酒,且空腹12-14小时,检验血脂全套,若①TG>1.7mmmol/L或②TC>5.2mmmol/L或③HDL-C<1.0mmol/L或④LDL-C>3.4mmmol/L。
按照以上标准共选取40例符合纳入标准者作为受试者。
2.试用研究方法
2.1分组
按受试者的血脂水平,采用随机抽样分组法分成2组,每组20人。其中实验组1-2分别食用本发明实施例1-2的藜麦代餐粉。其中各组年龄、性别、饮食情况比较无显著差异P>0.05,具有可比性。
2.2实验方法
实验组1-2组每人每天25g用量,100℃开水冲泡三分钟后食用,实验期间按照患者日常习惯饮食,观察时间为60天。
实验结果:如表2所示。

注:总胆固醇正常值2.84-5.68mmol/L,甘油三酯正常值0.56-1.7mmol/L
由表2数据可以看出,本发明提供的藜麦代餐粉对血液中的胆固醇、甘油三酯有明显的改善,降脂效果明显。
(三)调节血糖功能
1.按照如下标准选择受试人群
当空腹血糖值5.7-6.7mmol/L和血糖在6.7-7.7mg/L时,判断受试者血糖偏高。按照以上标准共选取50例符合纳入标准者作为受试者。
2.试用研究方法
2.1分组
按受试者的血糖水平,采用随机抽样分组法分成2组,每组25人。其中实验组1-2分别服用本发明实施例1-2制的藜麦代餐粉。其中各组年龄、性别、饮食情况比较无显著差异P>0.05,具有可比性。
2.2实验方法
实验组1-2每人每天25g用量,开水冲泡三分钟后服用,可连续冲泡,实验期间按照糖尿病患的饮食要求正常饮食,停用一切与本品功能相近的保健食品,观察时间为60天。
实验结果:如表3所示。

由表3数据可以看出,本发明提供的藜麦代餐粉配方对血糖有明显的改善。本发明的藜麦代餐粉中藜麦与苦荞、薏仁、葛根、芡实、山药、大麦青苗粉、黄精等17种药食同源材料配伍,可发挥协同作用,所有组分经熟化,开水泡制即食,风味口感较好,容易被大众接受。以上受试者四周后随访,均没有产生反弹现象,说明本发明提供的藜麦代餐粉组方具有效果稳定的特点。
Claims (3)
1.一种降糖藜麦代餐粉,其特征在于,由包含下述重量份数的原料配方制成:藜麦8-12份、青稞8-12份、苦荞8-12份、薏仁7-9份、魔芋8-12份、香蕉7-9份、葛根8-10份、黑芝麻2-4份、南瓜3-5份、燕麦3-5份、红小豆3-5份、绿豆3-5份、黑大豆2-4份、芡实2-4份、山药(熟)3-5份、大麦苗青粉2-4份、黄精(制)2-4份。
2.根据权利要求1所述的降糖藜麦代餐粉,其特征在于,是由包含下述重量份数的原料配方制成:藜麦10份、青稞10份、苦荞10份、薏仁8份、魔芋10份、香蕉8份、葛根9份、黑芝麻3份、南瓜4份、燕麦4份、红小豆4份、绿豆4份、黑大豆3份、芡实3份、山药(熟)4份、大麦苗青粉3份、黄精(制)3份。
3.一种降糖藜麦代餐粉的制备工艺,其特征在于,包括下述步骤:
S1清洗:将藜麦、青稞、苦荞、薏仁、魔芋、香蕉、葛根、黑芝麻、南瓜、燕麦、红小豆、绿豆、黑大豆、芡实、山药、黄精清洗干净后、烘干;
将大麦青苗清洗后、采用热蒸汽将大麦青苗烫熟或将大麦青苗放入沸水中焯熟,处理温度为95-110℃,然后将大麦青苗在40-80℃的热风干燥机中烘干;或者将大麦青苗清洗后,进行冷冻干燥;
S2制粉:将藜麦、青稞、苦荞、薏仁、黑芝麻、燕麦、红小豆、绿豆、黑大豆、芡实、大麦青苗粉碎成细粉;
S3熟化:对上述细粉采用微波熟化工艺使细粉瞬间熟化;将魔芋、香蕉、葛根、带瓜皮南瓜、山药、黄精切块或切片后,蒸熟;
S4预糊化处理:按权利要求1中各组分的重量比例,将熟化的细粉和蒸熟的魔芋、香蕉、葛根、南瓜、山药及黄精在搅拌机内高速搅拌成糊状物;
S5干燥:将糊状物涂布在双滚干燥机上,设定干燥温度为130-160℃,在干燥温度下将糊状物干燥,控制水分在5%以下;
S6破碎:将干燥的糊状物破碎成粉末,分装。
