"PROCESSO PARA PRODUZIR UMA VARIANTE DE ENZIMA LIPOLìTICA, ENZIMA LIPOLìTICA, SEQ êNCIA DE DNA, VETOR, CéLULA HOSPEDEIRA TRANSFORMADA, PROCESSOS PARA PRODUZIR A ENZIMA LIPOLìTICA, PARA PREPARAR UMA MASSA ALIMENTìCIA OU UM PRODUTO ASSADO PREPARADO A PARTIR DA MASSA ALIMENTìCIA, PARA REDUZIR O TEOR DE FOSFOLIPìDEO EM UM óLEO COMESTìVEL E PARA APERFEIçOAR A FILTRABILIDADE DE UMA SOLUçãO AQUOSA OU SUSPENSãO DE ORIGEM DE CARBOIDRATO QUE CONTéM FOSFOLIPìDEO, COMPOSIçãO DETERGENTE, E, PROCESSOS PARA INTENSIFICAR O SABOR DE UM PRODUTO ALIMENTìCIO CONTENDO GORDURA DE LEITE E PARA PREPARAR UMA VARIANTE DE ENZIMA LIPOLìTICA PARA USO EM COZIMENTO" A especificidade de substrato de uma enzima lipolítica pode ser modificada efetuando-se alterações na seq³ência de aminoácidos em uma região definida da enzima lipolítica, de modo a aumentar o nível de uma atividade desejada ou a diminuir o nível de uma atividade indesejada. Desta forma, os inventores desenvolveram variantes de enzimas lipolíticas com uma seq³ência de aminoácidos modificada com uma especificidade de substrato que pode ser ajustada para usos específicos.
