背景技术
当前,随着社会发展,科技进步,人民的生活水平和生活质量得到很大的提高,人们对养生保健,延长寿命提出了更高的要求。随着生活水平的提高,工作节奏的加快,保健食品越来越受到人们的关注。目前,市场上销售的保健品很多,有从海洋植物和动物提取的氨基酸、蛋白质等物质,延缓器官老化,提高免疫力;也有从陆地植物和动物中提取的,对人体有益的营养成分,祛病健体;上述方法得到的保健品价格比较昂贵,普通老百姓消费不起。
目前,世界卫生组织(WHO)经过三年的研究和评选,评出六大最健康食品。评选出的最健康食品包括最佳蔬菜、最佳水果、最佳肉食、最佳食油、最佳汤食、最佳护脑食品六类,红薯被列为十三种最佳蔬菜的冠军。专家表示,红薯不但营养均衡,而且具有鲜为人知的防止亚健康、减肥、健美和抗癌等作用。红薯,拉丁名【sweetpotato】又称地瓜、白薯、甘薯、番薯、红苕等,为旋花科一年生植物,是一种药食兼用的健康食品,红薯含有膳食纤维、胡萝卜素、维生素A、B、C、E以及钾、铁、铜、硒、钙等十余种微量元素,营养价值很高,被营养学家们称为营养最均衡的保健食品,很多爱美的女孩子感觉红薯很香甜,怕吃多了会发胖。北京中医药大学养生室张湖德教授说,吃红薯不仅不会发胖,相反能够减肥、健美、防止亚健康、通便排毒,每一百克鲜红薯仅含0.2克脂肪,产生九十九千卡热能,大概为大米三分之一,是很好的低脂肪、低热能食品,同时又能有效地阻止糖类变为脂肪,有利于减肥、健美。红薯含有大量膳食纤维,在肠道内无法被消化吸收,能刺激肠道,增强蠕动,通便排毒,尤其对老年性便秘有较好的疗效。张湖德特别强调,红薯属碱性食品,和很多水果、绿色蔬菜一样,这是最难得的,一般食物都是酸性的,而人体的pH值为7.34,所以吃红薯有利于人体的酸碱平衡,同时吃红薯能降低血胆固醇,防止亚健康和心脑血管病等现代病。中医研究院广安门医院肿瘤科主任、全国中医肿瘤医疗中心副主任林洪生教授说,红薯不仅营养丰富,而且居于抗癌食物的首位,对此文献资料中有很多介绍。日本国家癌症研究中心公布的二十种抗癌蔬菜的排行榜中,红薯名列榜首。且日本医生通过对二十六万人的饮食调查发现,熟红薯的抑癌率高于生红薯。我国医学工作者曾对广西西部的百岁老人之乡进行调查后发现,长寿老人有一个共同的特点,就是习惯每日食红薯,甚至将其作为主食。关于红薯抗癌的机理,尚不十分清楚,有许多种说法。美国费城医院从红薯中提取出一种活性物质——去雄酮,它能有效地抑制结肠癌和乳腺癌的发生;还有一所美国大学研究发现,红薯中有—种叫脱氢表雄酮的物质,对防治癌症有—定的效果。北京中医药大学养生室张湖德教授认为,红薯具有一定的抗癌效果,但对红薯抗癌的本事不能夸大,要辨证看待,因为其机理尚未完全清楚,红薯的最大功效还应放在减肥、健美、防止亚健康、通便排毒等方面。关于抗癌功效,中医理论认为,是由于其通便排毒,能起到减少人体内垃圾、毒素积存的作用。对此,中国军事医学科学院肿瘤中心主任、全军肿瘤专业委员会副主任委员宋三泰教授也认为,对于红薯抗癌的机理和原因等还没有做过科学的实验,理论上推测,它含有丰富的膳食纤维,润肠通便,治疗便秘,对预防结肠癌等癌症有益。正确吃红薯也有讲究,要注意一定要蒸熟煮透,因为红薯中淀粉的细胞膜不经高温破坏,难以消化,且红薯中的酶类不经高温破坏,吃后会产生不适感;食用红薯过量或不合理时,会引起腹胀、烧心、泛酸、胃疼等,所以食用不宜过量,中医诊断中的湿阻脾胃、气滞食积者应慎食。据《本草纲目》、《本草纲目拾遗》等古代文献记载,红薯有补虚乏、益气力、健脾胃、强肾阴的功效,使人长寿少疾。红薯还能补中、和血、暖胃、肥五脏等。当代《中华本草》说其味甘,性平。归脾、肾经。能补中和血、益气生津、宽肠胃、通便秘。主治脾虚水肿、疮疡肿毒、肠燥便秘。
红薯中含有多种人体需要的营养物质。每500克红薯约可产热能635千卡,含蛋白质11.5克、糖14.5克、脂肪1克、磷100毫克、钙90毫克、铁2克,胡萝卜素0.5毫克,另含有维生B1、B2、C与尼克酸、亚油酸等。其中维生素B1、B2的含量分别比大米高6倍和3倍。特别是红薯含有丰富的赖氨酸,而大米、面粉恰恰缺乏赖氨酸。吃红薯会不会使人发胖。根据科学研究,吃红薯是不会使人发胖的,相反红薯还是一种理想的减肥食品。它的含热量非常低,比一般米饭低得多,所以吃了之后不必担心会发胖,反而可起到减肥作用。红薯中还含有一种类似雌性激素的物质,对保护人体皮肤,延缓衰老有一定的作用。
红薯具有抗癌作用,饮食中最具有抗癌作用的营养物质是β-胡萝卜素(维生素A前体)、维生素C和叶酸,而在红薯中三者含量都比较丰富。一个小红薯(约2两重)可提供2倍量的人体每天所需维生素A、三分之一量的每天所需维生素C和约50微克的叶酸;其中膳食纤维的含量高于一碗燕麦粥。β-胡萝卜素和维生素C的抗氧化作用有助于抵抗氧化应激对遗传物质脱氧核糖核酸(DNA)的损伤,起一定的抗癌作用。常吃红薯有助于维持人体的正常叶酸水平,体内叶酸含量过低会增加得癌症的风险。红薯中高含量的膳食纤维有促进胃肠蠕动、预防便秘和结肠直肠癌的作用。
红薯有益于心脏,红薯富含钾、β-胡萝卜素、叶酸、维生素C和维生素B6,这5种成分均有助于预防心血管疾病。钾有助于人体细胞液体和电解质平衡,维持正常血压和心脏功能。β-胡萝卜素和维生素C有抗脂质氧化、预防动脉粥样硬化的作用。补充叶酸和维生素B6有助于降低血液中高半胱氨酸水平,后者可损伤动脉血管,是心血管疾病的独立危险因素。
红薯预防肺气肿,美国堪萨斯大学一项动物实验发现,吸烟的大鼠体内维生素A水平较低,容易发生肺气肿;而进食富含维生素A食物的吸烟大鼠则肺气肿发病率明显降低。一些长期吸烟者活到90岁以上但没有发生肺气肿,可能与他们日常饮食中维生素A含量丰富有关。研究人员建议那些吸烟者或被动吸烟者最好每天吃一些富含维生素A的食物如红薯,以预防肺气肿。
红薯有抗糖尿病作用,日本的研究人员发现糖尿病肥胖大鼠在进食白皮红薯4周、6周后血液中胰岛素水平分别降低了26%、60%;并发现红薯可有效抑制糖尿病肥胖大鼠口服葡萄糖后血糖水平的升高;进食红薯也可以降低糖尿病大鼠甘油三酯和游离脂肪酸的水平。研究提示红薯有一定的抗糖尿病作用。奥地利维也纳大学的一项临床研究发现,2型糖尿病患者在服用白皮红薯提取物后,其胰岛素敏感性得到改善,有助于控制血糖。
红薯已被营养学家当作一种药食兼用,营养均衡的食品,它的热量只有同等重量大米所产生热量的三分之一,而且几乎不含脂肪和胆固醇。常吃红薯有益于人体健康,并有一定减肥功效。中医理论认为,红薯味甘,性平。具有排便通畅,补脾益气,宽肠通便、生津止渴(生用)等功效,能防治乳腺癌,结肠癌,便秘,适于脾虚气弱,大便秘结;肺胃有热,口渴咽干等人群。由于天然无任何毒副作用,一般人群皆可食用。
粥在中国有四千年的历史,最初只是当做食物,后来又发展了药用的功效,现在粥已经是人们日常生活中不可缺少的食品,也更注重粥的保健功效,目前,市售的粥很少具有健胃养生的保健功效,口味过甜,营养不均衡,不能满足人们对营养和保健的需求,针对上述弊端,本发明选择多种健胃养生食物作为原料,研制出一种健胃养生粥。
发明内容
本发明的目的是提供一种健胃养生红薯粥产品,由红薯、红米、红豆、芡实和蜂蜜为原料,科学合理的搭配,使其具有良好的健胃养生功能,以具有补脾益气、宽肠通便功能的红薯为主要原料,配上具有延缓衰老、改善缺铁性贫血、降低血压、抑制癌细胞功能的红米,加上具有清热解毒、健脾益胃、利尿消肿、通气除烦等功能的红豆,再加上具有补脾止泻、益肾固精、祛湿止带等功能的芡实,以具有滋阴润燥、补虚润肺、解毒、调和诸药作用的蜂蜜增加风味。
为实现上述目的,本发明采用如下的配方及制作方法:
一种健胃养生红薯粥产品,按照重量份数计,包括如下原料:
红薯60-80份;
红米8-12份;
红豆7-11份;
芡实6-10份;
蜂蜜9-12份;
水160-210份。
制作方法如下:
步骤1:将新鲜红薯洗净,去皮,切丁至体积为1-2cm3的红薯丁,备用;
步骤2:将红豆加适量水浸泡20-30分钟后,煮沸,保持沸腾15-20分钟,备用;
步骤3:将芡实加适量水浸泡20-30分钟后,煮沸,保持沸腾30-50分钟,备用;
步骤4:将步骤1、2、3的物料混合,加入红米,煮沸10-15分钟后,加入蜂蜜搅拌均匀,按250ml/罐分装,封盖,于121℃热压灭菌20-30分钟,得到产品。
上述所说的红米,是稻米的一种,米的表皮呈红色。红米含有丰富的淀粉与植物蛋白质,可补充消耗的体力及维持身体正常体温。它富含众多的营养素,其中以铁质最为丰富,故有补血及预防贫血的功能。而其内含丰富的磷,维生素A、B群,则能改善营养不良、夜盲症和脚气病等毛病;又能有效舒缓疲劳、精神不振和失眠等症状。所含的泛酸、维生素E、谷胱甘滕胺酸等物质,则有抑制致癌物质的作用,尤其对预防结肠癌的作用更是明显。红米米色粉红,糯性,米粒特长,有香气,含有不同的微量元素,实验证明,红米具有升高血浆高密度脂蛋白胆固醇(HDL),提高机体抗氧化能力的作用,对防动脉粥样硬化(AS)和其它慢性病也具有重要意义。这对通过正常饮食途径提高体内的抗氧化水平,防治因氧化状态升高引起的慢性病有着重要的价值。红米具有延缓衰老、改善缺铁性贫血、降低血压、抑制癌细胞的功能。近年来,通过动物实验和临床试验,初步证明红米等特种稻米具有清除自由基、延缓衰老、改善缺铁性贫血、抗应激反应以及免疫调节等多种生理功能。
上述红豆,拉丁名【Vignaangularis(Willd.)OhwietOhashi】,性平偏凉,味甘,含有蛋白质、脂肪、糖类、维生素B族、钾、铁、磷等。清热解毒、健脾益胃、利尿消肿、通气除烦等,可治疗小便不利、脾虚水肿、脚气等症。红豆的功能与作用:红豆能促进心脏血管的活化,利尿;有怕冷、低血压、容易疲倦等现象的人,常吃红豆可改善这些不适的现象。另外,红豆还有健胃生津、祛湿益气的作用,是良好的药用和健康食品。红豆更是女性健康的好朋友,丰富的铁质能让人气色红润。多摄取红豆,还有补血、促进血液循环、强化体力、增强抵抗力的效果。哺乳期妇女多食红豆,可促进乳汁的分泌。多食红豆对身体大有裨益。
上述芡实,拉丁名【Euryaleferox】,含有丰富的淀粉,可为人体提供热能,并含有多种维生素和碳物质,保证体内营养所需成分。芡实和莲子功能相仿,而其收敛镇静作用比莲子更强。芡实性味甘、涩、平。归脾、肾经。有补脾止泻、益肾固精、祛湿止带等功能。用于梦遗滑精,遗尿尿频,脾虚久泻,白浊,带下。适宜白带多、肾亏腰脊背酸的妇女、体虚尿多的儿童、小便频数的老人、遗精早泻者、慢性腹泻者、慢性肠炎者。
上述蜂蜜,拉丁名【MEL】,味甘、性平,归脾、肺、心、胃、大肠经。具有滋阴润燥、补虚润肺、解毒、调和诸药的作用。常用于肺燥咳嗽、体虚、肠燥便秘、口疮、水火烫伤、胃脘疼痛,还可以解乌头、附子之毒。蜂蜜中含有果糖、葡萄糖、酶、蛋白质、维生素及多种矿物质。常吃可以防治贫血、心脏病、肠胃病等,并能提高人体免疫力。蜂蜜是被广泛认知的天然营养食品。试验表明,蜂蜜中含有与人体血清浓度相似的各种无机盐,如铁、钙、铜、锰、钾、磷等,还有多种维生素和有机酸,因此蜂蜜被称为“血清之王”。蜂蜜中含有花粉粒,经常喝蜂蜜会对花粉粒过敏产生一定的抵抗力:蜂蜜中含有极微量的毒性液体——蜂毒,也有一定的抗过敏作用,在临床上常被用于支气管炎、哮喘等过敏性疾病的治疗。每天食用一勺蜂蜜,就可以远离哮喘、瘙痒等过敏症状。

1、本发明的一种健胃养生红薯粥产品,营养成分非常丰富,富含有磷、钙、铁,β-胡萝卜素、维生素B1、B2、维生素C、尼克酸、亚油酸、赖氨酸和叶酸等,使其具有良好的健胃养生功能,还具有低热量、低脂肪的特点,经检验,每100g粥中仅含202KJ能量,每100g粥中仅含0.04g脂肪。
2、本发明的一种健胃养生红薯粥产品,由红薯、红米、红豆、芡实和蜂蜜为原料科学合理的搭配,使其具有良好的健胃养生功能,以具有补脾益气、宽肠通便功能的红薯为主要原料,配上具有延缓衰老、改善缺铁性贫血、降低血压、抑制癌细胞功能的红米,加上具有清热解毒、健脾益胃、利尿消肿、通气除烦等功能的红豆,再加上具有补脾止泻、益肾固精、祛湿止带等功能的芡实,以具有滋阴润燥、补虚润肺、解毒、调和诸药作用的蜂蜜增加风味。
3、本发明是将原材料利用适当温度慢慢熬制,保持原粮中的营养成分,有利于人体吸收,且营养价值高于传统的加工工艺,属于纯天然绿色食品。

一种健胃养生红薯粥产品,按照重量份数计,包括如下原料:
红薯60份;
红米8份;
红豆7份;
芡实6份;
蜂蜜9份;
水160份。
制作方法:
步骤1:将新鲜红薯洗净,去皮,切丁至体积为1-2cm3的红薯丁,备用;
步骤2:将红豆加适量水浸泡20-30分钟后,煮沸,保持沸腾15-20分钟,备用;
步骤3:将芡实加适量水浸泡20-30分钟后,煮沸,保持沸腾30-50分钟,备用;
步骤4:将步骤1、2、3的物料混合,加入红米,煮沸10-15分钟后,加入蜂蜜搅拌均匀,按250ml/罐分装,封盖,于121℃热压灭菌20-30分钟,得到产品。
