本发明公开了一种改善便秘的富含谷物膳食纤维的固体饮料及其制备方法,所述固体饮料有以下重量份配比的原料制备而成:谷物膳食纤维粉60‑80份,杂粮粉10‑25份,山楂粉2‑10份,圆苞车前子壳粉1‑10份,魔芋粉1‑6份,决明子粉1‑6份,葛根粉1‑8份,枳椇子粉1‑6份。本发明采用高温高压破壁技术,改善了谷物纤维中不溶性膳食纤维和可溶性膳食纤维的组成、比例,破坏了麸质原料中的过敏物质,延长了产品保质期。经合理配伍,长期服用无副作用,对改善便秘有良好的效果。

本发明属于食品技术领域,具体涉及一种改善便秘的富含谷物膳食纤维的固体饮料及其制备方法。
背景技术
随着人民生活水平的提高,生活方式有了相应的转变,特别体现在饮食精细、热量充足,体力活动减少,随之而来的却是慢性非传染性疾病患病率的增加。除了人们熟知的心血管疾病、糖尿病等疾病外,便秘的患病率也逐渐升高。便秘是一种常见病,根据病理生理学机制又可以分为慢传输型便秘、出口梗阻型便秘和混合型便秘。慢传输型便秘产生的原因为肠道蠕动减缓导致粪便难以从肠道内排出,造成水分的过度吸收,通常表现为粪便干硬和排便困难。便秘带给人类的健康危害是多方面的,不仅能诱发肛肠疾患、导致胃肠神经功能紊乱,而且是结肠癌、肝性脑病的危险因素。便秘经常导致心血管病人的猝死。我国普通人群便秘的患病率为3%-17%,且随年龄增长而增加,60岁以上老人便秘的患病率高达21%,女性多于男性,男女比例约为1:2.2,这些数字表明便秘已成为我国病源群最广、发病率最高的病种之一。
膳食纤维被国际医学界称为“第七类营养素”,每日增加一定量的膳食纤维,能够有效的改善便秘。膳食纤维进入人体后一般不被消化和吸收, 而是通过刺激肠壁、增加肠蠕动、吸收水分, 保持肠道润滑,有的可作为肠道菌群的调节剂发挥作用, 从而发挥改善便秘的功效。谷物膳食纤维大部分都集中在粮食谷物麸皮中,但麸皮在粮食谷物的精细加工中,因其粗糙的口感被舍弃了,其有效成分未得到充分的利用。目前市面上大部分采用益生菌来改善肠道消化,缓解便秘,但益生菌存在对热和pH不稳定的问题,在其生产工艺的高温灭菌阶段和固体成品的热水冲泡阶段,一般益生菌无法存活,且益生菌体内建立平衡的过程较为缓慢,无法快速发挥作用。由于便秘是一种慢性疾病,患者必须依赖服用药物排便,长期如此会引发相应的不良反应,引发医疗费用开支的增加,给社会和家庭造成经济负担。药物治疗便秘,患者需承受副作用的健康危害。
中国发明专利CN 108651985 A公开了一种防治便秘的膳食纤维代餐粉加工方法,膨化过程不仅使麦麸的结合水丧失,且容易产生金属残留。中国发明专利CN 107897615 A公开了一种用于改善便秘的宣木瓜固体饮料,但其是一种果蔬饮料,且采用喷雾干燥工艺,造价高、能耗高,营养成分部分流失。中国发明专利CN 109497386 A公开了一种改善肠道消化的植物固体饮料组合,中国发明专利CN 110583944 A公开了一种具有改善肠道环境、缓解便秘功能的固体饮料,上述方法均只是简单地将谷物粉和果蔬粉直接混合,原料的功能成分未得到充分的利用。
发明内容
本发明的目的在于提供一种改善便秘的富含谷物膳食纤维的固体饮料及其制备方法,用以解决上述背景技术中提出的麸皮资源浪费、口感差、利用率低,益生菌用于改善便秘的效果不能保证且周期长,药物治疗存在副作用等问题。
本发明为了实现上述目的所采用的技术方案为:
一种改善便秘的富含谷物膳食纤维的固体饮料及其制备方法,其特征在于,由以下重量份配比的原料制备而成:谷物膳食纤维粉60-80份,杂粮粉10-25份,山楂粉2-10份,圆苞车前子壳粉1-10份,魔芋粉1-6份,决明子粉1-6份,葛根粉1-8份,枳椇子粉1-6份。
所述的麸皮粉和燕麦粉的制备方法包括以下步骤:
(1)向谷物膳食纤维中加入其质量2-8倍的水,静置20-60min,取出备用;
(2)将杂粮洗净并加入其体积1-5倍的水,浸泡10-18h,滤干水分备用;
(3)取1-3kg上述的谷物膳食纤维和杂粮,分别进行高温高压破壁处理,压力为0.2-1.0MPa,时间为2-10min;
(4)将破壁处理后的谷物膳食纤维和杂粮分别在温度为60℃-100℃的条件下干燥10-14h,收集备用;
(5)将干燥后的谷物膳食纤维和杂粮分别进行粉碎,粉碎粒度为80-200目。
一种制备改善便秘的富含谷物膳食纤维的固体饮料的方法,其特征在于,按照配比称量所有原料,将各原料充分混合均匀,进行包装和灭菌处理,即得到成品。
本发明谷物膳食纤维可以是小麸皮皮、大麦麸皮、荞麸皮皮、玉米种皮、米糠、红枣渣、大豆渣中的一种或多种。杂粮可以是黑豆、黄豆、赤小豆、绿豆、藜麦、燕麦、大麦、荞麦、高粱、黑米、大米、糙米中的一种或多种。
本发明的有益效果是:
(1)本发明原料易得,膳食纤维含量高,配伍合理,长期食用无副作用,能够良好的改善便秘。
(2)采用高温高压破壁技术进行处理,破坏植物细胞厚壁层,促进了有益功能成分的释放,且改善了不溶性膳食纤维和可溶性膳食纤维的组成及比例,使得对便秘的改善效果更加良好。
(3)本发明工艺简单,生产能耗低,采用高温高压处理使得谷物杂粮中的活性酶失活,产品保质期延长。
(4)本发明采用高温高压破壁技术进行处理,可将异源蛋白质降解成小分子肽,解决了杂粮谷物等麸质原料的过敏问题。

实施例 1
本实施例的一种改善便秘的富含谷物膳食纤维的固体饮料,包括以下重量份配比的原料:谷物纤维粉60份,杂粮粉25份,山楂粉3份,圆苞车前子壳粉2份,魔芋粉3份,决明子粉2份,葛根粉3份,枳椇子粉2份。
进一步的,所述的谷物纤维粉包括以下重量份配比的原料:小麦麸皮粉60份;所述的杂粮粉包括以下重量份配比的原料:燕麦粉25份。
所述的谷物纤维粉和杂粮粉的制备方法包括以下步骤:
(1)向谷物纤维中加入其质量2倍的水,静置60min,取出备用;
(2)将杂粮洗净并加入其体积1倍的水,浸泡18h,滤干水分备用;
(3)取1kg上述的谷物纤维和杂粮,分别进行高温高压破壁处理,压力为0.5MPa,时间为6min;
(4)将破壁处理后的谷物纤维和杂粮分别在温度为60℃的条件下干燥14h,收集备用;
(5)将干燥后的谷物纤维和杂粮分别进行粉碎,粉碎粒度为100目。
本实施例的固体饮料的制备方法方法为按照配比称量所有原料,将各原料放入搅拌机中,充分混合均匀,进行包装和灭菌处理,即得到成品。
实施例 2
本实施例的一种改善便秘的富含谷物膳食纤维的固体饮料,包括以下重量份配比的原料:谷物纤维粉70份,杂粮粉20份,山楂粉2份,圆苞车前子壳粉2份,魔芋粉2份,决明子粉1份,葛根粉2份,枳椇子粉1份。
进一步的,所述的谷物纤维粉包括以下重量份配比的原料:小麦麸皮粉30份,大麦麸皮粉20份,玉米种皮粉20份;所述的杂粮粉包括以下重量份配比的原料:燕麦粉12份,藜麦粉4份,黑豆粉4份。
所述的谷物纤维粉和杂粮粉的制备方法包括以下步骤:
(1)向谷物纤维中加入其质量8倍的水,静置20min,取出备用;
(2)将杂粮洗净并加入其体积5倍的水,浸泡10h,滤干水分备用;
(3)取3kg上述的谷物纤维和杂粮,分别进行高温高压破壁处理,压力为0.2MPa,时间为10min;
(4)将破壁处理后的谷物纤维和杂粮分别在温度为100℃的条件下干燥10h,收集备用;
(5)将干燥后的谷物纤维和杂粮分别进行粉碎,粉碎粒度为120目。
本实施例的固体饮料的制备方法方法为按照配比称量所有原料,将各原料放入搅拌机中,充分混合均匀,进行包装和灭菌处理,即得到成品。
实施例 3
本实施例的一种改善便秘的富含谷物膳食纤维的固体饮料,包括以下重量份配比的原料:谷物纤维粉80份,杂粮粉13份,山楂粉2份,圆苞车前子壳粉1份,魔芋粉1份,决明子粉1份,葛根粉1份,枳椇子粉1份。
进一步的,所述的谷物纤维粉包括以下重量份配比的原料:小麦麸皮粉30份,荞麦麸皮粉20份,红枣渣粉10份,大豆渣粉20份;所述的杂粮粉包括以下重量份配比的原料:燕麦粉5份,藜麦粉3份,糙米粉3份,绿豆粉2份。
所述的谷物纤维粉和杂粮粉的制备方法包括以下步骤:
(1)向谷物纤维中加入其质量5倍的水,静置40min,取出备用;
(2)将杂粮洗净并加入其体积3倍的水,浸泡16h,滤干水分备用;
(3)取2kg上述的谷物纤维和杂粮,分别进行高温高压破壁处理,压力为1.0MPa,时间为2min;
(4)将破壁处理后的谷物纤维和杂粮分别在温度为80℃的条件下干燥12h,收集备用;
(5)将干燥后的谷物纤维和杂粮分别进行粉碎,粉碎粒度为200目。
本实施例的固体饮料的制备方法方法为按照配比称量所有原料,将各原料放入搅拌机中,充分混合均匀,进行包装和灭菌处理,即得到成品。
Claims (5)
1.一种改善便秘的富含谷物膳食纤维的固体饮料及其制备方法,其特征在于,由以下重量份配比的原料制备而成:谷物膳食纤维粉60-80份,杂粮粉10-25份,山楂粉2-10份,圆苞车前子壳粉1-10份,魔芋粉1-6份,决明子粉1-6份,葛根粉1-8份,枳椇子粉1-6份。
2.根据权利要求1所述的一种改善便秘的固体饮料的方法,其特征在于,谷物膳食纤维粉和杂粮粉的制备方法包括以下步骤:
(1)向谷物膳食纤维中加入其质量2-8倍的水,静置20-60min,取出备用;
(2)将杂粮洗净并加入其体积1-5倍的水,浸泡10-18h,滤干水分备用;
(3)取1-3kg上述的谷物膳食纤维和杂粮,分别进行高温高压破壁处理,压力为0.2-1.0MPa,时间为2-10min;
(4)将破壁处理后的谷物膳食纤维和杂粮分别在温度为60℃-100℃的条件下干燥10-14h,收集备用;
(5)将干燥后的谷物膳食纤维和杂粮分别进行粉碎,粉碎粒度为80-200目。
3.根据权利要求1,2所述的一种制备改善便秘的固体饮料的方法,其特征在于,按照配比称量所有原料,将各原料充分混合均匀,进行包装和灭菌处理,即得到成品。
4.根据权利要求1,2,3所述的一种改善便秘的固体饮料,其特征在于,谷物膳食纤维可以是小麸皮皮、大麦麸皮、荞麸皮皮、玉米种皮、米糠、红枣渣、大豆渣中的一种或多种。
5.根据权利要求1,2,3,4所述的一种改善便秘的固体饮料,其特征在于,杂粮可以是黑豆、黄豆、赤小豆、绿豆、藜麦、燕麦、大麦、荞麦、高粱、黑米、大米、糙米中的一种或多种。
