背景技术
食疗是我国饮食文化的精髓。由于不同疾病患者的消化吸收功能和代谢特点的差别,对营养素的需求存在较大差异,因此病人的膳食设计必须做到营养素的量化和个性化,才能达到既保证病人的营养,又能促进病人康复的目的。国内外大量询证医学证据证明,使用适合不同疾病的器官功能和代谢特点、经量化了营养素的膳食作为病人的膳食,在疾病的医疗特别是慢性病的控制方面具有重要作用。
研究资料显示。中国城市人口中消化不良症状发生率高达20%-54%,其发病率随年龄的增长而增加,50~59岁年龄段达到高峰。2009年3月10日,日内瓦--世界卫生组织(世卫组织)与全球各地专家进行了磋商,确定了腹泻病研究重点。在全球儿童死亡病例中,近20%的儿童死于腹泻病。研究问题清单的重点是如何最合理地使用目前可用的干预措施,以发挥最大效用,并最终尽可能多地拯救儿童生命。资料显示全世界每年有近200万儿童死于腹泻病。急需解决儿童腹泻病问题,否则全世界就无法实现到2015年将儿童死亡人数减少三分之二的千年期发展目标。
随着社会的进步与发展,人民的物质生活日益丰富。人们在饮食方面越来越注重营养的摄取,却又缺乏锻炼的情况导致越来越多的肠胃病患者出现,其中又以消化不良、腹泻为代表。
我国每年有1.6亿住院病人和4亿院外慢病患者,每年大约需要50亿份院内医疗膳食和4300亿院外慢性病医疗膳食。但我国相关关键技术缺乏,医疗膳食在我国尚未形成产业化,现有医疗膳食市场基本被国外产品占领,这些产品不符合中国人的口感和胃肠道适应性,需要食用特殊医疗膳食的患者只能食用普通膳食,致使我国住院的病人营养不良的发生率高达50%,慢病控制率低(如三高病人的平均控制率不足3%),并发症高,影响病人的康复,增加了病人的医疗负担。因此,开展医疗膳食关键技术及产品研究,建立国内医疗膳食的技术体系和产业链,对于改善住院病人的临床结局,提高慢性病的控制率,进而提高我国整体医疗水平,缓解群众看病贵,看病难等民生问题。有利于推动医疗服务从临床治疗向健康关爱前移,使其在疾病的医疗特别是慢性病的控制及大病恢复治疗方面发挥重要作用。缩短大病恢复期,提升全民的健康意识,真正体现“预防为主”、有效节约医疗资源、提高生命质量和幸福指数,具有积极意义。
在我国居民膳食结构发生速度变化与转型时期,这些营养过剩与营养失衡,有关“富贵病”对国民身体素质、劳动能力与社会生产率发展将会带来致命的影响,同时也蕴含着一个巨大的健康食品市场空间。解决人类健康问题最有效经济的办法还是要依靠我们食用的天然组分,而不是依靠昂贵的医药投入。因此、最大的挑战是找到合适的功能性食品配料并平衡的加入到我们每天的膳食之中。从而开发出适应市场需求和消费者喜爱的健康方便食品,既是当务之急又是我们食品研究工作者面临的一个重要挑战。
以前,食品的主要目的是为了吃饱、吃好。随着人们生活水平的提高,单纯的吃饱吃好已经不能满足其需求,当今社会的消费趋势逐渐进入享受消费阶段,享受消费阶段的重要特征就是需求日趋功能化,而营养健康是其大势所趋。
通过科学的现代加工工艺,既保留了传统食品中的营养成分,又能改变食品的生理活性功能,促进营养成分更合理、充分的利用,集保健、营养、医疗于一体,比传统食品更有效、更方便、更优越、更充分地利用资源,具有极大的经济实用价值和开发前景。
发明内容
本发明为了解决现代人饮食速度太快、吃得太油腻或吃得太多,以及因焦虚、紧张或抑郁、怀孕妇女、大量吸烟者、便秘者及肥胖者、或精神不愉快、长期闷闷不乐及突然受到猛烈的刺激,老年人消化功能减退等引起的消化不良、腹泻,使人感觉腹部难受,甚至肚腹疼痛的症状,提供了治疗消化不良、腹泻的食品。
本发明是由以下技术方案实现的,一种治疗消化不良、腹泻的食品,是由下列重量比例的原料组成:脱壳高粱米14~210份、莜麦6~90份、小黑豆4~60份、五味子2~30份。
优选配比为:脱壳高粱米21~140份、莜麦9~60份、小黑豆6~40份、五味子3~20份。
最佳营养效果的配比为:脱壳高粱米70份、莜麦30份、小黑豆20份、五味子10份。
具体制备方法为:脱壳高粱米200-240℃下在炒货机内炒制10-15分钟;黑豆在300-350℃下在炒货机内炒制10-15分钟;莜麦在200-240℃下在炒货机内炒制5-10分钟;分别冷却、磨成150-200目细粉;五味子除去杂质,在50-70℃干燥箱内干燥3-5小时后冷却,磨150-200目细粉,最后将所有原料的份料混合均匀后灌装即可。灌装30克/袋。炒制方法为本领域技术人员公知的炒制方法。
本发明所述的治疗消化不良、腹泻的食品中各组份的营养功效如下:
脱壳高粱米:味甘、性温、入脾、胃经、无毒,具有和胃、健脾、消积、温中、涩肠胃、止霍乱、止泻、补中益气的功效,可以治神疲无力,胃疼泛酸食积、消化不良、湿热、下痢和小便不利等病症。本发明所用的脱壳高粱米为高粱所研究的晋杂18号。
每100克脱壳高粱米中含蛋白质8.70克,脂肪2.21克,总淀粉75.82克,单宁0.99克,赖氨酸0.22克,蛋氨酸0.081克,热量为1525.7千焦耳。脱壳高粱米中含有单宁,有收敛固脱的作用,患有慢性腹泻的病人常食脱壳高粱米粥有明显疗效,但大便燥结者应少食或不食高粱。
莜麦:性味甘、温,具有补益脾胃、滑肠催肠、止虚汗和止血等功效。莜麦自古入药,莜麦含蛋白质15.6%,是大米的1倍多,比面粉高出三至四个百分点,含脂肪8.5%,是大米和面粉的数倍;含碳水化合物64.8%,比大米和面粉低10%左右;含纤维素2.1%,灰分2%,是一种低糖、高蛋白质、高脂肪、高能量食品。其营养成分含量高,质量优,蛋白质中的必需氨基酸在谷类粮食中平衡最好,赖氨酸和蛋氨酸含量比较理想,而大米和面粉中的这种氨基酸严重不足。又如必需脂肪酸的含量非常丰富,亚油酸占脂肪酸的三分之一以上,维生素和矿物质也很丰富。每百克含维生素B1590微克、维生素B2150微克、维生素B6160微克、尼克酸1000微克、矿物质1000微克、叶酸25微克、钙55毫克、钾335毫克、铁5毫克、锰5毫克、锌4毫克。特别是维生素B1居谷类粮食之首。
莜麦有很好的辅疗作用:由于亚油酸含量高,可降低人体血液中胆固醇,含有8种植物胆固醇,可防止肠道吸附胆固醇。淀粉分子比大米和面粉小,易消化吸收,含有果糖衍生的多糖,可被人体直接利用,可使高胆固醇的人,降低其低密度脂蛋白LDL胆固醇,升高其高密度脂蛋白HDL胆固醇。其高质量的膳食纤维,具有缓解结肠癌、糖尿病、便秘、静脉曲张、静脉炎等病患的功效。事实说明,莜麦含营养成分高,质量优,维生素和矿物质丰富,辅疗作用最多,因此,国际卫生组织把它正式列为推荐的保健食品。营养学家发现,莜麦还是预防动脉粥样硬化、高血压、冠心病的理想食物。它含丰富的亚油酸,占全部不饱和脂肪酸的35%~52%,所以有抑制胆固醇升高的作用。现代医学研究认为,莜麦不但能抑制老年斑的形成,而且具有延缓细胞衰老的作用,是老年人、冠心病患者优良的保健食品。对糖尿病、脂肪肝、便秘、浮肿等有辅助疗效,对中老年人增进体力、延年益寿大有裨益。
小黑豆:性味甘平,是一种清性滋养强壮食品,具有祛风除热、调和下气、活血、解毒、利尿、通乳及补血之功效。主治心肾脏器水肿、腮腺炎、痛肿脓血和乳汁不通等症。现代医学研究证明,黑豆含有皂甙类成分,具有通便、利尿和消肿作用,能解酒、解毒,对于肾脏病和心脏病,均有一定疗效。
小黑豆入药保健之效高于黄豆,突出的优点是蛋白质含量高、质量好,每百克高达45—50克。黑豆还含有丰富的不饱和脂肪酸、钙、磷、铁及胡萝卜素、B族维生素等。《名医别录》载,“炒黑豆热投酒中饮之,治风瘫痪口禁,产后头风。久食,好颜色,变白不老。”《本草纲目》说,“黑豆入肾功多,故能治水、消胀、下气、制风热而活血解毒。”它可用来煮汤、炖食、浸酒等。常食黑豆食品对健康有益。
五味子:性味酸、甘,温;归肺,心、肾经;收敛固涩,益气生津,补肾宁心;用于久嗽虚喘,梦遗滑精,遗尿尿频,久泻不止,自汗,盗汗,津伤口渴,短气脉虚,内热消渴,心悸失眠。
现代研究证明,五味子含有多种有机酸,如苹果酸、枸橼酸、酒石酸等。并含有挥发油、维生素C、五味子素及多量糖分等。动物试验显示,少量五味子能改善条件反射的活动性,提高大脑皮层的工作能力。同时可兴奋呼吸中枢,调节心脏血管系统病态生理机能及改善失常的血液循环。在血管运动中枢,特别在上述中枢被抑制时作用更为明显。所以五味子对于神经衰弱、心脏乏力、疲劳过度、全身衰弱等均有良好治疗功效,并且还能克制过度兴奋及降低血压;五味子并有兴奋子宫平滑肌、加强节律收缩的作用,故可增强产妇分娩能力。研究还表明,五味子种仁的乙醇提取物有明显降酶作用(而果肉的提取物和种仁经乙醇提取后再用水提出的制剂均无效,说明五味子降酶的成分在种仁的醇溶而水不溶的部分),对肝炎的恢复期转氨酶高而久不恢复者,有明显功效。研究还发现,五味子对金黄色葡萄球菌、肺炎球菌、伤寒杆菌和绿脓杆菌等有明显抗菌作用。还能增强视觉、听觉、皮肤感受器的感应性,可作为神经衰弱、精神分裂症以及催产和提高视力的治疗药物。研究发现,五味子能够增加抗肿瘤药在耐药肿瘤细胞中的蓄积,从而可增加疗效,以及能够抑制PGP的表达和显著增加ADR诱导肝癌BEL7402细胞发生凋亡的易感性等有关。
上述各组份混合后,利用不同植物所含的特殊功能成分和全部配方的综合协调作用,相互促进、相互作用提高功效。利用相互间营养成分、营养素量的互补及各自具有的独特的天然保健功能来满足人群对营养成分、营养素和保健功能的需求。
本发明所述非药物食品的有益成分有:蛋白质、粗纤维、碳水化合物、氨基酸、脂肪、淀粉、钙、磷、铁及胡萝卜素、B族维生素等。
本发明所含的蛋白质具有修补细胞与建造组织。构成体内所有的细胞和组织;维持细胞的正常功能与新陈代谢;形成酵素系统,维持正常的消化机能;制造血液的运送物质,维持身体的渗透压。参与酶的催化、荷尔蒙调节、氧气运载、肌肉收缩、身体免疫、身体支架和体液中。
本发明所含的粗纤维虽然不能供给热能和构成身体组织,但有促进胃肠蠕动及保持胃肠清洁的功能。粗纤维能加速食物残渣通过胃肠道的时间,增加排粪量。有人用加服粗纤维食物(如吃不削皮的完整苹果)进行实验观察,发现食物通过肠道的时间,较原来(未加服粗纤维食物前)缩短2-12小时,其排粪虽增加40%。因此,有人认为结肠癌是某种刺激物(或毒物)在结肠内停留时间过长所致。进而推想粪便停在肠内的时间愈短,诱发结肠癌的机会就可能愈少。为了证实这个推断,有人曾作过调查,发现结肠癌的发生率,是食肉为主(少食粗纤维)的地区,要高于多食粗纤维食物的地区。这个统计不能说明食谱过精会导致结肠癌,但是提倡多食粗纤维食物以预防结肠癌的推论是可取的。因为粗纤维能缩短食物通过肠道的时间和增加排粪量,又能起到稀释毒素的作用,所以粗纤维能够预防结肠癌,是有一定依据。粗纤维还可以治疗糖尿病。历来建议糖尿病患者,少食碳水化合物(糖),相对的多食蛋白质及脂肪,现在依靠食物粗纤维,使糖尿病患者可以食高碳水化合物、低脂肪和低蛋白质饮食。
现代营养学的研究表明,多吃粗纤维食物有4大好处:一是改善胃肠道功能,能够防治便秘、预防肠癌;二是改善血糖生成反应,降低餐后血糖含量,帮助治疗糖尿病;三是降低血浆中的胆固醇含量,防治高脂血症和心血管疾病;四是控制体重,减少肥胖病的发生。
本发明所含的碳水化合物的是机体重要物质的组成成分。人体的糖蛋白、核糖、脂肪等都有糖参与组成;糖蛋白是构成细胞膜的成分之一;核糖和脱氧核糖分别参与核酸RNA和DNA的构成,而DNA和RNA是机体主要的遗传信息载体;糖脂是构成神经组织和生物膜的主要成分。由此可见糖参与多种有机物质的构成,是构成人体必不可少的原料。除此之外,碳水化合物还有以下作用:1.1克碳水化合物可产生16.7KJ(4Kcal)能量。脑组织、心肌和骨骼肌的活动需要靠碳水化合物提供能量。2.构成一些重要生理物质。碳水化合物是细胞膜的糖蛋白、神经组织的糖脂以及传递遗传信息的脱氧核糖核酸(DNA)的重要组成成分。3.节约蛋白质:碳水化合物的摄入充足时,人体首先使用碳水化合物作为能量来源,从而避免将宝贵的蛋白质用来提供能量。4抗酮作用:脂肪代谢过程中必须有碳水化合物存在才能完全氧化而不产生酮体。酮体是酸性物质,血液中酮体浓度过高会发生酸中毒。5.糖原有保肝解毒作用:肝内糖原储备充足时,肝细胞对某些有毒的化学物质和各种致病微生物产生的毒素有较强的解毒能力。
本发明所含的脂肪是构成身体细胞、组织和生物活性的重要物质成分之一,脑神经、肝脏、肾脏等重要器官中含有很多脂肪。皮下脂肪组织有保持体温的作用;脂肪可作为身体备用“燃料”;具有调节生理机能、保护内脏器官、滋润皮肤、防震和溶解营养素的作用。有些不溶于水而只溶于脂类的维生素,只有在脂肪存在时才能被人体吸收利用。长期缺乏脂肪性成分,就容易引起人体维生素A、D的缺乏症,以致出现皮肤干燥,头发枯燥、脱落、及患夜盲症、干眼症等疾病。
本发明所含的钙是骨骼、牙齿及软组织的重要成分。要保持骨骼和牙齿的健康、神经的传输、肌肉收缩、血液凝固、荷尔蒙平衡都处在一个好的状态,钙不可缺乏。钙能帮助保护心脏和皮肤,减轻肌肉劳累和疼痛,保持体液酸碱平衡,减少肌肉痉挛。
本发明所含的钾,钾是钠的平衡剂。缺钾、钠和水分就会进入细胞,造成水肿,破坏细胞,使肌肉和结缔组织受到扩张和损害,也是肥胖的因素之一。钾可增进体内多种酵素的活动量,对肌肉的伸展发生很大的作用。没有钾食物中的葡萄糖不能转化成精力,也不能转化成肝糖储存起来,往往造成部分肢体麻痹。
本发明所含的维生素是维持人体生命活动必须的一类有机物质,也是保持人体健康的重要活性物质。是人和动物营养、生长所必需的某些少量有机化合物,对机体的新陈代谢、生长、发育、健康有极重要作用。如果长期缺乏某种维生素,就会引起生理机能障碍而发生某种疾病。
本发明具有和胃、健脾、消积、温中、涩肠胃、止泻、补中益气、祛风除热、调和下气、活血、解毒、补益脾胃、止虚汗和止血、收敛固脱,补肾宁心之功效;用于消化不良,腹泻,久嗽虚喘,久泻不止,自汗,盗汗,心悸失眠等病症。可以治神疲无力,胃疼泛酸食积、消化不良、腹泻等病症。可全面调节人体生理功能,补充营养,调节营养平衡。具有食用与促进健康两种功能。

本发明所述食品用于临床的情况如下:对116例患者(其中男52人、女38人、儿童26人)进行了口服试验食疗效果观测。一个疗程消化不良3—7天、腹泻5—10天,每日早晚各1次、每次1袋/30克。90%以上患者食用本产品后对消化不良、腹泻有着明显的食疗作用,同时对痔疮术后恢复有良好的作用。食疗效果见表1。

治疗方法:取脱壳高粱米70g、莜麦30g、小黑豆20g、五味子10g。脱壳高粱米200-240℃下在炒货机内炒制10-15分钟;黑豆在300-350℃下在炒货机内炒制10-15分钟;莜麦在200-240℃下在炒货机内炒制5-10分钟;分别冷却、磨成150-200目细粉;五味子除去杂质,在50-70℃干燥箱内干燥3-5小时后冷却,磨150-200目细粉,最后将所有原料的份料混合均匀后灌装即可。灌装30克/袋。
服用方式为口服,每天早晚各一次,每次30g,开水冲泡(静置5分钟后搅拌)饮服,一个疗程消化不良3—5天、腹泻5—7天后观察疗效。
典型病例:
1.张某,男62岁,山西省榆次人。消化不良,症状:每日午休睡觉起床后吐酸水、烧心、腹胀连续近3个月,很难受。2013年9月饮服本发明实施例2食品,一日两次,一次一袋,3天后症状消失,连续服用一周,未再发生上述症状。
2.王某,女,48岁,山西省榆次人,消化不良,症状:常年有上腹痛、腹胀、恶心、厌食等上腹不适症状,经常发生。2013年9月饮服本发明实施例2食品,一日两次,一次一袋,5天后症状消失,一年多来再没有发生过。
3.李某,女13岁,学生,山西省太谷人,消化不良,患者主述:由于饮食不节,多年吃零食而导致厌食,腹胀,上腹部不适而引起,上课情绪不稳定、夜间休息不好、注意力不集中、影响学习,间隔半月、有时20多天就发生此现象、已有一年多,2013年6月饮服本发明实施例2食品,一日两次,一次一袋,5天后症状消失,半年来每两个月服一周,一年多来再没有发生过。
4.赵某,女,51岁,山西省平遥人,消化不良,症状:神疲无力,膝盖酸软,入睡困难,休息不好,人很消瘦,已有多年。经血化验,红细胞下降,血色素8pg,2013年12月饮服本发明实施例2食品,一日两次,一次一袋,5天后症状消失,同时饮食剧增,复检血细胞恢复正常,随访至今未复发。
5.杨某,男,15岁,学生。山西省榆次人,腹泻病程1年。患者主述:常在排便前发生腹痛,排便次数多且急,粪便量少,便稀、不成形,令人非常难受,人很消瘦。中医确诊为脾虚腹泻,2013年8月饮服本发明实施例2食品,一日两次,一次一袋,7天后症状消失,随访至今未复发。
6.冯某,女,12岁,学生。山西省榆次人,腹泻病程2年。患者主述:在排便前经常发生,腹痛、腹胀,有时伴有胀气、恶心干呕。2014年3月饮服本发明实施例2食品,一日两次,一次一袋,7天后症状消失,随访至今未复发。
7.韦某,男,65岁,山西省榆次人,患痔疮40多年,2010年,进行痔疮手术后,大便次数增多,每天早起一次、饭后一次、午休后又得大便,心情很不好,腹泻病程达4年之久,结肠镜检提示为、慢性溃疡性结肠炎。2014年5月饮服本发明实施例2食品,一日两次,一次一袋,3天后大便次数减少为1次,7天后恢复正常,症状消失,后每两个月服本发明实施例2食品一周,随访至今未复发。
具体实施方式
以下结合实施例对本发明做进一步详细描述。
实施例1:一种治疗消化不良、腹泻的食品,由下列重量份的原料组成:脱壳高粱米21份、莜麦9份、小黑豆6份、五味子8份。制备方法为:将脱壳高粱米在220℃温度下在炒货机内炒制12分钟;黑豆在328℃温度下在炒货机内炒制13分钟;莜麦在220℃温度下在炒货机内炒制8分钟;分别冷却、磨180目细粉。五味子除去杂质,在60℃干燥箱内干燥4小时后冷却,磨180目细粉,最后将所有原料的份料混合后灌装30克/袋即可。本实施例所制备的食品,同样采用上述的服用方法进行临床试验,总有效率达95%。
实施例2:一种治疗消化不良、腹泻的食品,由下列重量份的原料组成:脱壳高粱米70份、莜麦30份、小黑豆20份、五味子10份。具体制备方法为:脱壳高粱米200℃下在炒货机内炒制10分钟;黑豆在300℃下在炒货机内炒制10分钟;莜麦在240℃下在炒货机内炒制10分钟;分别冷却、磨成200目细粉;五味子除去杂质,在70℃干燥箱内干燥5小时后冷却,磨200目细粉,最后将所有原料的份料混合均匀后灌装即可。
实施例3:一种治疗消化不良、腹泻的食品,由下列重量份的原料组成:脱壳高粱米140份、莜麦60份、小黑豆40份、五味子20份。具体制备方法为:脱壳高粱米240℃下在炒货机内炒制15分钟;黑豆在350℃下在炒货机内炒制15分钟;莜麦在200℃下在炒货机内炒制5分钟;分别冷却、磨成150目细粉;五味子除去杂质,在50℃干燥箱内干燥3小时后冷却,磨150目细粉,最后将所有原料的份料混合均匀后灌装即可。本实施例所制备的食品,同样采用上述的服用方法进行临床试验,总有效率达96.4%。
实施例4:一种治疗消化不良、腹泻的食品,由下列重量份的原料组成:脱壳高粱米14份、莜麦6份、小黑豆4份、五味子2份。制备方法同实施例1所述制备方法。本实施例所制备的食品,同样采用上述的服用方法进行临床试验,总有效率达93%。
实施例5:一种治疗消化不良、腹泻的食品,由下列重量份的原料组成:脱壳高粱米18份、莜麦8份、小黑豆5份、五味子5份。制备方法同实施例1所述制备方法。本实施例所制备的食品,同样采用上述的服用方法进行临床试验,总有效率达99%。
实施例6:一种治疗消化不良、腹泻的食品,由下列重量份的原料组成:脱壳高粱米180份、莜麦70份、小黑豆50份、五味子25份。制备方法同实施例1所述制备方法。本实施例所制备的食品,同样采用上述的服用方法进行临床试验,总有效率达97.5%。
实施例7:一种治疗消化不良、腹泻的食品,由下列重量份的原料组成:脱壳高粱米210份、莜麦90份、小黑豆60份、五味子30份。制备方法同实施例1所述制备方法。本实施例所制备的食品,同样采用上述的服用方法进行临床试验,总有效率达95.8%。

1.一种治疗消化不良、腹泻的食品,其特征在于:由下列重量份的原料组成:脱壳高粱米14~210份、莜麦6~90份、小黑豆4~60份、五味子2~30份。
2.根据权利要求1所述的一种治疗消化不良、腹泻的食品,其特征在于:由下列重量份的原料组成:脱壳高粱米21~140份、莜麦9~60份、小黑豆6~40份、五味子8~20份。
3.根据权利要求1所述的一种治疗消化不良、腹泻的食品,其特征在于:由下列重量份的原料组成:脱壳高粱米70份、莜麦30份、小黑豆20份、五味子10份。
4.根据权利要求1或2或3所述的一种治疗消化不良、腹泻的食品,其特征在于:具体制备方法为:脱壳高粱米200-240℃下在炒货机内炒制10-15分钟;黑豆在300-350℃下在炒货机内炒制10-15分钟;莜麦在200-240℃下在炒货机内炒制5-10分钟;分别冷却、磨成150-200目细粉;五味子除去杂质,在50-70℃干燥箱内干燥3-5小时后冷却,磨150-200目细粉,最后将所有原料的份料混合均匀后灌装即可。
5.根据权利要求4所述的一种治疗消化不良、腹泻的食品,其特征在于:灌装30克/袋。
