硒极易挥发,极易变质,参与构成很多酶类,特别是谷胱甘肽过氧化酶,可以保护细胞和组织,维持其正常功能。硒还有解毒功效,因为硒和金属有很好的亲和性,对甲状腺激素的调节作用,维持正常免疫功能,抗艾滋病作用,维持正常生育功能。缺硒是发生克山病的重要原因,缺硒也被认为是发生大骨节病的重要原因。大骨节病是一种地方性、多发性、变形性骨关节病。它主要发生于青少年,严重地影响骨发育和日后劳动生活能力。中国营养学会制定硒的日供应量1岁以内为15微克,1~3岁为20微克,4~6岁为40微克,5岁至成年人为50微克。现有的补硒的方法通常是将含硒的药物或保健品制成胶囊或片剂供人体服用,采用这种补硒方法的缺点在于,由于硒易被空气氧化而失效,从而造成硒的无效进补,且胶囊不利于人体对硒元素的吸收。

为了解决现有技术存在的含硒药物或保健品中硒元素极易氧化、采用胶囊形式加以保护吸收效果不好的问题,本发明目的在于提供一种保护硒元素不被氧化、促进硒元素吸收的硒蛋白杂粮粉配方及其制备方法。

一种硒蛋白杂粮粉配方的制备方法,具体步骤如下:
S1.洁净物料的获取:将新鲜的黑米、黑芝麻、黑豆、黑木耳、桑葚、核桃仁分别放入清洗池中,通过人工拣选的方式将变质、腐烂的拣出弃用,去除桑葚梗,然后通过清洗机对上述物料进行清洗,将清洗完毕的物料捞出晾干得到洁净的物料;
S2.物料烘干:将准备好的洁净物料放入烘干机中烘干,得到烘干的物料;
S3.炒制:分别将黑米、黑芝麻、黑豆、核桃仁加入旋转炒锅中小火炒制10~25min,得到炒制物料;
S4.粉状物料获取:将准备好的烘干的物料、炒制物料分别加入到搅碎机中粉碎得到细粉物料;
S5.混料:按重量份分别称取准备好的细粉物料,即称取以重量份计算的黑米60~102份、黑芝麻25~60份、黑豆40~75份、黑木耳10~35份、桑葚4~30份、核桃仁4~30份,加入到搅拌机中,匀速搅拌10~20min,得到初步混料;向每500g初步混料中加入3~75mg硒蛋白,继续搅拌10min,得到混料;
S6.烘干:将准备好的混料加入到烘干机中,烘干后得到成品。
优选的,所述S2中烘干的温度为30~40℃、烘干时间为3~5h。烘干的温度过高、时间过长会使物料中的营养成分流失或者遭到破坏,使用之后达不到一定的效果。且烘干的温度越高、时间越长对于电的消耗越大,浪费电力资源,增加了制造成本。
优选的,所述S3中细粉物料为60~80目的细粉物料,将物料制成细分装有利于人体吸收。
优选的,所述S5中烘干的温度为30~40℃、烘干时间为20~40min。烘干的温度过高、时间过长会使物料中的营养成分流失或者遭到破坏,使用之后达不到一定的效果。烘干的温度越高、时间越长对于电的消耗越大,浪费电力资源,增加了制造成本。且所述细粉物料中含有蔗糖粉,温度太高会导致蔗糖粉融化。所述步骤S5中烘干混料为细粉状,因此烘干的时间比块状物料短。
本发明的有益效果为:
本发明的配方添加了富含维生素E和β胡萝卜素的物料,能对硒元素进行有效的保护,防止硒元素被氧化,有利于人体吸收,且本发明还添加了能增强抵抗力、补充其他营养元素、促进消化吸收的物料和中药,有利于营养元素的补充和吸收。同时,本发明的制备方法保留了物料和中药中的有效成分,使得物料和中药中的有效成分不被破坏。
具体实施方式
下面结合具体实施例对本发明做进一步阐释。
实施例1:
本实施例提供一种硒蛋白杂粮粉配方,以重量份计算的黑米60~102份、黑芝麻25~60份、黑豆40~75份、黑木耳10~35份、桑葚4~30份、核桃仁4~30份,每500g所述硒蛋白杂粮粉含硒蛋白3~75mg。
本实施例的一种硒蛋白杂粮粉配方的制备方法如下:
1.洁净物料的获取:将新鲜的黑米、黑芝麻、黑豆、黑木耳、桑葚、核桃仁分别放入清洗池中,通过人工拣选的方式将变质、腐烂的拣出弃用,去除桑葚梗,然后通过清洗机对上述物料进行清洗,将清洗完毕的物料捞出晾干得到洁净的物料;
2.物料烘干:将准备好的洁净物料放入烘干机中在35℃下烘干3h,得到烘干的物料;
S3.炒制:分别将黑米、黑芝麻、黑豆、核桃仁加入旋转炒锅中小火炒制20min,得到炒制物料;
S4.粉状物料获取:将准备好的烘干的物料、炒制物料分别加入到搅碎机中粉碎得到80目的细粉物料;
S5.混料:按重量份分别称取准备好的细粉物料,即称取以重量份计算的黑米粉60~102份、黑芝麻粉25~60份、黑豆粉40~75份、黑木耳粉10~35份、桑葚粉4~30份、核桃仁粉4~30份加入到搅拌机中,匀速搅拌20min,得到初步混料;向每500g初步混料中加入3~75mg硒蛋白,继续搅拌10min,得到混料;
6.烘干:将准备好的混料加入到烘干机中在35℃的温度下烘干30min,得到成品。
将黑米、黑芝麻、黑豆、核桃仁进行炒制,增加香味,使得成品具有浓郁的香味和更好的口感,加入蔗糖掩盖中药成分的味道,使得成品口味更加,有利于增加人的食欲。且蔗糖可以增加机体ATP的合成,有利于氨基酸的活力与蛋白质的合成。
实施例2:
本实施例提供一种硒蛋白杂粮粉配方,包括以重量份计算的黑米70份、黑芝麻60份、黑豆60份、紫薯40份、红豆50份、黑木耳30份、桑葚10份、核桃仁30份、玉米粒20份、葵花籽30份、山药15份、杏仁30份、马铃薯15份、枸杞10份、胡萝卜10份、南瓜30份、绿茶5份、蔗糖10份、红枣15份、银耳20份、当归1份、党参5份、山楂1份、厚朴0.3份,每500g所述硒蛋白杂粮粉含硒蛋白3~75mg。
本实施例的一种硒蛋白杂粮粉配方的制备方法如下:
1.洁净物料的获取:将新鲜的黑米、黑芝麻、黑豆、黑木耳、桑葚、核桃仁、紫薯、红豆、玉米粒、葵花籽、山药、杏仁、马铃薯、枸杞、胡萝卜、南瓜、绿茶、蔗糖、红枣、银耳、当归、党参、山楂、厚朴分别放入清洗池中,通过人工拣选的方式将变质、腐烂的拣出弃用,去除桑葚梗和山药皮,然后通过清洗机对上述物料进行清洗,将清洗完毕的物料捞出晾干得到洁净的物料;
2.物料烘干:将准备好的洁净物料放入烘干机中在35℃下烘干3h,得到烘干的物料;
S3.炒制:分别将黑米、黑芝麻、黑豆、核桃仁、葵花籽、玉米粒加入旋转炒锅中小火炒制20min,得到炒制物料;
S4.粉状物料获取:将准备好的烘干的物料、炒制物料分别加入到搅碎机中粉碎得到80目的细粉物料;
S5.混料:按重量份分别称取准备好的细粉物料,即称取以重量份计算的黑米70粉份、黑芝麻粉60份、黑豆粉60份、紫薯粉40份、红豆粉50份、黑木耳粉30份、桑葚粉10份、核桃仁粉30份、玉米粒粉20份、葵花籽粉30份、山药粉15份、杏仁粉30份、马铃薯粉15份、枸杞粉10份、胡萝卜粉10份、南瓜粉30份、绿茶粉5份、蔗糖粉10份、红枣粉15份、银耳粉20份、当归粉1份、党参粉5份、山楂粉1份、厚朴粉0.3份加入到搅拌机中,匀速搅拌20min,得到初步混料;向每500g初步混料中加入3~75mg硒蛋白,继续搅拌10min,得到混料;
6.烘干:将准备好的混料加入到烘干机中在35℃的温度下烘干30min,得到成品。
实施例3:
本实施例提供一种硒蛋白杂粮粉配方,包括黑米170g、黑芝麻100g、黑豆120g、黑木耳50g、桑葚30g、核桃仁30g、硒蛋白3~75mg。
本实施例的制备方法与实施例1相同。
实施例4:
本实施例提供一种硒蛋白杂粮粉配方,包括以重量份计算的黑米75份、黑芝麻55份、黑豆65份、紫薯35份、红豆55份、黑木耳20份、桑葚10份、核桃仁30份、玉米粒20份、葵花籽30份、山药20份、杏仁30份、马铃薯20份、枸杞8份、胡萝卜11份、南瓜25份、绿茶5份、蔗糖10份、红枣20份、银耳20份、当归5份、党参5份、山楂3份、厚朴0.4份,每500g所述硒蛋白杂粮粉含硒蛋白3~75mg。
本实施例的制备方法与实施例2相同。
实施例5:
本实施例提供一种硒蛋白杂粮粉配方,包括以重量份计算的黑米80份、黑芝麻60份、黑豆60份、紫薯30份、红豆50份、黑木耳30份、桑葚30份、核桃仁30份、玉米粒20份、葵花籽15份、山药15份、杏仁20份、马铃薯20份、枸杞5份、胡萝卜15份、南瓜20份、绿茶10份、蔗糖10份、红枣20份、银耳30份、当归2份、党参2份、山楂5份、厚朴0.5份,每500g所述硒蛋白杂粮粉含硒蛋白3~75mg。
本实施例的制备方法与实施例2相同。
实施例6:
本实施例提供一种硒蛋白杂粮粉配方,包括以重量份计算的黑米80份、黑芝麻55份、黑豆55份、紫薯30份、红豆50份、黑木耳20份、桑葚10份、核桃仁30份、玉米粒40份、葵花籽30份、山药15份、杏仁10份、马铃薯15份、枸杞10份、胡萝卜15份、南瓜30份、绿茶10份、蔗糖10份、红枣30份、银耳40份、当归3份、党参3份、山楂5份、厚朴0.5份,每500g所述硒蛋白杂粮粉含硒蛋白3~75mg。
本实施例的制备方法与实施例2相同。
将上述实施例2~6五种配方进行硒的保护效果检测,进行7组实验,其中上述实施例2~6五种配方为实验组,对照组1的配方与上述实施例5相同但不添加含维生素E的物料,对照组2的配方与上述实施例5相同但不添加含β胡萝卜素的物料。实验方法为:称取相同重量的上述7种配方制得的样品,检测上述7种样品中硒元素的含量,然后将上述所有样品在相同环境下储藏2个月后,检测所有样品中硒元素的含量,计算硒元素的保留率。硒元素保留率越高的证明该配方对硒元素的保护效果越高。其中,硒元素保留率=最终硒元素含量/初始硒元素含量。实验结果如表1所示:

2.根据权利要求1所述的一种硒蛋白杂粮粉配方,其特征在于:还包括紫薯份、红豆份、玉米粒份、葵花籽份、山药份、杏仁份、马铃薯份、枸杞份、胡萝卜份、南瓜份、绿茶份、蔗糖份,所述硒蛋白杂粮粉配方包括以重量份计算的黑米60~102份、黑芝麻25~60份、黑豆40~75份、紫薯30~40份、红豆50~70份、黑木耳10~35份、桑葚4~30份、核桃仁4~30份、玉米粒20~40份、葵花籽10~30份、山药15~30份、杏仁10~30份、马铃薯15~30份、枸杞5~10份、胡萝卜10~15份、南瓜15~30份、绿茶5~10份、蔗糖5~10份,每500g所述硒蛋白杂粮粉含硒蛋白3~75mg。
3.根据权利要求2所述的一种硒蛋白杂粮粉配方,其特征在于:还包括红枣份、银耳份、当归份、党参份,所述硒蛋白杂粮粉配方包括以重量份计算的黑米60~102份、黑芝麻25~60份、黑豆40~75份、紫薯30~40份、红豆50~70份、黑木耳10~35份、桑葚4~30份、核桃仁4~30份、玉米粒20~40份、葵花籽10~30份、山药15~30份、杏仁10~30份、马铃薯15~30份、枸杞5~10份、胡萝卜10~15份、南瓜15~30份、绿茶5~10份、蔗糖5~10份、红枣15~30份、银耳20~40份、当归1~5份、党参1~5份,每500g所述硒蛋白杂粮粉含硒蛋白3~75mg。
4.根据权利要求3所述的一种硒蛋白杂粮粉配方,其特征在于:还包括山楂份和厚朴份,所述硒蛋白杂粮粉配方包括以重量份计算的黑米60~102份、黑芝麻25~60份、黑豆40~75份、紫薯30~40份、红豆50~70份、黑木耳10~35份、桑葚4~30份、核桃仁4~30份、玉米粒20~40份、葵花籽10~30份、山药15~30份、杏仁10~30份、马铃薯15~30份、枸杞5~10份、胡萝卜10~15份、南瓜15~30份、绿茶5~10份、蔗糖5~10份、红枣15~30份、银耳20~40份、当归1~5份、党参1~5份、山楂1~5份、厚朴0.3~0.5份,每500g所述硒蛋白杂粮粉含硒蛋白3~75mg。
5.一种硒蛋白杂粮粉配方的制备方法,其特征在于:制备权利要求1中所述的一种硒蛋白杂粮粉配方,具体步骤如下:
S1.洁净物料的获取:将新鲜的黑米、黑芝麻、黑豆、黑木耳、桑葚、核桃仁分别放入清洗池中,通过人工拣选的方式将变质、腐烂的拣出弃用,去除桑葚梗,然后通过清洗机对上述物料进行清洗,将清洗完毕的物料捞出晾干得到洁净的物料;
S2.物料烘干:将准备好的洁净物料放入烘干机中烘干,得到烘干的物料;
S3.炒制:分别将黑米、黑芝麻、黑豆、核桃仁加入旋转炒锅中小火炒制10~25min,得到炒制物料;
S4.粉状物料获取:将准备好的烘干的物料、炒制物料分别加入到搅碎机中粉碎得到细粉物料;
S5.混料:按重量份分别称取准备好的细粉物料,即称取以重量份计算的黑米60~102份、黑芝麻25~60份、黑豆40~75份、黑木耳10~35份、桑葚4~30份、核桃仁4~30份,加入到搅拌机中,匀速搅拌10~20min,得到初步混料;向每500g初步混料中加入3~75mg硒蛋白,继续搅拌10min,得到混料;
S6.烘干:将准备好的混料加入到烘干机中,烘干后得到成品。
6.根据权利要求5所述的一种硒蛋白杂粮粉配方的制备方法,其特征在于:所述S2中烘干的温度为30~40℃、烘干时间为3~5h。
7.根据权利要求5或6所述的一种硒蛋白杂粮粉配方的制备方法,其特征在于:所述S3中细粉物料为60~80目的细粉物料。
8.根据权利要求7所述的一种硒蛋白杂粮粉配方的制备方法,其特征在于:所述S5中烘干的温度为30~40℃、烘干时间为20~40min。
