本发明涉及一种五谷杂粮粉及其制作方法,属于养生食品技术领域。本发明将各原料分为山药紫薯类、水溶淀粉类、菌类、植物类、果蔬类、非水溶植物类、油脂植物类及剩余料进行粉剂制作,根据每种食材自有特性单独加工成粉,最大限度的保留了原料中的小分子物质和营养成分。不但解决了水溶性和营养吸收率的问题,而且通过中药原理合理配比各粉料,苦甜结合、燥凉相辅。适用于各类人群:糖尿病人群、心脑血管病人群、减肥瘦身人群、美白养颜人群、增智乌发人群、解酒保肝人群等,把食疗养生从以前的简单五谷杂粮粉上升到配方精准、可快速吸收、口味醇香的药食同源炮制粉的全新高度。

背景技术
杂粮,是小品种薯类、豆类、小品种谷物等的总称,常见的杂粮有燕麦、高粱、谷子、玉米、小米、荞麦、薏仁、大麦、赤豆、豌豆、小扁豆、黄豆、芸豆、蚕豆、黑豆等。我国杂粮资源丰富、品种甚多,而且杂粮的营养价值丰富,其营养成分的比例比较符合人体的摄入需求,同时其独特的生理活性成分使其具有特殊的食疗功效,堪称食物中的养生珍品。
目前杂粮食品主要有以下几类:杂粮养生食品、杂粮面制品、杂粮休闲食品、杂粮饮料等,由于人们对于健康养生食品的需求日趋旺盛,因此目前有关杂粮养生食品的研究颇多,而传统的五谷杂粮粉在制作方法和配方上都存在明显缺陷,主要表现为:第一:简单研磨,缺乏科学性,口感差,有残渣,食后需漱口;第二:粗放配比,简单混合,一起研磨,没有充分发挥每种食材的特有属性,有些甚至食性相克;第三:保质期短,气味难闻,需用糖来掩盖异味,但是糖的大量摄入对人体有害;第四:水溶性差,营养吸收率低。
因此申请人对杂粮养生粉进行了深入研究,旨在提供一种食用方便,水溶性好且价格低廉的五谷杂粮粉。

本发明的目的是为了解决现有技术的不足,而提供一种五谷杂粮粉及其制作方法,该五谷杂粮粉配料合理、口感佳、香气醇厚、水溶性强、吸收率高且保质期长。

所述五谷杂粮粉的制作方法,包括以下步骤:
步骤一:将所述基础料和配伍料进行分类处理,分为以下几类:山药紫薯类、水溶淀粉类、菌类、植物类、果蔬类、非水溶植物类、油脂植物类及剩余料;
步骤二:山药紫薯类粉的制作:按照所述质量配比,将山药紫薯类物料分别经筛选、清洗、除水、切片、一次烘焙、一次破壁、熟化、二次破壁、二次烘焙、三次破壁、消毒和干燥,得山药紫薯类粉,备用;
步骤三:水溶淀粉类粉的制作:按照所述质量配比,将水溶淀粉类物料依次经筛选、清洗、净化、研磨、浸渍、烘干、破碎、混料、膨化、破壁、消毒、干燥,得水溶淀粉类粉,备用;
步骤四:菌类粉的制作:按照所述质量配比,将菌类物料依次经清洗、除核、水渍、水提、浓缩、浸膏、干燥、粉碎,得菌类粉,备用;

葛根、木瓜、魔芋粉、枸杞、茯苓、芡实、小麦胚、红芸豆、白扁豆、薏苡仁、糙米协同增效,能起到丰胸纤体,养颜嫩肤,预防和改善皮肤干燥的作用。

本发明与现有技术相比,其有益效果为:
(1)本发明将药物加工工艺与传统中草药炮制方法相结合,通过将药物加工中使用的喷雾干燥、水浴蒸煮工艺与食品加工中使用的双螺杆膨化、冻干工艺及多段恒温烘焙的工艺相结合,将每种原料单独加工炮制,并考虑每种原料的特殊性能采用不同的多道工序,将各原料加工成水溶性较好的颗粒状粉剂,按照各原料配比进行精密称量,并采用三维立体混料机进行混合,有效增加了五谷杂粮粉的水溶性。
(2)本发明原料的炮制方式主要为煎熬、蒸煮、烘焙、冻干、喷雾干燥、物理研磨等方式,通过多级处理使材料分子壁打开,进一步提高了原料的水溶性,可以有效提高人体对五谷杂粮粉的营养成分的吸收率,也使原料的口感更香醇。
(3)在具体生产时,将原料分为山药紫薯类、水溶淀粉类、菌类、植物类、果蔬类、非水溶植物类、油脂植物类及剩余料进行粉剂制作,根据每种食材自有特性单独加工成粉,最大限度的保留了植物多糖、有机酸、皂苷、酚类、氨基酸、多肽、鞣类、蛋白质、果胶、甾体、生物碱、纤维素酶等小分子物质和营养成分。不但解决了水溶性和营养吸收率的问题,而且通过中药原理合理配比各粉,苦甜结合、燥凉相辅。适用于各类人群:糖尿病人群、心脑血管病人群、减肥瘦身人群、美白养颜人群、增智乌发人群、解酒保肝人群等,把食疗养生从以前的简单五谷杂粮粉上升到配方精准、可快速吸收、口味醇香的药食同源炮制粉的全新高度。
(4)按照本发明的配方和工艺生产的五谷杂粮粉的保存时间可以延长至24~36个月。

干燥:将清洗后的经过筛热风除湿至含水率1~40%;
炒制:将干燥后的物料用翻炒机炒制5~60min;
研磨:将炒制后的物料研磨至10~100目;
提取:将研磨后的物料用乙醇浸渍,过滤取滤液;
浓缩:将滤液经鼓风干燥除去水分;
浸膏:将浓缩物加热除去水分至含水率0~90%,得浸膏;
干燥:将浸膏经喷雾干燥1~60s;
粉碎:将干燥后的物料粉碎至20~100目。
步骤九:将剩余料分别研磨至10~200目,后将上述各物料混合均匀,即得所述五谷杂粮粉。

按照上述工艺处理好所述原料后,再与其余剩余原料混合均匀,即得所述五谷杂粮粉;剩余原料在混合之前先分别研磨至10~200目。
对实施例1至3所得五谷杂粮粉分别进行检测,结果如下表8所示:

1.五谷杂粮粉,包括基础料和配伍料,其特征在于,所述基础料包括以下质量份的原料:山药6~223份,燕麦0~25份,胚芽米5~25份,玉米胚芽0~25份、麦芽糊精5~35份、植脂末5~50份、乙基麦芽酚0.1~5份、羧甲基纤维素钠0~10份、魔芋粉0~10份;

2.根据权利要求1所述的五谷杂粮粉,其特征在于,所述山药为铁棍山药、淮山药、佛手山药、紫玉山药、怀山药、灵芝山药及菜山药中的至少一种。
3.根据权利要求1所述的五谷杂粮粉,其特征在于,所述山药包括以下质量份的原料:铁棍山药3~38份,淮山药3~40份,佛手山药0~35份,紫玉山药0~25份,怀山药0~35份,灵芝山药0~50份。
4.权利要求1所述的五谷杂粮粉的制作方法,其特征在于,包括以下步骤:
步骤一:将所述基础料和配伍料进行分类处理,分为以下几类:山药紫薯类、水溶淀粉类、菌类、植物类、果蔬类、非水溶植物类、油脂植物类及剩余料;
步骤二:山药紫薯类粉的制作:按照所述质量配比,将山药紫薯类物料分别经筛选、清洗、除水、切片、一次烘焙、一次破壁、熟化、二次破壁、二次烘焙、三次破壁、消毒和干燥,得山药紫薯类粉,备用;
步骤三:水溶淀粉类粉的制作:按照所述质量配比,将水溶淀粉类物料依次经筛选、清洗、净化、研磨、浸渍、烘干、破碎、混料、膨化、破壁、消毒、干燥,得水溶淀粉类粉,备用;
步骤四:菌类粉的制作:按照所述质量配比,将菌类物料依次经清洗、除核、水渍、水提、浓缩、浸膏、干燥、粉碎,得菌类粉,备用;
步骤五:植物类粉的制作:按照所述质量配比,将植物类物料依次经清洗、浸渍、水提、浓缩、浸膏、烘干、破碎,得植物类粉,备用;
步骤六:果蔬类粉的制作:按照所述质量配比,将果蔬类物料依次经清洗、除核、切碎、干燥、破碎,得果蔬类粉,备用;
步骤七:非水溶植物粉的制作:按照所述质量配比,将非水溶植物类物料依次经清洗、除核、除湿、提取、浓缩、浸膏、干燥、粉碎,得非水溶植物粉,备用;
步骤八:油脂植物类的制作:按照所述质量配比,将油脂植物类物料依次经清洗、干燥、炒制、研磨、提取、浓缩、浸膏、干燥、粉碎,得油脂植物粉,备用;
步骤九:将剩余料分别研磨至10~200目,后将上述各物料混合均匀,即得所述五谷杂粮粉。
5.根据权利要求4所述的五谷杂粮粉的制作方法,其特征在于,步骤二中所述筛选、清洗、除水、切片、一次烘焙、一次破壁、熟化、二次破壁、二次烘焙、三次破壁、消毒和干燥具体如下:
筛选:去除山药紫薯类物料霉变、虫蛀、挤压、冻伤变软部分,用竹刀或硬木刀片从变坏处外延一厘米剔除;
清洗:将经过筛选后的物料人工流水清洗并剃毛,清洗时间5min;或采用橡胶软轮滚筒流水清洗3min;
除水:将清洗后的物料采用8米3段热风除湿机,速比1:5~50,烘7min;
切片:将除水后的物料切片厚度为1~8mm;
一次烘焙:将切片后的物料经红外空气循环除湿,温度55~95℃,烘至含水率为3~15%;
一次破壁:将一次烘焙后的物料粉碎至20~150目;
熟化:将一次破壁后的物料进行熟化;
二次破壁:将熟化后的物料进行研磨;
二次烘焙:将二次破壁后的物料再次除湿干燥;
三次破壁:将二次烘焙后的物料粉碎至20~100目;
消毒:将三次破壁后的物料进行消毒;
干燥:将经消毒后的物料除湿至含水率1%~15%。
6.根据权利要求5所述的五谷杂粮粉的制作方法,其特征在于,步骤二中所述一次破壁具体为采用直接投料式粉碎机或不锈钢低温磨粉机粉碎20~150目;
步骤二中所述熟化具体为:将经一次破壁后的物料经双螺杆挤压膨化,温度95~195℃,时间0.1~1s;或将经一次破壁后的物料经500升水浴蒸煮,温度60~120℃,时间20min;
步骤二中所述二次破壁具体为:将熟化后的物料经水冷低温空气分离式磨粉机研磨或经胶体磨研磨成浆;
步骤二中所述二次烘焙具体为将二次破壁后的物料经除湿机悬浮除湿2min或经喷雾干燥1~60s;
步骤二中所述三次破壁具体为将二次烘焙后的物料经不锈钢破碎机粉碎至20~100目。
7.根据权利要求4所述的五谷杂粮粉的制作方法,其特征在于,步骤三中所述筛选、清洗、净化、研磨、浸渍、烘干、破碎、混料、膨化、破壁、消毒、干燥具体如下:
筛选:去除水溶淀粉类物料中的砂石杂质,并用皮带输送进行人工抽查;
清洗:将筛选后的物料滚动清洗1~10min;
净化:将清洗后的物料经热风筛震除湿1~40%或经清水浸泡1~5h或于40~80℃下烘干;
研磨:将净化后的物料经不锈钢磨粉机研磨至10~100目或经100℃湿蒸5~30min或于40~80℃下烘干;
浸渍:将研磨后的物料经清水搅拌均匀成糊状,室温静置1~10h或经胶体磨研磨成浆或经水煎2~60min;
烘干:将浸渍后的物料经鼓风干燥箱于100~200℃下干燥至含水率3~20%或经100~200℃干炒5~30min或经风冷至室温;
破碎:将烘干后的物料经齿爪式破碎机破碎至10~100目或经不锈钢低温磨粉机磨至20~150目;
混料:将破碎后的水溶淀粉类中的各物料混合均匀;
膨化:将混料后的物料于95~195℃下挤压膨化0.1~1s;
破壁:将膨化后的物料经不锈钢破碎机粉碎至20~100目;
消毒:将破壁后的物料进行消毒;
干燥:将消毒后的物料除湿至含水率1%~15%。
8.根据权利要求4所述的五谷杂粮粉的制作方法,其特征在于,步骤四中所述清洗、除核、水渍、水提、浓缩、浸膏、干燥、粉碎具体如下:
清洗:将菌类物料经循环水振动清洗;
除核:将清洗后的物料经胶轮挤压破碎、过滤除核及固体杂质;
水渍:将除核后的物料经净水静置1~5h;
水提:将经水渍后的物料于100~120℃下蒸煮2~30min,取提取液;
浓缩:将提取液浓缩除去10~90%水分;
浸膏:将浓缩物经热风干燥至粘度达到2000~5000mpa·s,得浸膏;
干燥:将浸膏经喷雾干燥1~60s;
粉碎:将干燥后的物料粉碎至20~100目。
9.根据权利要求4所述的五谷杂粮粉的制作方法,其特征在于,步骤五中所述清洗、浸渍、水提、浓缩、浸膏、烘干、破碎具体如下:
清洗:将植物类物料经循环水振动清洗;
浸渍:将清洗后的物料用清水浸泡1~60min;
水提:将浸渍后的物料于100~120℃下蒸煮2~60min,取提取液;
浓缩:将提取液浓缩除去10~90%水分;
浸膏:将浓缩物经热风干燥至粘度达到2000~5000 mpa.s,得浸膏;
烘干:将浸膏经喷雾干燥1~60s;
破碎:将干燥后的物料粉碎至20~100目;
步骤六中所述清洗、除核、切片、干燥、破碎具体如下:
清洗:将果蔬物料经循环水振动清洗;
除核:将清洗后的物料去除果核及杂质;
切碎:将除核后的物料切成片状、条段状或方丁状;
干燥:将切碎后的物料于-50~0℃下冷冻干燥至含水率0.1~10%;
破碎:将干燥后的物料研磨至20~500目;
步骤七中所述清洗、除核、除湿、提取、浓缩、浸膏、干燥、粉碎具体如下:
清洗:将非水溶植物类物料经循环水振动清洗;
除核:将清洗后的物料经胶轮挤压破碎、过滤除核及固体杂质;
除湿:将除核后的物料经过筛热风除湿至含水率1~40%;
提取:将除湿后的物料用乙醇浸渍,过滤取滤液;
浓缩:将提取得到的滤液加热浓缩;
浸膏:将浓缩物继续加热蒸发除去水分至含水率为0~90%,得浸膏;
干燥:将浸膏经喷雾干燥1~60s;
粉碎:将干燥后的物料粉碎至20~100目;
步骤八中所述清洗、干燥、炒制、研磨、提取、浓缩、浸膏、干燥、粉碎具体如下:
清洗:将油脂植物类物料经循环水振动清洗;
干燥:将清洗后的经过筛热风除湿至含水率1~40%;
炒制:将干燥后的物料用翻炒机炒制5~60min;
研磨:将炒制后的物料研磨至10~100目;
提取:将研磨后的物料用乙醇浸渍,过滤取滤液;
浓缩:将滤液经鼓风干燥除去水分;

干燥:将浸膏经喷雾干燥1~60s;
粉碎:将干燥后的物料粉碎至20~100目。
10.根据权利要求4所述的五谷杂粮粉的制作方法,其特征在于,步骤一中所述山药紫薯类包括淮山药、铁棍山药、怀山药、佛手山药、紫玉山药、灵芝山药、菜山药、紫薯;
所述水溶淀粉类包括燕麦、麦芽、胚芽米、糙米、胚芽玉米、小米、黑米、红米、大麦、大麦仁、小麦、小麦胚、糯米、珍珠米、赤小豆、红豆、芡实、莲子、大豆、绿豆、黑豆、鹰嘴豆、豌豆、豇豆、红芸豆、白扁豆、桃仁、杏仁、茯苓、薏苡仁、高粱、荞麦、黑麦、白果;
所述菌类包括猴头菇、香菇、银耳、百合、黑枣、大枣、红枣;
所述植物类包括人参、阿胶、葛根、蛹虫草、绿茶、荷叶、甘草、槐米、蒲公英、玫瑰花、菊花、金银花、罗汉果、薄荷、陈皮、马齿笕;
所述果蔬类包括葡萄干、柠檬干、猕猴桃干、樱桃干、桑葚、覆盆子、乌梅、桂圆、沙棘、胡萝卜、苹果干、雪梨、枸杞、木瓜、芹菜、苦瓜、南瓜、秋葵;
所述非水溶植物类包括肉桂、山楂、郁李仁、火麻仁、黄精、栀子、香橼、白芷、鸡内金、姜黄、草果、山奈、佘甘子、益智仁、罗汉果;
所述油脂植物类包括核桃、黑芝麻、花生、南瓜仁、葵花籽、板栗、松花粉。
