背景技术
随着社会经济的发展和人们生活水平的提高,同时伴随着城市的快节奏生活,导致人们饮食结构不合理、饮食不规律,经常性的摄入高脂肪、高热量、低膳食纤维的食物,而且人们运动量也越来越少,这些因素导致肥胖人群越来越多。肥胖不仅会影响个人的外观形象,而且还会诱导产生高血压、高血脂、高血糖等慢性病。基于以上事实,代餐食品应运而生,经过多年的发展,代餐食品有代餐粉、代餐棒、代餐奶昔、代餐饼干等多种食品种类,但市售的主要产品还是代餐粉。
代餐粉是一种由谷类、豆类、薯类、果蔬类、乳制品等食材为主制备而成的单一或综合性的冲调粉剂产品,属于高蛋白、低热量、低脂肪、高膳食纤维的一种膳食,其只需要加水冲泡后食用即可,受到了广大消费者的喜爱。当前市售的主要代餐粉为了追求快速减肥效果,其热量远低于人体正常的基础代谢所需热量,且饱腹时间短、口感欠佳,也缺乏维生素和矿物质,长期食用容易造成营养不良。对于肥胖人群,很多人的体内湿气较重且脾胃虚弱,而大部分市售代餐粉中并没有健脾养胃、去除体内湿气的食材或药材。此外,肥胖人群与体重正常人群相比,其肠道菌群结构失调、细菌多样性显著降低,而大部分市售代餐粉中也没有健脾养胃、去除体内湿气的食材或药材。

S1:将选定的果蔬依次经过去皮或不去皮、清洗、打浆、发酵或不发酵、灭菌处理制成复合果蔬浆;将赤小豆、薏苡仁、茯苓、芡实、山药、莲子进行研磨制粉,将制成的粉过80~120目筛网。
S2:称取原材料,其中,其原材料按照重量份数包括复合果蔬浆10~100份、淀粉2~20份、糯米粉2~30份、胶原蛋白肽0.5~15份、动物蛋白0.5~20份、植物蛋白0.5~20份、赤小豆粉0.5~15份、薏苡仁粉0.5~15份、茯苓粉0.25~10份、芡实粉0.25~10份、山药粉0.25~8份、莲子粉0.25~8份、圆苞车前子壳粉0.05~5份、魔芋粉0.05~5份、功能性低聚糖0.5~20份、抗性糊精0.5~20份、共轭亚油酸甘油酯微囊粉0.01~5份、甜味剂0.001~1份、食用香精0.02~0.8份。之后称取纯净水与所述原材料进行混合搅拌制备成浆液。
S3:将浆液采用胶体磨处理2~10min,处理次数为1~4次,处理后可得细浆液。
S4:细浆液采用滚筒干燥机进行干燥成型得布状的薄片。
S5:将薄片采用绞龙粉碎机进行粉碎并过1.5~4mm的筛网得代餐粉。
本发明的有益效果:
本发明的代餐粉配方科学合理,含有动物蛋白与植物蛋白,营养丰富,饱腹时间长且控制了能量的摄入。与市售代餐粉相比,本发明的代餐粉含有赤小豆、薏苡仁、茯苓、芡实、山药、莲子等药材,具有健脾养胃、祛湿的作用,功效特性强。
此外,还添加复合果浆和功能性低聚糖,不仅提供了维生素与矿物质,还有助于肠道运动。
本发明代餐粉的制备方法,具有工艺简单,制作成本较低,可以适应大规模工业化生产。

S1:将选定的果蔬依次经过去皮、清洗、打浆、发酵、灭菌等工艺制备成果蔬浆,备用;将赤小豆、薏苡仁、茯苓、芡实、山药、莲子等药材依次经过挑选和制粉工艺后经过80~120目筛网,备用。
S2:按以下重量份称取原材料:芒果果浆60份、胡萝卜果浆10份、玉米淀粉14份、糯米粉18份、胶原蛋白肽4份、酪蛋白6份、乳清蛋白4份、豌豆蛋白9份、赤小豆粉14份、薏苡仁粉12份、茯苓粉6份、芡实粉5份、山药粉5份、莲子粉2份、圆苞车前子壳粉1份、魔芋粉2份、低聚异麦芽糖10份、抗性糊精15份、共轭亚油酸甘油酯微囊粉3份、三氯蔗糖0.008份、食用香精0.06份,之后称取适量纯净水与所述原材料进行混合搅拌制备成浆液;

实施例二
S1:将选定的果蔬依次经过不去皮、清洗、打浆、不发酵、灭菌等工艺制备成果蔬浆,备用;将赤小豆、薏苡仁、茯苓、芡实、山药、莲子等药材依次经过挑选和制粉工艺后经过80~120目筛网,备用。
S2:按以下重量份称取原材料:木瓜果浆30份、胡萝卜果浆20份、马铃薯淀粉3份、糯米粉20份、胶原蛋白肽8份、酪蛋白8份、大豆蛋白1份、花生蛋白4份、赤小豆粉7份、薏苡仁粉8份、茯苓粉4份、芡实粉8份、山药粉4份、莲子粉3份、圆苞车前子壳粉0.5份、魔芋粉2份、低聚木糖8份、抗性糊精5份、共轭亚油酸甘油酯微囊粉1份、甜菊糖苷0.05份、食用香精0.5份、奇亚籽2份,之后,称取适量纯净水与所述原材料进行混合搅拌制备成浆液;
S3:将浆液采用胶体磨处理8min,处理次数为1次,处理后可得细浆液;
S4:将所述细浆液采用滚筒干燥机进行干燥成型,干燥后可得大块的布状薄片;
S5:将所述薄片采用绞龙粉碎机进行粉碎并过3.5mm的筛网,再进行包装可得代餐粉成品。
实施例三
S1:将选定的果蔬依次经过不去皮、清洗、打浆、发酵、灭菌等工艺制备成果蔬浆,备用;将赤小豆、薏苡仁、茯苓、芡实、山药、莲子等药材依次经过挑选和制粉工艺后经过80~120目筛网,备用。
S2:按以下重量份称取原材料:榴莲果浆20份、香蕉果浆40份、大米淀粉6份、糯米粉15份、胶原蛋白肽10份、乳清蛋白5份、酪蛋白5份、豌豆蛋白7份、赤小豆粉10份、薏苡仁粉7份、茯苓粉5份、芡实粉6份、山药粉2份、莲子粉4份、圆苞车前子壳粉1份、魔芋粉4份、低聚半乳糖4份、抗性糊精8份、共轭亚油酸甘油酯微囊粉2份、三氯蔗糖0.005份、妞甜0.002份、食用香精0.09份,称取适量纯净水与上述配料进行混合搅拌制备成浆液;
S3:将所述浆液采用胶体磨处理4min,处理次数为4次,处理后可得细浆液;
S4:将所述细浆液采用滚筒干燥机进行干燥成型,干燥后可得大块的布状薄片;
S5:将所述薄片采用绞龙粉碎机进行粉碎并过4mm的筛网,再进行包装可得代餐粉成品。
实施例四:
S1:将选定的果蔬依次经过去皮、清洗、打浆、不发酵、灭菌等工艺制备成果蔬浆,备用;将赤小豆、薏苡仁、茯苓、芡实、山药、莲子等药材依次经过挑选和制粉工艺后经过过80~120目筛网,备用。
S2:按以下重量份称取原辅料:桑葚果浆10份、树莓果浆10份、香蕉果浆25份、木薯淀粉5份、玉米淀粉5份、糯米粉8份、胶原蛋白肽9份、乳清蛋白15份、大豆蛋白6份、赤小豆粉9份、薏苡仁粉6份、茯苓粉8份、芡实粉2份、山药粉5份、莲子粉1份、圆苞车前子壳粉3份、魔芋粉2份、低聚果糖15份、抗性糊精11份、共轭亚油酸甘油酯微囊粉3份、妞甜0.6份、食用香精0.2份、奇亚籽3份、维生素A 0.03份、维生素C 0.02份、钙0.8份,称取适量纯净水与上述配料进行混合搅拌制备成浆液;
S3:将所述浆液采用胶体磨进行处理7min,处理次数为2次,处理后可得细浆液;
S4:将所述细浆液采用滚筒干燥机进行干燥成型得大块的布状薄片;
S5:将所述薄片采用绞龙粉碎机进行粉碎并过3mm的筛网,再进行包装可得代餐粉成品。
将实施例1、实施例2、实施例3、实施例4制备的代餐粉进行以下四种实验:
实验一:
进行大众人群的试吃观察,并采用市售的2个品牌的代餐粉作为对照组。调查人群为200位20岁~60岁之间年龄段的消费人群,男女比例为1:1,连续食用1个月,代替正常的晚餐,每晚食用55g,加300~350mL沸水冲泡后食用,测试项目为滋味口感、风味、饱腹时间、1个月后的体重降低值。实验结果如下:
结果表明,本发明制备的代餐粉口感风味均较好,大众接受度好,饱腹时间长且具有较好的减肥功效。综合分析,此产品具有较好的代餐效果。
实验二:
筛选160例具有湿气较重的人群,其中年龄段为20~60岁,男女比例1:1,实验共分为四组,每组人群数量为40,分别食用实施例1、实施例2、实施例3、实施例4所制备的代餐粉样品,连续食用1个月,代替正常的晚餐,每晚食用55g,加300~350mL沸水冲泡后食用。湿气较重的临床症状为:脸部水肿、舌苔厚、全身乏力、头重脚轻、脾虚等。
连续食用1个月后,食用实施例1所制备的代餐粉的症状好转人群为37,食用实施例2所制备的代餐粉的症状好转人群为38,食用实施例3所制备的代餐粉的症状好转人群为39,食用实施例4所制备的代餐粉的症状好转人群为40,有效率较高。
上述实验结果表明本发明制备的代餐粉具有较好的祛湿功效。
实验三:
筛选脾胃功能欠佳的人群200例,其中年龄段为20~60岁,男女比例1:1,随机分为实验组与对照组,实验组160人,分为四组,每组40人,分被食用实施例1、实施例2、实施例3、实施例4所制备的代餐粉样品,对照组40人,正常饮食。连续食用1个月,代替正常的晚餐,每晚食用55g,加300~350mL沸水冲泡后食用。脾胃欠佳临床症状为:食欲不振、便秘、神疲倦怠、精神不佳等。
连续食用1个月后,食用实施例1所制备的代餐粉的脾虚欠佳症状好转人群为38,食用实施例2所制备的代餐粉的脾虚欠佳症状好转人群为39,食用实施例3所制备的代餐粉的脾虚欠佳症状好转人群为40,食用实施例4所制备的代餐粉的脾虚欠佳症状好转人群为36,有效率较高。同时晚餐正常饮食的人群的脾胃欠佳症状都没有得到改善。
上述实验结果表明本发明制备的代餐粉具有较好的健脾养胃功效。
实验四
筛选肠胃功能欠佳的人群200例,其中年龄段为20~60岁,男女比例1:1,随机分为实验组与对照组,实验组160人,分为四组,每组40人,分被食用实施例1、实施例2、实施例3、实施例4所制备的代餐粉样品,对照组40人,正常饮食。连续食用1个月,代替正常的晚餐,每晚食用55g,加300~350mL沸水冲泡后食用。肠胃欠佳主要临床症状为:排便次数减少、粪便硬度增加。
连续食用1个月后,食用实施例1所制备的代餐粉的肠胃欠佳症状好转人群为35,食用实施例2所制备的代餐粉的肠胃欠佳症状好转人群为36,食用实施例3所制备的代餐粉的肠胃欠佳症状好转人群为39,食用实施例4所制备的代餐粉的肠胃欠佳症状好转人群为37,有效率较高。同时晚餐正常饮食的人群的肠胃欠佳症状都没有得到改善。
上述实验结果表明本发明制备的代餐粉具有较好的增进肠道运动的功效。
尽管已经示出和描述了本发明的实施例,对于本领域的普通技术人员而言,可以理解在不脱离本发明的原理和精神的情况下可以对这些实施例进行多种变化、修改、替换和变型,本发明的范围由所附权利要求及其等同物限定。
Claims (9)
1.一种代餐粉,其特征在于,其原材料按照重量份数包括复合果蔬浆10~100份、淀粉2~20份、糯米粉2~30份、胶原蛋白肽0.5~15份、动物蛋白0.5~20份、植物蛋白0.5~20份、赤小豆粉0.5~15份、薏苡仁粉0.5~15份、茯苓粉0.25~10份、芡实粉0.25~10份、山药粉0.25~8份、莲子粉0.25~8份、圆苞车前子壳粉0.05~5份、魔芋粉0.05~5份、功能性低聚糖0.5~20份、抗性糊精0.5~20份、共轭亚油酸甘油酯微囊粉0.01~5份、甜味剂0.001~1份、食用香精0.02~0.8份。
2.根据权利要求1所述的代餐粉,其特征在于,原材料按照重量份数还包括奇亚籽1~10份。
3.根据权利要求2所述的代餐粉,其特征在于,其原材料按照重量份数还包括复合维生素混合粉0.01~2份、复合矿物质混合粉0.5~5份。
4.根据权利要求1所述的代餐粉,其特征在于,所述复合果蔬浆为芒果浆、木瓜浆、榴莲浆、胡萝卜浆、香蕉浆、梨浆、桑葚浆、树莓浆中的两种组合或两种以上组合。
5.根据权利要求1所述的代餐粉,其特征在于,所述淀粉为玉米淀粉、马铃薯淀粉、大米淀粉、木薯淀粉、小麦淀粉中的一种或多种。
6.根据权利要求1所述的代餐粉,其特征在于,所述动物蛋白为乳清蛋白、牛奶蛋白、酪蛋白中的一种或多种,所述植物蛋白为大豆蛋白、花生蛋白、豌豆蛋白、玉米蛋白中的一种或多种。
7.根据权利要求1所述的代餐粉,其特征在于,所述功能性低聚糖为低聚果糖、低聚木糖、低聚半乳糖、低聚异麦芽糖中的一种或多种,所述甜味剂为三氯蔗糖、甜菊糖苷、妞甜中的一种或多种。
8.根据权利要求1所述的代餐粉,其特征在于,所述复合维生素混合粉为维生素A、维生素D、维生素B1、维生素B2、维生素B6、维生素B12、维生素E、维生素C、烟酸、叶酸中的一种或多种;所述复合矿物质混合粉为钙、铁、锌、镁中的一种或多种。
9.一种代餐粉的制备方法,其特征在于,包括以下步骤:
S1:将选定的果蔬依次经过去皮或不去皮、清洗、打浆、发酵或不发酵、灭菌处理制成复合果蔬浆;将赤小豆、薏苡仁、茯苓、芡实、山药、莲子进行研磨制粉,将制成的粉过80~120目筛网;
S2:称取原材料,其中,其原材料按照重量份数包括复合果蔬浆10~100份、淀粉2~20份、糯米粉2~30份、胶原蛋白肽0.5~15份、动物蛋白0.5~20份、植物蛋白0.5~20份、赤小豆粉0.5~15份、薏苡仁粉0.5~15份、茯苓粉0.25~10份、芡实粉0.25~10份、山药粉0.25~8份、莲子粉0.25~8份、圆苞车前子壳粉0.05~5份、魔芋粉0.05~5份、功能性低聚糖0.5~20份、抗性糊精0.5~20份、共轭亚油酸甘油酯微囊粉0.01~5份、甜味剂0.001~1份、食用香精0.02~0.8份。之后称取纯净水与所述原材料进行混合搅拌制备成浆液;
S3:将浆液采用胶体磨处理2~10min,处理次数为1~4次,处理后可得细浆液;
S4:细浆液采用滚筒干燥机进行干燥成型得布状的薄片;
S5:将薄片采用绞龙粉碎机进行粉碎并过1.5~4mm的筛网得代餐粉。
