背景技术
现有技术的健康零添加高饱腹高纤营养代餐主食配方以及制作方法,存在以下问题:
第一、目前国内市场代餐产品主要以代餐奶昔居多,但市面上奶昔的配方多使用食用香精、食用色素以及各种添加剂,例如黄原胶、瓜尔胶等勾调颜色口味口感,虽然添加白砂糖、人工香精色素、增稠剂等食品添加剂做辅料使产品整体变稠密均匀,但是这种配方并不健康,同时由于市面上的代餐奶昔其产品颜色多以白色或者单色为主,在食用时直接冲调,丧失了吃饭的仪式感与快乐;
第二、目前国内市场代餐产品在制作过程中还会添加经过高温喷雾干燥的水果果汁粉,高温导致其抗氧化性、维生素A、C、B1、B2、B6、B12等营养物质破坏,失去其具有的营养价值,长期使用会出现每天除蛋白外其它营养素摄入不均衡,各种维生素含量缺失或者添加量较低并达不到相应的标准,且未到5h就出现饥饿的情况。
为解决上述问题,发明者提供了一种健康零添加高饱腹高纤营养代餐主食的制备方法,通过添加超级食物和明星功效成分,精选冻干果干与混合谷物,大于二十种营养素均衡摄入,实现天然果蔬代餐,利用真空冻干技术保留营养物质,生产过程中八大零添加,高于百分之二十五的高膳食纤维,真正饱腹5h,同时本发明产品色彩丰富,食用时有较好的口感。

S1、将一号营养基底以及二号冻干果干包中所需的水果果蔬分别进行清洗,过滤掉杂质,将一号营养基底中所需的水果果蔬打浆,40-60目筛网过滤,利用离心搅拌装置进行搅拌,将搅拌后的浆料以及二号冻干果干包中所需的水果果蔬分别放置于不同的料盘中,厚度4mm-8mm,将料盘放置于真空冷冻室进行干燥,温度零下30-50℃,工作压力30-100Pa,冷冻时间4h-5h,升华温度20-50℃,解析温度20-50℃,使水分低于0.5%,制备果干果蔬的干燥物;
S2、将步骤S1中所制备出的一号营养基底含有的不同种类的果干果蔬的干燥物利用磨粉机进行研磨粉碎,80-120目筛网过筛,分别存放于存储装置中,将步骤S1中所制备出的二号冻干果干包进行储存;
S3、将燕麦、魔芋、圆苞车前子通过纯净水浸泡,利用超声装置在超声波中进行除杂,超声频率40-55KHz、功率密度3.5-4W/cm2、超声时间10-15min,沥水1-2h后放置于干燥机中干燥6-8h,利用磨粉机进行研磨,80-120目筛网过筛,分别存放于存储装置中,分别得到燕麦粉、魔芋粉、圆苞车前子壳粉;
S4、将复配维生素、复配矿物质、泛酸、牛磺酸按配比依次溶解后加入抗性糊精中,搅拌均匀后调节pH值6.0-7.5,干燥后在氮气保护下粉碎,存放于存储装置中,得到强化营养成分,将辛烯基琥珀酸淀粉钠、雨生红球藻虾青素油按配比混合均匀,得到雨生红球藻虾青素粉;
S5、制备一号营养基底粉包,从步骤S2中的存储装置中按配比提取冻干草莓粉、冻干蓝莓粉、冻干蔓越莓粉、冻干树莓粉、巴西莓粉、苹果粉、草莓粉、香蕉粉、芒果粉、黄桃粉、柠檬粉、绿豆粉、菠萝粉、甜橙粉、玉米粉、胡萝卜粉、木瓜粉、红豆粉、菠菜粉在混合机进行混合,得到冻干果蔬粉成分,按配比在混合机中依次加入浓缩牛奶蛋白粉、浓缩乳清蛋白粉、大豆分离蛋白粉、混合均匀后得到优质蛋白成分,将步骤S3制备得到的燕麦粉、魔芋粉、圆苞车前子壳粉按配比依次加入,混合均匀后得到优质碳水成分,将低聚异麦芽糖粉、赤藓糖醇、麦芽糖醇、低聚果糖、甜菊糖苷按配比进行混合,得到代糖益生元成分,将冻干果蔬粉成分、优质蛋白成分、优质碳水成分、代糖益生元成分以及步骤S4中得到的强化营养成分以及雨生红球藻虾青素粉混合均匀,温度70~80℃条件下低温杀菌15~30min或在温度120~125℃条件下高温灭菌3~15s,通过计重、灌入,进行包装,得到一号营养基底粉包;
S6、制备二号冻干果干包,将步骤S2中的存储装置中提取,按配比进行混合,温度70~80℃条件下低温杀菌15~30min或在温度120~125℃条件下高温灭菌3~15s,通过计重、灌入,进行包装,得到二号冻干果干包;
S7、三号混合谷物包制备,将大米、藜麦米、小米进行破碎过滤,加入去离子水,混合均匀后加入聚葡萄糖、菊粉,持续搅拌加热至糖醇全部熔化,然后冷却到75-85℃,待温度冷却到42-45℃时搅拌均匀,和团,压入模具,定型完成后置于175-180℃的烤箱中烘烤20-22min,烘烤结束后,按配比加入全粒燕麦片、椰子片、椰蓉,温度70~80℃条件下低温杀菌15~30min或在温度120~125℃条件下高温灭菌3~15s,通过计重、灌入,进行包装,得到三号混合谷物包。
