Abstract
本发明公开了一种高纤低卡高蛋白营养减肥代餐产品及其制备方法,该代餐产品包括以下原料:大豆分离蛋白、分离乳清蛋白粉、酪蛋白、调制乳粉、小分子肽复合物、奇亚籽、魔芋粉、白芸豆提取物、绿茶粉、圆苞车前子壳粉、复合维生素、糖类化合物、矿物质和不可水溶性膳食纤维;该减肥代餐产品的制备方法包括以下步骤:一是将各原料分别经过网筛过滤,二是将各原料加入双螺旋混合机中进行混合,三是用微波瞬时灭菌机进行灭菌,四用真空包装设备进行真空包装,即得本发明高纤低卡高蛋白营养减肥代餐产品,实验结果表明,该减肥代餐产品具有很好的减肥效果。

技术领域
本发明涉及食品技术领域,具体是一种高纤低卡高蛋白营养减肥代餐产品。
背景技术
代餐产品,顾名思义就是取代部分或全部正餐的食物,它最初是医院供病人使用的营养液,后来,代餐产品被用于减肥圈,深受减肥瘦身人士的追捧。代餐产品的成分主要包括各种杂粮、蛋白提取物、维生素和果蔬纤维等,代餐产品具有低热量、低脂肪、高纤维和饱腹感强的特点,另外其冲调方便,非常适合没时间做饭、运动,但又想减肥的小伙伴。
目前,代餐产品根据其成分不同主要分为全谷物类代餐产品、蛋白奶昔类代餐产品和膳食纤维类代餐产品等。
全谷物类代餐产品是最普遍的一种,它是以红豆、薏仁、燕麦、魔芋、黑芝麻、枸杞、红枣、黑豆和核桃等为原料,然后再添加糖和膳食纤维等而制成,从原料上分析,全谷物类代餐产品非常符合近年来“多吃粗粮杂粮”的养生理念,因此受到很多人的追捧,但是全谷物类代餐产品的营养成分主要是谷物,以补充碳水为主,膳食纤维比例较高,单吃全谷物类代餐产品,会缺乏蛋白质和维生素,造成营养不良,并且全谷物类代餐产品的热量较高,与纯大米和纯燕麦等杂粮热量相当,长期食用,不利于减肥。
蛋白奶昔类代餐产品由大豆蛋白、乳清蛋白、酪蛋白、维生素、膳食纤维、糖或代糖、各种添加剂、维生素、调味剂和香精等制成,它不只是单纯补充蛋白质,还会提供维生素、膳食纤维等,是一种复合的蛋白固体饮料,但是某些蛋白奶昔类代餐产品中的必需氨基酸不齐全,需要靠其它食物补充。
青汁是膳食纤维类代餐产品的典型代表,最近几年特别火,青汁起源于日本,它是以大麦嫩叶、甘薯嫩叶和甘蓝嫩叶等绿色植物为原料所榨成的汁,青汁含有丰富的维生素、矿物质和膳食纤维等,能够促进肠道蠕动。目前,膳食纤维类代餐产品的原料品种逐渐扩大,主要有魔芋粉、菊粉、燕麦粉和果蔬粉等。膳食纤维类代餐产品主要通过摄入比较多的膳食纤维增加饱腹感,但是它非常缺乏必要的碳水、脂肪和蛋白质,会造成营养缺乏。
因此,一款好的减肥代餐产品,应该在满足人体需要的营养物质基础上,实现减肥的目标,这三类产品,尽管低热量和低脂勉强达标,但都没有很好地实现营养全面的目标。
发明内容
本发明的目的在于提供一种高纤低卡高蛋白营养减肥代餐产品及其制备方法,以解决现有技术中的问题。
为实现上述目的,本发明提供如下技术方案:
一种高纤低卡高蛋白营养减肥代餐产品,该代餐产品包括以下原料(按重量份数计):大豆分离蛋白30-50份、分离乳清蛋白粉(法国)50-100份、酪蛋白(瑞士)30-50份、调制乳粉20-40份、小分子肽复合物20-50份、奇亚籽(墨西哥)10-20份、魔芋粉20-30份、白芸豆提取物(美国)10-20份、绿茶粉5-15份、圆苞车前子壳粉(印度)10-30份、复合维生素5-10份、糖类化合物20-50份、矿物质5-10份和不可水溶性膳食纤维10-20份。
大豆分离蛋白中蛋白质含量在90%以上,氨基酸种类有近20种,并含有人体必需氨基酸,其营养丰富,不含胆固醇,是植物蛋白中为数不多的可替代动物蛋白的品种之一,大豆分离蛋白粉去除了大豆中原有的营养抑制因子胰蛋白酶抑制剂,使人们不用担心消化不良、胃胀气等不适反应。
分离乳清蛋白被称为蛋白之王,是从牛奶中提取的一种蛋白质,它所含有的生物活性化合物如:α-乳清蛋白、β-乳球蛋白、乳铁蛋白以及免疫球蛋白,可以调节人体的免疫力,同时分离乳清蛋白也含大量支键氨基酸,可有效的为肌肉补充所需的养份。
酪蛋白是一种含磷、钙的结合蛋白,它是哺乳动物包括母牛、羊和人奶中的主要蛋白质,酪蛋白既是人体氨基酸的来源,也是钙和磷的来源,它能促进常量元素(Ca、Mg)与微量元素(Fe、Zn、Cu、Cr、Ni、Co、Mn、Se)的高效吸收,具有“矿物质载体”的美誉。
奇亚籽含有丰富的蛋白质、膳食纤维、维生素、矿物质、人体必需的脂肪酸α-亚麻酸及多种抗氧化活性成分(如绿原酸、咖啡酸、杨梅酮、槲皮素和山奈酚等)。
魔芋中含量最大的是葡萄甘露聚糖,葡萄甘露聚糖具有强大的膨胀力,可填充胃肠,消除饥饿感,又因魔芋所含热量微乎其微,故可控制体重,达到减肥健美的目的,此外魔芋中还含有十六种氨基酸、十种矿物质微量元素和丰富的食物纤维,对防治糖尿病、高血压有特效,魔芋低热、低脂、低糖,对预防和治疗结肠癌、乳腺癌、肥胖症的人群可以说是一种上等的既饱口福、又治病健体的食品,还可以防治肠胃消化系统的多种常见慢性疾病,由此可见,魔芋是一种“天赐良药”,食用起来有百利而无一害。
白芸豆提取物的功效成份是芸豆蛋白,芸豆蛋白是一种天然的α-淀粉酶抑制剂,α-淀粉酶抑制剂通过对淀粉酶的抑制作用而发挥减肥效果,并经胃肠道排出体外,它不进入血液循环系统,也不作用于大脑中枢,减肥的同时不抑制食欲,使用剂量很高时也无副作用,符合世界卫生组织的减肥原则,是一种绿色减肥原料。
绿茶粉中含有的芳香族化合物能溶解脂肪、化浊去腻、防止脂肪积滞体内,绿茶粉中还含有维生素B1和维生素C,其能促进胃液分泌,有助消化与消脂,对减肥有促进作用。
圆苞车前子壳中含有丰富的水溶性膳食纤维,水溶性膳食纤维遇水会膨胀,形成数十倍的凝胶团,增加饱足感的同时,却不会提供热量,有利于减肥。

作为优化,小分子肽复合物包括骨胶原蛋白肽、鱼胶原蛋白肽和核桃肽。小分子肽复合物能刺激脂肪组织的活性,增加散热量,具有促进脂肪和能量代谢的作用,抑制体内脂肪的贮存,因此长期食用小分子肽复合物能有效地控制体重的增加,起到很好的预防肥胖和减肥的效果。

(1)将各原料分别经过80-100目的网筛过滤,使各原料粒度均匀一致;目是指每英寸筛网上的孔眼数目,目数越高,筛网孔眼越多,能够通过筛网的粒子的粒径越小,80-100目的网筛能通过的粒径大小为150-180μm,各原料用80-100目的网筛进行过滤,可以得到非常细的原料粉;
(2)按配比分别称取步骤(1)所得的各原料,依次加入双螺旋混合机中,混合30-60min,进行充分混合,得混合粉末;
(3)用微波瞬时灭菌机对步骤(2)所得混合粉末进行灭菌,灭菌温度为60-80℃,时间为10-20min,进行完全灭菌,自然冷却至室温,得无菌混合粉末;
(4)用真空包装设备对步骤(3)所得的无菌混合粉末进行真空包装,即得高纤低卡高蛋白营养减肥代餐产品。
与现有技术相比,本发明的有益效果是:本发明本着在营养和饱腹的基础上,轻松实现减肥的目标。本发明中大豆分离蛋白属于植物优质蛋白,能够满足人体蛋白需求;分离乳清蛋白最接近人体蛋白质,人体能够快速吸收,补充营养,蛋白利用率高;酪蛋白属于慢蛋白,能够提供长达5个小时以上的饱腹效果;白芸豆提取物、奇亚籽和小分子肽复合物等功能性营养元素,既能帮助减肥,又能改善亚健康;胶原蛋白肽被称为“皮肤的软黄金”、“肤中之肤、骨中之骨”,而分子量在1000-2000道尔顿的小分子肽更容易被人体吸收并达到很好的效果,鱼胶原蛋白肽、骨胶原蛋白肽以及核桃肽多种肽复合,功能更全;可水溶性与非可水溶性膳食纤维相结合,促进胃肠道蠕动,改善肠道有益菌群,使人们有饱腹感的同时,更有助消化;高蛋白、高纤维、低热量、多种维生素和矿物质,营养全面均衡,本发明未添加香精、色素和防腐剂,是一种绿色健康食品。

实验例:
实验样品1-3:实施例1-3制备的高纤低卡高蛋白营养减肥代餐产品。
对照样品1:按照CN103238852A实施例1制备的减肥代餐产品。
(1)实验对象:
4位年龄均为35岁的女性,从事轻体力劳动,排除其他疾病的超重者,四名受试人员分别食用本发明实施例1、实施例2、实施例3和CN103238852A实施例1制备的减肥代餐产品。
(2)实验方法:
在受试人员尚未食用减肥代餐产品之前,对她们的体重进行测量并记录,实验持续8周,结束之后再对她们的体重进行测量并记录。实验期间受试人员早晚餐食用减肥代餐产品,午餐保持正常的饮食,试验品用量均为50g,用300ml温水冲服,实验结果见表1。

(3)实验结论:
从表1中可以看出,第一位受试人员食用实施例1制备的减肥代餐产品8周后,体重减轻40斤,第二位受试人员食用实施例2制备的减肥代餐产品8周后,体重减轻39斤,第三位受试人员食用实施例3制备的减肥代餐产品8周后,体重减轻39斤,第4位受试人员食用CN103238852A实施例1制备的减肥代餐产品8周后,体重减轻19斤,实验结果表明,本发明的高纤低卡高蛋白营养减肥代餐产品具有很好的减肥效果。
