技术领域
本发明涉及一种代餐粉食品,尤其是涉及含菊粉的一种高膳食纤维营养代餐粉及其加工方法。
背景技术
随着生活水平提高和饮食结构改变,人们越来越追求美味享受,逐渐忽略了膳食营养结构的合理性,如动物性食品摄入增多而膳食纤维摄入减少、脂肪摄入增多而必需脂肪酸摄入不足、含有各种添加剂高热量的零食食用增多而天然粗粮摄入减少等等。相应地,导致了机体营养结构不均衡现象增多、出现各种代谢功能紊乱和不适应病症,如肥胖、便秘、“三高”、心血管疾病、糖尿病甚至癌症,其中,肥胖和便秘症状对工作生活影响极为明显。第四届同济大学十院内分泌代谢国际论坛与会专家指出,最近一次覆盖全国10万人的流行病学调查显示,18岁及以上的成年人中,超重比例达到30.6%,肥胖则占到12%,且呈现不断增长态势。据调查,亚洲人群的便秘患病率约为14%,并且随年龄的增长而升高,可达20%以上。无论是长期肥胖还是便秘,同时还会增加心血管疾病、糖尿病和癌症等其它多种疾病的患病风险。因此通过优化饮食结构合理增加膳食纤维和必需脂肪酸摄取、均衡营养对预防和改善肥胖、便秘症状、维持身体健康和提高生活质量将具有重要意义。
目前针对补充膳食纤维和必需脂肪酸等营养素预防调理肥胖和便秘症状,较多地采取补充含有对应的一种或者多种营养素的保健品,这种方式对暂时缓解因缺乏某一种营养素而引起的症状有一定作用,但往往会顾此失彼,导致其它营养素的补充不足,甚至出现因为缺乏科学指导而过量补充,反而出现负面反应,因此无法作为长期补充营养素策略。随着专业人士对膳食营养与健康的进一步研究,通过代餐膳食补充营养素的策略,也已逐渐受关注。中国专利CN201110038119.4(公开号102160573A)公布了一种代餐奶昔及其制备方法,其制作成糊状产品,较不利于工业化生产和货架期保存;同时添加了较多非普通食品用的中药添加剂。
中国专利CN201410117382.6(公开号103844267A)申请了一种膳食纤维代餐粉,其成分:魔芋胶、燕麦纤维、柑橘纤维、花生蛋白、酪蛋白糖聚肽,营养成分主要为膳食纤维和蛋白,相对单一,无法满足人体所需营养素。
中国专利CN201210189697.2(公开号102687884A)公布了制作液体蔬菜汁配料方法,能够较好补充蔬菜中的膳食纤维、维生素和矿物质,但是在饱腹代餐方面和全面营养素的补充方面明显不足,因此并不能作为正餐代餐食用。
中国专利CN201010622507.2(公开号102106498A)提供了一种减肥代餐粉,其主要以功能成分组成:蛋白质类物质、功能性糖份、水溶性谷物类膳食纤维、水溶性水果类膳食纤维、水溶性蔬菜类膳食纤维、维生素包、矿物质包和香料。虽然涵盖营养素种类较多,但是其营养素仍然未能兼顾人体必需脂肪酸和谷物的其它营养素。
中国专利CN 200710202900.4(公开号101449838A)提供了一种可以有效延长菊产品的货架期的方法。
中国专利CN 201110458931.2(公开号103181525A)将燕麦和菊按比例混合而制备成燕麦片,口味和营养成分相对单一。
综合分析市场上产品和相关专利技术可以发现,这些产品在营养素的全面性方面,特别是人体必需脂肪酸、必需氨基酸、膳食纤维含量等方面较少兼顾,特别是减肥和便秘人群代餐方面的考虑存在不足。此外,有些在产品的加工储运保存、食用方便性和口味多样性方面也有一定的不足。
发明内容
本发明是针对以上不足,提供含多不饱和脂肪酸、营养丰富、口味多样、易于加工保存和食用的一种高膳食纤维的营养代餐粉及其加工方法。
所述高膳食纤维的营养代餐粉按质量比的原料组成为:菊粉3~30、谷物粉20~60、豆粉10~35、膳食纤维粉3~16、果蔬粉1~15。
所述菊粉可采用黄金菊粉。
所述谷物可选自糙米、黑米、红米、玉米、大米、小米、薏米、小麦、燕麦、荞麦等中的至少一种。
所述谷物还可使用全谷物。
所述豆可选自红豆、黑豆、黄豆、绿豆等中的至少一种。
所述膳食纤维可选自抗性糊精、小麦纤维、大麦纤维、魔芋纤维、燕麦纤维、苹果纤维、柑橘纤维、木瓜纤维、芹菜纤维等中的至少一种。
所述果蔬可选自菠萝、柠檬、香蕉、草莓、芒果、橙、橘、苹果、梨、芹菜、卷心菜、番茄、辣椒、黄瓜、桂圆、火龙果、红枣、核桃、杏仁等中的至少一种,可调配出各种不同口味的营养代餐粉。
所述高膳食纤维的营养代餐粉的原料配方中还可包括奶粉、蛋白粉、矿物质、维生素等中的至少一种,按质量比所述高膳食纤维的营养代餐粉按质量比的原料组成为:菊粉3~30、谷物粉20~60、豆粉10~35、膳食纤维粉3~16、果蔬粉1~15、奶粉1~30、蛋白粉1~30、矿物质0.1~1、维生素0.01~0.6。
所述高膳食纤维的营养代餐粉的加工方法如下:
将谷物和豆类分别经热风干燥熟化或者膨化熟化后,低温粉碎至80~100目,备用;将菊粉、膳食纤维粉、谷物粉、豆粉和果蔬粉分别干燥后,按比例进行复配,混合均匀;定量包装,即得营养代餐粉。
使用方法是:用温水冲泡调匀即可食用,每次食用量为15~40g。
所述菊,是亚麻的各种营养素精华所在,其营养丰富、营养价值之高是其它天然植物种子所无法比拟的。含有丰富d-亚麻酸、亚油酸,是优质的必需脂肪酸来源,同时还含有所有植物中含量最高的木酚素以及膳食纤维等物质,对预防心血管疾病、降低癌症发生率、防治糖尿病和动脉硬化、降低胆固醇、抗癌、润肠通便、健脑益智、增强体质等均有重要作用,被誉为21世界最佳的功能性食品。
所述菊粉,为菊使用低温冷磨工艺生产所得,能够较好保留其营养成分。
所述谷物粉和豆粉,可以互补提供人体所需的全部必需氨基酸与丰富的蛋白质、碳水化合物、维生素和矿物质等营养素。
所述膳食纤维粉,可大量吸附水分、促进肠道蠕动,有助于排便和清除毒素,增强水化机能。膳食纤维还具有降低血脂、血糖、预防肠癌等作用,也被称为第七类营养素。部分可溶性膳食纤维,是良好的益生元成分,为肠道有益菌提供养分,作为双歧因子,有效增殖有益菌,改善调理肠道微生态。

菊粉3、玉米35、小米20、黑豆26、小麦纤维2、柑橘纤维2、抗性糊精6、桂圆3、火龙果3
将谷物和豆类分别经热风干燥熟化或者膨化熟化后,低温粉碎至80~100目,备用;
将菊粉、膳食纤维粉、谷物粉、豆粉和果蔬粉分别干燥后,按比例进行复配,混合
均匀;
定量包装,即得营养代餐粉。

一种高膳食纤维的营养代餐粉,其组分按重量份为:
菊粉12、糙米20、红豆6、绿豆4、芹菜纤维16、苹果4、核桃3、芹菜2、香蕉3、奶粉30
将谷物和豆类分别经热风干燥熟化或者膨化熟化后,低温粉碎至80~100目,备用;
将菊粉、膳食纤维粉、谷物粉、豆粉、果蔬粉和奶粉分别干燥后,按比例进行复配,
混合均匀;
定量包装,即得营养代餐粉。

一种高膳食纤维的营养代餐粉,其组分按重量份为:
菊粉25、糙米26、薏米8、黄豆5、绿豆10、苹果纤维6、辣椒5、黄瓜10、蛋白粉5
将谷物和豆类分别经热风干燥熟化或者膨化熟化后,低温粉碎至80~100目,备用;
将菊粉、膳食纤维粉、谷物粉、豆粉和果蔬粉分别干燥后,按比例进行复配,混合
均匀;
定量包装,即得营养代餐粉。

一种高膳食纤维的营养代餐粉,其组分按重量份为:
菊粉11、薏米32、小麦20、大米8、红豆20、抗性糊精2、大麦纤维2、柑橘纤维2、木瓜纤维2、橙1。
将谷物和豆类分别经热风干燥熟化或者膨化熟化后,低温粉碎至80~100目,备用;
将菊粉、膳食纤维粉、谷物粉、豆粉和果蔬粉分别干燥后,按比例进行复配,混合
均匀;
定量包装,即得营养代餐粉。

一种高膳食纤维的营养代餐粉,其组分按重量份为:
菊粉5、小米20、黑芝麻10、红豆16、抗性糊精2、大麦纤维4、柑橘纤维2、木瓜纤维2、扁桃仁4.4、草莓2、奶粉1、蛋白粉30、维生素A0.45、维生素C 0.1、维生素E 0.015、维生素B10.01、维生素B20.01、维生素B60.01、维生素B120.005、葡萄糖酸钙0.5、硫酸亚铁0.05、葡萄糖酸锌0.1、氧化镁0.3、磷酸氢钙0.05
将谷物和豆类分别经热风干燥熟化或者膨化熟化后,低温粉碎至80~100目,备用;
将菊粉、膳食纤维粉、谷物粉、豆粉、果蔬粉、维生素粉、矿物质粉、奶粉和蛋白
粉分别干燥后,按比例进行复配,混合均匀;
定量包装,即得营养代餐粉。

Claims (8)
1.一种高膳食纤维的营养代餐粉,其特征在于其按质量比的原料组成为:菊粉3~30、谷物粉20~60、豆粉10~35、膳食纤维粉3~16、果蔬粉1~15。
2.如权利要求1所述一种高膳食纤维的营养代餐粉,其特征在于所述高膳食纤维的营养代餐粉的原料配方中包括奶粉、蛋白粉、矿物质、维生素中的至少一种,按质量比所述高膳食纤维的营养代餐粉按质量比的原料组成为:菊粉3~30、谷物粉20~60、豆粉10~35、膳食纤维粉3~16、果蔬粉1~15、奶粉1~30、蛋白粉1~30、矿物质0.1~1、维生素0.01~0.6。
3.如权利要求1或2所述一种高膳食纤维的营养代餐粉,其特征在于所述菊粉采用黄金菊粉。
4.如权利要求1或2所述一种高膳食纤维的营养代餐粉,其特征在于所述谷物选自糙米、黑米、红米、玉米、大米、小米、薏米、小麦、燕麦、荞麦中的至少一种。
5.如权利要求1或2所述一种高膳食纤维的营养代餐粉,其特征在于所述豆选自红豆、黑豆、黄豆、绿豆中的至少一种。
6.如权利要求1或2所述一种高膳食纤维的营养代餐粉,其特征在于所述膳食纤维选自抗性糊精、小麦纤维、大麦纤维、魔芋纤维、燕麦纤维、苹果纤维、柑橘纤维、木瓜纤维、芹菜纤维中的至少一种。
7.如权利要求1或2所述一种高膳食纤维的营养代餐粉,其特征在于所述果蔬选自菠萝、柠檬、香蕉、草莓、芒果、橙、橘、苹果、梨、芹菜、卷心菜、番茄、辣椒、黄瓜、桂圆、火龙果、红枣、核桃、杏仁中的至少一种。
8.如权利要求1所述一种高膳食纤维的营养代餐粉,其特征在于所述高膳食纤维的营养代餐粉的加工方法如下:
将谷物和豆类分别经热风干燥熟化或者膨化熟化后,低温粉碎至80~100目,备用;将菊粉、膳食纤维粉、谷物粉、豆粉和果蔬粉分别干燥后,按比例进行复配,混合均匀;定量包装,即得营养代餐粉。
