Abstract
本发明公开了一种五彩火麻八宝粥及其制备方法。本产品以长寿之乡特产火麻、玉米、核桃、小米、板栗、墨米等纯天然绿色农产品为主要原料,经过原料预处理、浸泡处理、中火水煮、大火水煮、小火熬制、灌装杀菌、保存出厂等工艺制成,几种原料配合使用,营养丰富全面,口感细腻,甜度适口,久服可有润燥、滑肠、通淋、活血、开胃的功效,可减少心血管疾病、恶性肿瘤的发生,是一种保健性的药食兼用型纯植物蛋白的长寿食品。产品以黄、青、白、红和黑色作为食品的配用色彩,故名五彩火麻八宝粥。

技术领域
本发明涉及一种食品技术领域,尤其涉及一种以长寿之乡特产火麻、玉米、核桃、小米、板栗、墨米等纯天然绿色农产品为主要原料生产纯植物蛋白的五彩火麻八宝粥及其制备方法。
背景技术
广西巴马县是世界著名的长寿之乡,凤山县、东兰县亦是中国长寿之乡。本发明所用之主要原料均为三县之特产。
火麻是巴马常见的草本植物之一,是迄今为止发现最有效的抗衰老和抗辐射植物,火麻籽去壳后得到火麻仁。火麻仁富含不饱和脂肪酸、蛋白质、卵磷脂、油酸等,其脂肪酸中含亚油酸和亚麻酸共达76.4%,是目前常见食用植物油中不饱和脂肪含量最高者之一。火麻被当地人称为“长寿麻”,火麻仁榨出的油就是闻名的长寿油、火麻油,是目前世界上唯有的一种能够溶解于水的植物油。据国际自然医学会调查发现,除了特殊的地理环境之外,巴马百岁老人的长寿秘密就是,她们每天都会吃火麻仁,食用火麻油。平均下来,每位长寿老人每年食用火麻仁15公斤,相当于每天至少要吃40克。
黄玉米是巴马县地方特产,是一种产于大石山区的纯天然农产品。颗粒小而溜圆,色泽金黄透亮,形似一颗颗晶莹的黄色珍珠,寿乡人美其名曰“珍珠黄玉米”。因受独特的雨水、土质等自然气候影响,无虫无害,无污染,含有多种人体需要的维生素、氨基酸、胡萝卜素、微量元素镁硒等。用黄玉米制成的食物是巴马长寿老人的主要食品,当地群众称之为“长寿粥”或“黄金食”。
凤山县盛产核桃和小米,核桃仁含有丰富的营养素,每百克含蛋白质15~20克,脂肪60~70克,碳水化合物10克,并含有人体必需的钙、磷、铁等多种微量元素和矿物质,以及胡萝卜素、核黄素等多种维生素。核桃中所含脂肪的主要成分是亚油酸甘油脂,食后能减少肠道对胆固醇的吸收,因此,可作为高血压、动脉硬化患者的滋补品。小米是谷子去皮后的颗粒状粮食,历来就有“五谷杂粮,谷子为首“的美称。体弱有病的老人常用小米滋补身体。中医学认为,小米益五脏,厚肠胃,充津液,壮筋骨,长肌肉。清代有位名医说:“小米最养人。熬粥米油胜过人参汤。”老人最喜欢小米,把小米当成最好的滋补佳品。
东兰是中国板栗之乡和墨米之乡,板栗富含人体所需的多种氨基酸、维生素B1、B2、C和钙、磷、铁、锌等微量元素,被人们誉为果中珍品,板栗亦有很好的药用价值,又称“药果”。东兰墨米,也称黑糯米,因其谷壳、米粒内外均为紫黑色而得名。墨米含氨基酸达18种之多,而其中的8种又是人体所不可缺少的,尤以苏氨酸、赖氨酸含量最高,粗蛋白、粗脂肪、硫胺素、核黄素及矿物营养元素均高于其它稻种。此外,墨米还含有脂肪、钙、磷、铁等多种营养,具有滋阴补脾、健暧肝、明目活血之功效,可作产妇和病弱者、老人的滋补食品,故有“药米”之称,是世界长寿之乡医食同源之珍品。
目前,为了食用方便,人们对绿色食品进行了很多过度的开发,或榨油或制粉、或制饮料或制成汤料,林林总总,不一而足。为满足部分人的口味需求,产品大多添加香精、色素、防腐剂等物,有危害人们的身体健康之嫌。有的干脆做成是双蛋白食品,美其名为增加营养,这样做固然有利于人体对营养吸收,但却舍弃了绿色食品中最基本的长寿要素:如全天然绿色产品、有机食品、纤维素、纯植物蛋白、不饱和脂肪酸等等,如一种火麻油(200710195010.5)、富含维生素E的玉米油(200710175878.9)、一种火麻蛋白粉(200710195009.2)、一种银耳火麻仁饮料食品(200910037883.2)、一种新型火麻汤易拉罐食品(201110303089.5)、一种火麻仁饮料(200810029541.1)等等。诸如此类,不胜枚举。
八宝粥作为我国传统的膳食品,除了传统八宝粥外,市面上有各种八宝粥生产,如黑八宝粥(94104563.3)、杏仁八宝粥(95108704.5)、姜糖八宝粥(95110958.8)、五谷八宝(98117646.1)、银杏八宝粥(98110315.4)、青稞虫草八宝粥(200710049469.4)等,并都各有其独到的特点。
目前市面上火麻仁食品比较少,以长寿之乡特产火麻、玉米、核桃、小米、板栗、墨米等纯天然绿色农产品为主要原料生产纯植物蛋白的五彩火麻八宝粥还未见报道。
发明内容
本发明的目的是克服现有食品开发技术的缺陷,提供一种以长寿之乡特产火麻仁、玉米、核桃仁、小米、板栗仁、墨米等纯天然绿色农产品为主要原料生产纯植物蛋白的五彩火麻八宝粥及其制备方法。
本发明的目的通过下述技术方案予以实现:
1、五彩是自然界中黄、青、白、红和黑色,泛指各种颜色,本发明所配用的色彩及原料为:
黄色:黄玉米、板栗仁、小米、甜竹笋、砂糖;
青色:绿豆;
白色:火麻仁、核桃仁、大米;
红色:红小豆、花生;
黑色:墨米。
2、本发明所使用的原料重量比份为:
所述的黄玉米为经碾米机加工的珍珠黄玉米微型颗粒成品,俗称玉米头;板栗仁、核桃仁为1厘米以下的颗粒碎片;花生粒一分为二,或更小;甜竹笋或干或鲜均可,切丁。
3、制备方法是:
①原料预处理,珍珠黄玉米加工成玉米头,板栗仁、核桃仁、花生制为小颗粒,甜竹笋切丁,用磨浆机将火麻仁打浆取汁待用;
②根据配比,在室温下将玉米用水浸泡2小时,大米、小米、墨米浸泡1小时,沥干水分待用;
③将玉米、核桃仁、板栗仁、红豆、绿豆、花生一起下锅加水,中火水煮30分钟;将大米、小米、墨米、竹笋加入锅中,加入火麻仁浆汁,大火水煮30分钟,然后小火熬制1小时,期间不间断搅拌,粥熟透停火,停火前10分钟加入砂糖,搅拌均质;
④冷却至室温,即成成品,通过灌装机灌装塑料杯、盒、碗或金属盒,杀菌;
⑤在1℃~5℃温度下保存,出厂。
本发明所述的砂糖可用冰糖或低聚果糖、麦芽糖醇、木糖醇等替代,甜度根据消费者体质特征而定,可自由增减用糖量。
本发明的有益效果是:
1、在广西巴马县,当地人从小到大均食用火麻油。据科研部门研究,号称“世界第五大长寿之乡的巴马人之所以长寿,其秘诀就是长期食用火麻油和玉米,巴马人一谈到巴马火麻,就会脱口而出:“天天吃火麻,活到九十八”。近年来流行的“火麻豆腐”、“火麻苦菜汤”、“火麻粥”、“火麻油”等,就是巴马的长寿品牌食品系列。本品以巴马火麻仁打浆取汁作八宝粥底料,底料中富含不饱和脂肪酸、蛋白质、卵磷脂、油酸等,是火麻仁的精华所在,是巴马的长寿品牌食品系列的一个新产品。
2、本品是以纯天然绿色农产品为主要原料加工而成,辅以砂糖,久服可有润燥、滑肠、通淋、活血、开胃的功效,可减少心血管疾病、恶性肿瘤发生的概率,是一种保健性的药食兼用型长寿食品。
3、本产品不含香精、色素、防腐剂,原料中蛋白质充足,不添加动物蛋白,又可谌称是纯植物蛋白的长寿食品。
4、本产品可开发出满足不同消费群体需求的食品。减小或增加砂糖用量,亦能满足不同消费群体的口味需求。如以低聚果糖代替砂糖,则食品具有改善血脂、改善血糖、改善肠道生理生化功能、防止便秘、防止龋齿的作用,适合“三高”人士和儿童食用;如以木糖醇、麦芽糖醇代替砂糖,则本食品适合糖尿病患者、肥胖病人饮用,是有益健康的大众化食品。
5、本产品以黄、青、白、红和黑色作为食品的配用色彩,这五种颜色从阴阳五行学说上讲,分别代表木、金、火、水、土。同时,分别象征东、西、南、北、中,蕴涵着五方神力赐福长寿,故名五彩火麻八宝粥。
6、产品采用传统工艺精制而成,几种原料配合使用,营养丰富全面,含有较低的胆固醇,同时口感细腻,甜度适口,特别适合城市社区饮食店、学校食堂和医院食堂作早餐。配方简单,制备容易,成本低,且原料充足,适合中小(微)型生产厂家生产。

实施例一

②根据配比,在室温下将玉米用水浸泡2小时,大米、小米、墨米浸泡1小时,沥干水分待用;
③将玉米、核桃仁、板栗仁、红豆、绿豆、花生一起下锅加水,中火水煮30分钟;将大米、小米、墨米、竹笋加入锅中,加入火麻仁浆汁,大火水煮30分钟,然后小火熬制1小时,期间不间断搅拌,粥熟透停火,停火前10分钟加入砂糖,搅拌均质;
④冷却至室温,即成成品,通过灌装机灌装塑料杯、盒、碗或金属盒,杀菌;
⑤在1℃~5℃温度下保存,出厂。
砂糖以提供能量为主,本食品适合普通年轻人或体力消耗大的人群。本实施例产量较大,适合工厂生产。如城市社区饮食店、学校食堂、医院食堂现场制作本食品,可减少灌装、包装、杀菌、冷却等环节,直接现卖,减少成本。

以冰糖替代砂糖,提供能量为主,本食品适合普通年轻人或体力消耗大的人群。如城市社区饮食店、学校食堂、医院食堂现场制作本食品,可减少灌装、包装、杀菌、冷却等环节,直接现卖,减少成本。

④冷却至室温,即成成品;
⑤在家庭生活冰箱内保存,食用。
低聚果糖对肠道中如双岐杆菌有选择性增殖作用,本食品具有改善血脂、改善血糖、改善肠道生理生化功能、防止便秘的作用,低聚果糖不能被突变链球菌利用生成不溶性葡聚糖而提供口腔微生物沉积、产酸和腐蚀的产所,可以预防儿童龋齿,本品适合“三高”人士和儿童食用。本实施例产量较少,适合家庭食用。
实施例4
所使用的原料配比(克)为:
制备方法是:
①原料预处理,珍珠黄玉米加工成玉米头,板栗仁、核桃仁、花生制为小颗粒,竹笋切丁,用磨浆机将火麻仁打浆取汁待用;
②根据配比,在室温下将玉米用水浸泡2小时,大米、小米、墨米浸泡1小时,沥干水分待用;
③将玉米、核桃仁、板栗仁、红豆、绿豆、花生一起下锅加水,中火水煮30分钟;将大米、小米、墨米、竹笋加入锅中,加入火麻仁浆汁,大火水煮30分钟,然后小火熬制1小时,期间不间断搅拌,粥熟透停火,停火10分钟前加入木糖醇、麦芽糖醇,搅拌均质;
④冷却至室温,即成成品;
⑤在家庭生活冰箱内保存,食用。
木糖醇、麦芽糖醇与蔗糖的甜度相当,这两种糖醇是砂糖最好的替代品,是糖尿病人和肥胖病人良好的甜味剂,也是一种具有医疗保健作用的新型食品添加剂,因此糖尿病患者也可放心食用此八宝粥。本实施例产量较少,适合家庭食用。

Claims (6)
1.一种五彩火麻八宝粥,其特征是,由以下原料和其重量比份经加工而制成:
所述的黄玉米为经碾米机加工的珍珠黄玉米微型颗粒成品,俗称玉米头;板栗仁、核桃仁为1厘米以下的颗粒碎片;花生粒一分为二,或更小;甜竹笋或干或鲜均可,切丁。
2.根据权利要求1所述的一种五彩火麻八宝粥配方,其特征是,所述的配方中原料的配用色彩为:
黄色:黄玉米、板栗仁、小米、甜竹笋、砂糖;
青色:绿豆;
白色:火麻仁、核桃仁、大米;
红色:红小豆、花生;
黑色:墨米。
3.根据权利要求1所述的一种五彩火麻八宝粥配方,其特征是,所述的配方原料均为长寿之乡特产纯天然绿色农产品。
4.如权利要求1所述的一种五彩火麻八宝粥的制备方法,其特征是,所述的工艺为:
①原料预处理,珍珠黄玉米加工成玉米头,板栗仁、核桃仁、花生制为小颗粒,甜竹笋切丁,用磨浆机将火麻仁打浆取汁待用;
②根据配比,在室温下将玉米用水浸泡2小时,大米、小米、墨米浸泡1小时,沥干水分待用;
③将玉米、核桃仁、板栗仁、红豆、绿豆、花生一起下锅加水,中火水煮30分钟;将大米、小米、墨米、竹笋加入锅中,加入火麻仁浆汁,大火水煮30分钟,然后小火熬制1小时,期间不间断搅拌,粥熟透停火,停火前10分钟加入砂糖,搅拌均质;
④冷却至室温,即成成品,通过灌装机灌装塑料杯、盒、碗或金属盒,杀菌;
⑤在1℃~5℃温度下保存,出厂。
5.根据权利要求4所述的一种五彩火麻八宝粥制备方法,其特征是,用磨浆机将火麻仁打浆取汁作八宝粥底料。
6.根据权利要求4所述的一种五彩火麻八宝粥制备方法,其特征是,所述的黄玉米为经碾米机加工的珍珠黄玉米微型颗粒成品,俗称玉米头。
