本发明涉及食品领域,具体的说,涉及了一种杂粮粉及其制备方法。
背景技术
随着人们物质生活水平的提高,人们的饮食结构也发生了变化,食品的精细化程度极大提高,但膳食纤维、维生素、矿物质等人体必需的营养素却随着加工的精细化程度提高而流失。
膳食纤维被誉为第七大营养素,越来越多的现代医学和营养学研究表明,膳食纤维具有促进结肠功能、预防结肠癌,降低血脂、预防冠心病、糖尿病,以及辅助瘦身等功效,是维持健康所不能缺少的物质,对于肠胃不佳、肥胖、三高人群更加需要。中国营养学会对于中等能量摄入的成年人膳食纤维适量摄入量推荐为25~35g/d,这对于每天服用精细食品的大多数人群来说,膳食纤维的摄入量远远不够。
杂粮营养全面、均衡,含有丰富的膳食纤维、蛋白质、氨基酸、维生素E、B族维生素、以及铁、钙、硒、磷、镁等人体必需矿物质,在某些方面其营养价值远远超过精米白面。中国居民膳食指南中也提出了“要注意粗细搭配,经常吃一些杂粮”的建议。由于丰富的营养特点,目前杂粮食品已逐渐得到了广大消费者的热爱和追捧。
然而,现有技术中用杂粮制备的食品多以一种杂粮为主料,再配以其他辅料而成,存在营养单一并且有异味的缺点,同时现有的杂粮食品多为熟品,放置一段时间后容易滋生微生物从而出现变质现象,不易于储存。
发明内容
由鉴于此,本发明确有必要提供一种能辅助降低人体的血糖、血脂含量,能预防糖尿病和癌症、提高机体免疫力并有助于肠胃的蠕动增强消化功能的一种杂粮粉及其制备方法。
本发明所采用的技术方案是:一种杂粮粉,它包括下述质量份的原料:大米10~50份、黄米5~10份、黑米5~10份、燕麦片5~10份、玉米5~10份、红小豆5~8份、绿豆8~12份、红枣5~9份、花生2~4份、薏仁米6~10份、枸杞子3~4份、山药2~6份、百合1~4份、核桃仁1~2份。
基于上述,所述杂粮粉包括下述质量份的原料:大米15~45份、黄米7~9份、黑米6~9.5份、燕麦片7.5~9份、玉米5.5~9份、红小豆6.5~7.5份、绿豆8.6~11份、红枣6~8份、花生2.5~3.5份、薏仁米7~8.5份、枸杞子3.5~4份、山药3~4.5份、百合2~3份、核桃仁1~1.8份。
基于上述,所述杂粮粉包括下述质量份的原料:大米20~38份、黄米7.5~8.7份、黑米7~9份、燕麦片8~8.5份、玉米6~8.5份、红小豆7~7.5份、绿豆9~10.8份、红枣7~8份、花生3~3.5份、薏仁米7.5~8份、枸杞子3.5~3.8份、山药3.5~4份、百合2.5~3份、核桃仁1~1.5份。
本发明还提供一种杂粮粉的制备方法,其步骤包括:按照上述质量份的原料,将红小豆、绿豆、薏仁米、燕麦片、山药、百合、玉米、黑米依次进行混合、闷煮、干燥、研磨处理制得混合豆粉;将大米和黄米进行混合、膨化、粉碎处理制得膨化混合米粉;将红枣去核后与枸杞子、花生、核桃仁混合并经烘干处理后进行研磨制得果蔬粉;最后将所述混合豆粉、所述混合米粉和所述果蔬粉进行混合、灭菌处理制得杂粮粉。
具体地,本发明提供的杂粮粉中各原料的成分及功效如下:
大米:味甘、性平,入脾、胃、肺经,具有补中益气、健脾和胃、滋阴润肺、除烦渴的作用。大米是人类的主食之一,据现代营养学分析,大米含有蛋白质,脂肪,维生素B1、A、E及多种矿物质。大米中含碳水化合物75%左右,蛋白质7%~8%,脂肪1.3%~1.8%,并含有丰富的B族维生素等。大米中主要是米谷蛋白,其次是米胶蛋白和球蛋白。
黄米:富含蛋白质、碳水化合物、B族维生素、维生素E、锌、铜、锰等营养元素,具有益阴、利肺、利大肠之功效,适宜于体弱多病,面生疔疮者食用。
黑米:性平,味甘,归脾、胃经。黑米含粗蛋白质、粗脂肪、碳水化合物、粗灰分、B族维生素、维生素E、钙、磷、钾、镁、铁、锌等,有开胃益中、健脾活血、明目的功效。现代医学证实,黑米具有滋阴补肾,健脾暖肝、补益脾胃,益气活血,养肝明目等疗效。经常食用黑米,有利于防治头昏、目眩、贫血、白发、眼疾、腰膝酸软、肺燥咳嗽、大便秘结、小便不利、肾虚水肿、食欲不振、脾胃虚弱等症。
燕麦片:拥有丰富的膳食纤维,维生素B1、B2、E、叶酸等,并拥有可降低甘油三脂的低密度脂肪蛋白,对控制血脂升高特别是降低胆固醇的效果更为明显,可以改善血液循环、缓解生活工作带来的压力;此外燕麦片还含有钙、磷、铁、锌、锰等矿物质,能够预防骨质疏松、促进伤口愈合、防止贫血。
玉米:含有丰富的不饱和脂肪酸,尤其是亚油酸的含量高达60%以上,它和玉米胚芽中的维生素E协同作用,可降低血液胆固醇浓度并防止其沉积于血管壁。因此,玉米对冠心病、动脉粥样硬化、高脂血症及高血压等都有一定的预防和治疗作用。玉米中还含有一种长寿因子谷胱甘肽,它在硒的参与下,生成谷光甘肽氧化酶,具有恢复青春,延缓衰老的功能。玉米中所含的硒和镁有防癌抗癌作用,硒能加速体内过氧化物的分解,使恶性肿瘤得不到分子氧的供应而受到抑制。
红小豆:性平,味甘、酸,具有利水消肿、利尿、清热解毒、健脾止泻、补血、促进血液循环、益气、通乳的功效。
绿豆:味甘、性凉,经归心脾,具有“豆中佳品”之称,为清热解暑养生之佳品,有清热、祛暑利尿、解毒功效。日常食可清热解暑、通利小便、厚肠益胃。适用于热性体质、皮肤易患疮毒体质以及夏季养生和预防小儿出热痱子食用。
红枣:性微温,味甘、微甜,具有补脾益气,养血安神之功效。红枣含有蛋白质、脂肪、醣类、有机酸、维生素A、维生素C、微量钙和多种氨基酸等丰富的营养成份,红枣能促进白细胞的生成,降低血清胆固醇,提高血清白蛋白,保护肝脏。红枣中还含有抑制癌细胞,甚至可使癌细胞向正常细胞转化的物质。红枣中富含钙和铁,它们对防治骨质疏松、产后贫血有重要作用,另外,红枣所含的芦丁,是一种使血管软化,从而使血压降低的物质,对高血压病有防治功效。
花生:含丰富的脂肪和蛋白质,据测定花生果内的脂肪含量为44%~45%、蛋白质含量为24%~36%、含糖量为20%左右。花生中还含有丰富的钙和铁,维生素B、A、D、E等,并含有硫胺素、核黄素、尼克酸等多种维生素。矿物质含量也很丰富,特别是含有人体必须的氨基酸,有促进脑细胞发育,增强记忆的功能。花生中还含有大量的亚油酸,这种物质可使人体内胆固醇分解为胆汁酸排出体外,避免胆固醇在体内沉积,减少因胆固醇在人体中超过正常值而引发多种心脑血管疾病的发生率。花生中还含有一种生物活性很强的天然多酚类物质白藜芦醇,它是肿瘤疾病的天然化学预防剂,同时还能降低血小板聚集,预防和治疗动脉粥样硬化、心脑血管疾病。
薏仁米:味甘淡、性凉,归脾、肺、肾经。薏仁米含有多种维生素、氨基酸和矿物质,有促进新陈代谢和减少胃肠负担的作用,经常食用薏仁米食品对慢性肠炎、消化不良等症有效果。同时,薏仁米还具有健脾胃、利水湿、强筋骨、清内热的功效。
枸杞子:味甘,性平,具有养肝、滋肾、润肺的功效。《本草纲目》记载:枸杞子甘平而润,性滋补能补肾、润肺、生精、益气。现代医学研究表明:枸杞子富含枸杞多糖,该多糖是一种水溶性多糖,能够增强非特异性免疫功能,提高抗病能力,抑制肿瘤生长和细胞突变;并且该多糖还可以通过神经-内分泌-免疫调节网络发挥抗癌作用。枸杞多糖能明显增强受损胰岛细胞内超氧化物歧化酶的活性,提高胰岛细胞的抗氧化能力,减轻过氧化物对细胞的损伤,降低内二醛生成量。另外,枸杞中所含的枸杞多糖、B-胡萝卜素都是强力的抗氧化剂,再加上枸杞所含的微量元素硒和维生素E的协同作用,组成了强大的抗氧化部队。枸杞子能有效降低高脂血症患者血清中甘油三酯和胆固醇的含量,具有明显的调节血脂、调节脂类代谢功能,对预防心血管疾病具有积极作用。
山药:性甘、平、无毒,归脾、肺、肾经,山药含有极丰富的营养保健物质。《神农本草经》谓之“主健中补虚、除寒热邪气、补中益气力、长肌肉、久服耳目聪明”。近些年来的研究表明,山药具有诱导产生干扰素,增强人体免疫功能的作用,其所含胆碱和卵磷脂有助于提高人的记忆力,常食之可健身强体、延缓衰老,同时山药具有防治糖尿病的作用。现代科学分析,山药的最大特点是含有大量的黏蛋白,黏蛋白是一种多糖蛋白质的混合物,能防止脂肪沉积在心血管上,保持血管弹性,阻止动脉粥样硬化过早发生,可减少皮下脂肪堆积并能防止结缔组织的萎缩,预防类风湿关节炎、硬皮病等胶原病的发生。同时其所含的多巴胺,具有扩张血管、改善血液循环的重要功能。
百合:据《神农本草经》记载:百合味甘,平,主治邪气腹胀,心痛,利大、小便,补中益气,具有润肺止咳、宁心安神、美容养颜、防癌抗癌之功效。
核桃仁:性味甘、温,归肾、肺、大肠经。核桃仁中含有丰富的蛋白质、氨基酸及矿物原素,有很高的营养价值具有润肺强肾、降低血脂,预防冠心病之功效,长期食用具有益寿养颜,抗衰老等作用。《神农本草经》将核桃列为久服轻身益气、延年益寿的上品。明代李时珍著《本草纲目》记述,核桃仁有“补气养血,润燥化痰,益命门,处三焦,温肺润肠,治虚寒喘咳,腰脚重疼,心腹疝痛,血痢肠风”等功效。根据科学研究表明,核桃仁中的磷脂对脑神经有很好保健作用,同时所含有的不饱和脂肪酸,有防治动脉硬化的功效。核桃仁中含有锌、锰、铬等人体不可缺少的微量元素。
因此,本发明相对现有技术具有突出的实质性特点和显著的进步,具体的说,本发明提供的杂粮粉采用富含多种维生素、氨基酸及营养成分,且含有能预防心脑血管疾病物质作为食品原材料,具有较高的食用保健价值,以上原料经蒸煮或膨化后经烘干、研磨、混合后合用,具有“扶脾补中”“补脾益胃”等功效,能调理身体机能、增强免疫力、抗癌、清热去火、降血糖、调节血脂、有助于肠胃的蠕动增强消化功能、防治便秘等功效。同时,本发明提供的杂粮粉制备过程中不添加任何化学添加剂,制备方法简单易行,易于工业化生产,且食用方法简单,开水冲泡即可食用,是一种易于携带又富含营养的即食食品。

本实施例还提供一种制备上述杂粮粉的方法,其步骤包括:按照上述质量份的原料,将红小豆、绿豆、薏仁米、燕麦片、山药、百合、玉米、黑米依次进行混合、闷煮、干燥、研磨处理制得混合豆粉;将大米和黄米进行混合、膨化、粉碎处理制得膨化混合米粉;将红枣去核后与枸杞子、花生、核桃仁混合并经烘干处理后进行研磨制得果蔬粉;最后将所述混合豆粉、所述混合米粉和所述果蔬粉进行混合、灭菌处理制得杂粮粉。
实施例2
本实施例提供一种杂粮粉,其原料组成与实施例1中的原料大致相同,不同之处在于本实施例中所述杂粮粉具体包括以下质量份的原料:大米50份、黄米10份、黑米5份、燕麦片10份、玉米5份、红小豆8份、绿豆12份、红枣5份、花生4份、薏仁米6份、枸杞子3份、山药2份、百合4份、核桃仁1份。
本实施例还提供一种制备上述杂粮粉的方法,具体步骤与实施例1中的制备步骤相同。
实施例3
本实施例提供一种杂粮粉,其原料组成与实施例1中的原料大致相同,不同之处在于本实施例中所述杂粮粉具体包括以下质量份的原料:大米45份、黄米9份、黑米9.5份、燕麦片7.5份、玉米5.5份、红小豆6.5份、绿豆11份、红枣6份、花生2.5份、薏仁米7份、枸杞子3.5份、山药4.5份、百合3份、核桃仁1.5份。
本实施例还提供一种制备上述杂粮粉的方法,具体步骤与实施例1中的制备步骤相同。
实施例4
本实施例提供一种杂粮粉,其原料组成与实施例1中的原料大致相同,不同之处在于本实施例中所述杂粮粉具体包括以下质量份的原料:大米10份、黄米10份、黑米10份、燕麦片10份、玉米10份、红小豆8份、绿豆12份、红枣9份、花生4份、薏仁米10份、枸杞子4份、山药6份、百合4份、核桃仁1份。

本实施例提供一种杂粮粉,其原料组成与实施例1中的原料大致相同,不同之处在于本实施例中所述杂粮粉具体包括以下质量份的原料:大米30份、黄米6份、黑米8份、燕麦片7份、玉米6份、红小豆7份、绿豆10份、红枣8份、花生3份、薏仁米7份、枸杞子4份、山药3份、百合2份、核桃仁1.5份。
本实施例还提供一种制备上述杂粮粉的方法,具体步骤与实施例1中的制备步骤相同。
实施例6
本实施例提供一种杂粮粉,其原料组成与实施例1中的原料大致相同,不同之处在于本实施例中所述杂粮粉具体包括以下质量份的原料:大米33份、黄米8份、黑米7份、燕麦片8.5份、玉米6份、红小豆7份、绿豆10份、红枣7份、花生3份、薏仁米7.5份、枸杞子3.5份、山药4份、百合2.5份、核桃仁1.5份。
本实施例还提供一种制备上述杂粮粉的方法,具体步骤与实施例1中的制备步骤相同。
实施例7
本实施例提供一种杂粮粉,其原料组成与实施例1中的原料大致相同,不同之处在于本实施例中所述杂粮粉具体包括以下质量份的原料:大米38份、黄米7.5份、黑米9份、燕麦片8份、玉米7份、红小豆7.5份、绿豆10.5份、红枣8份、花生3份、薏仁米8份、枸杞子3.5份、山药4份、百合2.5份、核桃仁1份。
本实施例还提供一种制备上述杂粮粉的方法,具体步骤与实施例1中的制备步骤相同。
实施例8
本实施例提供一种杂粮粉,其原料组成与实施例1中的原料大致相同,不同之处在于本实施例中所述杂粮粉具体包括以下质量份的原料:大米45份、黄米9份、黑米6份、燕麦片7.5份、玉米6份、红小豆7份、绿豆9份、红枣6份、花生2.5份、薏仁米7份、枸杞子3.5份、山药3份、百合3份、核桃仁1.8份。
本实施例还提供一种制备上述杂粮粉的方法,具体步骤与实施例1中的制备步骤相同。
食品功效试验验证
功效验证例一
分别对实施例1~8提供的杂粮粉进行如下实验,以验证本发明杂粮粉调节血糖的功效。
试验过程如下:
2014年4月11日,寻找80名年龄及胖瘦不同的空腹血糖值FPG均大于10.0mmol/L的志愿者作为受实验者,并以每组10人分成8个试验小组。每个试验小组分为实验队和对比队各5人。实验过程中,两队实验者均服用同样规格的二甲双胍药物进行降血糖,同时试验队的5人在治疗的同时,每天食用所述杂粮粉,而对比队5人每天服用同比例的普通的流物,连续进行试验半年,食用期间和试验结束后,分别对8个试验小组检测各实验队和各对比队的患者的空腹血糖值,试验结果如表1所示:

从表1可以看出,在8个试验小组中,对比队的40人中,经服用二甲双胍药物进行降血糖治疗半年,空腹血糖值FPG已经低于10.0mmol/L,但依然大于8.5mmol/L,测试结果大于人体空腹血糖的正常值。而试验队的40人中的空腹血糖值FPG已经低于7.5mmol/L,基本达到了控制血糖的目的。
同时,实验过程中,在8个试验小组中实验队的共40名患者普遍感觉,随着食用时间的增加,不仅空腹血糖值降下来了,身体状况也有了很大提高,整个人都精神焕发了起来,而且还能明显地感觉到身体免疫能力的提高,即使在感冒流行的季节也没有再患过感冒。同时,食欲有所增加,肠胃的蠕动功能增强,没有出现大便干结等便秘现象。
功效验证例二
分别对实施例1~8提供的杂粮粉进行如下实验,以验证本发明杂粮粉调节血脂的功效。
试验过程如下:
2015年2月11日,寻找40岁-49岁年龄段的胖瘦不同的血脂中总胆固醇含量大于200mg/dL的80名志愿者作为受实验者,并以每组10人分成8个试验小组。每个试验小组分为实验队和对比队各5人。实验过程中,两队实验者均服用同样规格的阿西莫司药物进行调节血脂,同时试验队的5人在治疗的同时,每天食用所述杂粮粉,而对比队5人每天服用同比例的普通的流物,连续进行试验半年,食用期间和试验结束后,分别对8个试验小组检测各实验队和各对比队的患者的总胆固醇值,测试结果分别如表2所示:

从表2可以看出,在8个试验小组中,对比队的共40人中,经服用阿西莫司进行调节血脂治疗半年,总胆固醇值出现下降但依然大于该年龄段正常值160mg/dL,而试验队的共40人中的总胆固醇值接近该年龄段正常值160mg/dL,基本达到了调节血脂的目的。
同时,实验过程中,在8个试验小组中实验队的40名患者普遍感觉,随着食用时间的增加,身体状况也有了很大提高,整个人都精神焕发了起来,而且还能明显地感觉到身体免疫能力的提高,即使在感冒流行的季节也没有再患过感冒。同时,食欲有所增加,肠胃的蠕动功能增强,没有出现大便干结等便秘现象。
由以上可见,本发明具有较高的食用保健价值,能提高机体免疫力,使人体保持健康状态。

Claims (4)
1.一种杂粮粉,其特征在于,它包括下述质量份的原料:大米10~50份、黄米5~10份、黑米5~10份、燕麦片5~10份、玉米5~10份、红小豆5~8份、绿豆8~12份、红枣5~9份、花生2~4份、薏仁米6~10份、枸杞子3~4份、山药2~6份、百合1~4份、核桃仁1~2份。
2.根据权利要求1所述的杂粮粉,其特征在于,它包括下述质量份的原料:大米15~45份、黄米7~9份、黑米6~9.5份、燕麦片7.5~9份、玉米5.5~9份、红小豆6.5~7.5份、绿豆8.6~11份、红枣6~8份、花生2.5~3.5份、薏仁米7~8.5份、枸杞子3.5~4份、山药3~4.5份、百合2~3份、核桃仁1~1.8份。
3.根据权利要求2所述的杂粮粉,其特征在于,它包括下述质量份的原料:大米20~38份、黄米7.5~8.7份、黑米7~9份、燕麦片8~8.5份、玉米6~8.5份、红小豆7~7.5份、绿豆9~10.8份、红枣7~8份、花生3~3.5份、薏仁米7.5~8份、枸杞子3.5~3.8份、山药3.5~4份、百合2.5~3份、核桃仁1~1.5份。
4.一种杂粮粉的制备方法,其步骤包括:按照权利要求1~3任一项所述的质量份,将红小豆、绿豆、薏仁米、燕麦片、山药、百合、玉米、黑米依次进行混合、闷煮、干燥、研磨处理制得混合豆粉;将大米和黄米进行混合、膨化、粉碎处理制得膨化混合米粉;将红枣去核后与枸杞子、花生、核桃仁混合并经烘干处理后进行研磨制得果蔬粉;最后将所述混合豆粉、所述混合米粉和所述果蔬粉进行混合、灭菌处理制得杂粮粉。
