Abstract

1,133,533. Butter flavour. MORTON INTERNATIONAL Inc. 5 May, 1966 [13 May, 1965 (2)], No. 19885/66. Heading A2B. An additive for imparting a butter-like flavour to foodstuffs comprises 1.5-3.5 wt. per cent of a lipase enzyme modified milk fat, up to 12 wt. per cent of an edible oil, and 97-84.5 wt. per cent of delactosed whey as a diluent. Part of the whey may be replaced by a combination of seasonings, such as salt, pepper, garlic and onion salt, celery seed, allspice, and cinnamon. A small amount of a citric, such as lemon juice, may also be added. Colouring matter, such as extracts of turmeric, paprika, and anottoc, may be present. The product may be spray-dried.
