Abstract
本发明属于食品技术领域,公开了一种营养价值较高的富硒天然营养食品及其制备方法。以富含硒的野生葛根粉、魔芋精粉及山药粉、黑芝麻、核桃仁、砂糖为原料配制而成,它可以改善人体组织器官的新陈代谢,增强心血管功能,延缓细胞衰老,起到较好地保健作用,由于硒的加入,可以明显预防并降低癌症发病率,为人们提供了一种安全、有效、方便、美味的餐桌食品。

技术领域
本发明涉及一种食品技术领域,尤其是涉及采用以魔芋精粉、葛根、山药、黑芝麻、核桃仁为主要原料生产的一种富硒天然营养食品及其制备方法。
背景技术
硒是一种非金属化学元素,是人体生命中必需的、不可缺少的元素之一。被国内外医药界和营养学界尊称为“生命的火种”、“长寿元素”、“抗癌之王”、“心脏守护神”、“天然解毒剂”等美誉。硒在人体组织内含量为千万分之一,但它却决定了生命的存在,对人类健康的巨大作用是其他物质无法替代的。
国内外科学研究和临床实践证明,缺硒会直接导致人体免疫能力下降,威胁人类健康和生命的癌症、心血管病、肝病、白内障、胰腺病、克山病、白内障、糖尿病、生殖系统疾病等四十多种疾病的发病率和死亡率都与人体缺硒有关,即人体血硒水平越低,其患恶性肿瘤的死亡率越高。硒能预防心血管疾病、可延缓衰老、增强人体免疫功能,能调节人体内维生素A、E、K等的吸收与消耗;参与辅酶A与Q的合成,降低化学致癌-DNA化合物的生成量,对作为标准致癌突变物的丝裂霉素C的基因正向突变有明显的抑制作用。
广西巴马县是世界著名五大长寿地区之一。科学家通过对巴马的研究表明:巴马土壤、谷物中的硒含量高于全国平均水平10倍以上,百岁老人血液中的硒含量高出正常人的3-6倍;可见,“硒”是人体必需的,有科学家预言:硒将改变世界。世界卫生组织因此建议每天补充200微克硒。可有效预防多种疾病的发生。而光靠每天的日常食物是无法保证200微克硒的摄入量的,因此日常补硒显得尤为重要。
通常,补硒方法有食补和药补两种。过去,缺硒地区的人们普遍用药物补硒,以增强人体免疫能力,但吸收量低、成本高昂。极易引起不良反应,目前人们崇尚纯天然、安全、有效,有特殊健康作用的食品已成为世界潮流。饮食天然植物补硒更是人们公认的最安全、最有效、最彻底的方法和途径。因此,科学、合理地开发天然补硒营养食品具有深远的社会意义和实用价值。
发明内容:
本发明要解决的技术问题是提供一种药食两用的富硒天然营养食品,其既可补硒且营养丰富,其口感好,风味独特,并进一步给出其产品的制备方法。
为解决上述技术问题,本发明是通过如下方案实现的:针对魔芋精粉吸水性强、黏度大、膨胀率高的特点,利用葛根、山药、黑芝麻、核桃仁、砂糖与魔芋精粉复配,对魔芋粉进行物理改性,调节其口感和风味;进一步强化了维生素等天然营养成分。其中:
野生葛根粉,也称葛粉,内含黄酮类化合物、葛根素、大豆黄酮苷、花生素、蛋白质、氨基酸、糖、和人体必需的钙、硒、铁、铜、磷、钾等十多种微量元素和矿物质,具有“断谷不饥,解表退热,生津止渴,开胃下食,疗痔防癌”等功效。被各国专家誉为“长寿粉”。是老少皆宜的名贵滋补品,有“千年人参”之美誉。葛粉所含的富“硒”元素及黄酮类物质,被有关中医专家们赞誉为《美容维生素增效剂》,有清除体内垃圾、强筋壮骨、美容健体、延年益寿的功能。
黑芝麻:为胡麻科脂麻的黑色种子,含有多种人体必需氨基酸、脂肪、蛋白质、糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分。具有抗衰老,加速人体代谢功能、消除血管胆固醇、预防与治疗人体动脉硬化,强壮筋骨、滋阴补肾、益肝养肺、预防贫血、活化脑细胞等功效。是美容养颜,健康长寿之佳品。
核桃仁:又称胡桃,为胡桃科植物。含有丰富的营养素、维生素、胡萝卜素、核黄素、蛋白质、脂肪、碳水化合物及人体必需的钙、磷、铁、镁、锌、锰等多种微量元素和矿物质。其脂肪的主要成分是亚油酸甘油脂,食后能减少肠道对胆固醇的吸收,可作为高血压、动脉硬化患者的滋补品。此外,核桃中所含的微量元素锌和锰是脑垂体的重要成分,有益于脑的营养补充,有健脑益智作用。
李时珍说:核桃能“补肾通脑,有益智慧”。不少古代人还发明了许多吃核桃的方法,如将核桃500克打碎去壳取仁,将核桃仁加冰糖共捣成核桃泥,密闭贮藏在瓷缸中,每次取两茶匙,用开水冲和饮服。据说,用水冲和后浮起的一层白色液体,就是补脑作用最强的“核桃奶”。500克核桃仁可相当于2500克鸡蛋或4500克牛奶的营养价值。
山药粉:含有大量的薯蓣皂、淀粉酶、糖类、脂肪、蛋白质、B族维生素、维生素C、维生素E、葡萄糖、粗蛋白氨基酸、胆汁碱、尿囊素及碘、钙、铁、磷等人体不可缺少的无机盐和微量元素。其中重要的营养成分薯蓣皂,是合成女性荷尔蒙的先驱物质,有滋阴补阳、增强新陈代谢的功效;而块茎中含有的多糖蛋白成分的粘液质、消化酵素等,可预防心血管脂肪沉积,有助于胃肠的消化吸收。山药是人所共知的滋补佳品。有“神仙之食”的美名。
魔芋精粉:魔芋学名蒟蒻,是一种多年生草本植物,为天南星科魔芋属植物的泛称,大多生长在高寒山区,魔芋地下块茎扁圆形,宛如大个儿荸荠,营养十分丰富,从魔芋块茎中提取的魔芋精粉,含有多种维生素、硒、钾、磷等矿物质元素及人类所需要的魔芋多糖、葡甘聚糖及大量的可溶性膳食纤维。具有降血糖、降血脂、抗脂肪肝,润肠通便、减肥健身、治病抗癌等功效,被人们誉为“魔力食品”、“神奇食品”、“健康食品”等风靡全球。
本发明的一种富硒天然营养食品,是由富硒的魔芋精粉、野生葛根粉与山药粉、黑芝麻、核桃仁、砂糖配制而成,其配料比以重量份计为魔芋精粉5-15份、葛根粉40-50份、山药粉40-50份、黑芝麻30-40份、核桃仁30-40份、砂糖25-35份。
其制备方法是:将魔芋精粉5-15份、砂糖25-35份加入经精炒后磨成的葛根粉40-50份、山药粉40-50份,黑芝麻粉30-40份、核桃仁粉30-40份混合后再磨成30目细粉即得成品。
食用时,每日2-3次,每次50-100克,用2-3倍重量的开水调成粥状即可食用。若调好后,用微波炉稍稍加热,口感更佳。亦可将本品加入牛奶、豆奶或用蜂蜜调食,或用用鲜牛奶调成糊状冻成雪糕更是别有风味。

本发明可作为早餐及夜宵食用。特点是:1、在富含硒的野生葛根粉、魔芋精粉中按科学比例适量添加黑芝麻、山药粉和葛根粉,使各种成份的营养功能都能够有效发挥,有利于对营养物质的消化和吸收。2、本品补硒方式是通过食用百分之百纯天然富硒食品而实现人体对硒的需求的,适合中老年养生保健,孕产妇补充营养,运动后培固体力,以及病弱者增强体质,应试学生及脑力工作者的日常滋补。对于健康人群可以使其远离多种疾病,抗衰老。对于癌症患者提供了一种新型的用于抗癌食疗产品。坚持适量长期食用,可获防癌抗癌、强身、美容三大效果。3、不含任何人工香精、食用色素、合成保鲜品等食品添加剂和防腐剂。

本发明的一种药食两用的富硒天然营养食品,是由富硒的魔芋精粉、野生葛根粉与山药粉、黑芝麻、核桃仁、砂糖配制而成,
其制作方法是:按重量份将魔芋精粉5份、砂糖25份加入经精炒后磨成的葛根粉40份、山药粉40份,黑芝麻30份、核桃仁30份混合后再磨成30目细粉,即得成品。
实施例二
实施例二与实施例一基本相同,不同之处是其重量份配料比为魔芋精粉10份、加葛根粉45份、山药粉45份,黑芝麻35份、核桃仁35份、砂糖30份。
实施例三
实施例三与实施例一基本相同,不同之处是其重量份配料比为魔芋精粉15份、葛根粉50份、山药粉50份、黑芝麻40份、核桃仁40份、砂糖35份。
Claims (3)
1.一种富硒天然营养食品及其制备方法,其特征在于天然营养食品由富硒的魔芋精粉、野生葛根粉与山药粉、黑芝麻、核桃仁、砂糖配制而成。
2.根据权利要求1所述的富硒天然营养食品,其特征在于配料比以重量份计为魔芋精粉5-15份、葛根粉40-50份、山药粉40-50份、黑芝麻30-40份、核桃仁30-40份、砂糖25-35份。
3.根据权利要求1所述的富硒天然营养食品的制备方法:其特征在于将魔芋精粉5-15份、砂糖25-35份加入经精炒后磨成的葛根粉40-50份、山药粉40-50份,黑芝麻粉30-40份、核桃仁粉30-40份混合后再磨成30目细粉即得成品。
