Description
Foreliggende oppfinnelse vedrører en saltblanding som kan benyttes som et tilsetningsstoff til næringsmidler.
Det er idag velkjent at mennesket får et overskudd av kalsium, og spesielt natrium, men for lite kalium og magnesium fra maten.
Det er kjent å forsøke å korrigere en for stor tilførsel av natrium ved å benytte blandinger av salter hvor natrium helt eller delvis er erstattet av andre stoffer, hvis smak ligner på smaken av natriumsalt. Kalium eller kalsiumsalter har generelt vært benyttet som substitutter. Anvendelsen av kalsiumsalter er imidlertid ikke fornuftig, siden de øker det allerede for høye kroppsinnholdet av kalsium. Kaliumsalter alene har på den annen side ofte vært funnet å gi en bitter og ubehagelig ettersmak.
I patentpublikasjonen Fl 60 107 (svarende til patentpublikasjonen GB 2 015 863) foreslås en blanding av salter som inneholder 50 til 65 vekt-% natriumklorid, 20 til 40 vekt-% kaliumklorid og 5 til 20 vekt-% magnesiumklorid eller —sulfat. Ved å benytte denne blandingen i stedet for det normale bordsaltet er det mulig å redusere tilførselen av natrium og å øke tilførselen av kalium og magnesium. Imidlertid er denne saltsammensetningen ikke tilfreds-stillende fordi den viktige rollen som hydrogenionene spiller i kalium- og magnesium-metabolismen ikke er tatt hensyn til. Videre er det i saltsammensetningen ifølge Fl 60 107 nødvendig å benytte magnesiumsulfat eller kloridhydrat. Dette skyldes at de fleste andre magnesiumsaltene ikke er opp-løselige nok i vann. Magnesiumklorid er ekstremt hygro-skopisk, og magnesiumsulfat frigir lett fritt krystallvann under varme forhold. Dette er grunnen til at blandingen lett blir fuktig og klumpet.
Formålet med foreliggende oppfinnelse er å tilveiebringe en saltblanding som på en naturlig måte forhindrer ulempene med ubalansert tilførsel av natrium, kalsium, kalium og magnesium, men hvis smak og fysikalske egenskaper på den annen side er akseptable.
Foreliggende oppfinnelse vedrører følgelig saltblanding for anvendelse som tilsetningsstoff til næringsmidler, inneholdende dissosierbar magnesiumforbindelse, kaliumklorid og natriumklorid. Denne saltblandingen er kjennetegnet ved at blandingen inneholder magnesiumklorid, magnesiumoksyd eller magnesiumsulfat, samt videre lysinhydroklorid som forbindelse som tilveiebringer hydrogenioner, samt at innholdet av magnesiumioner er 2-15%, av kaliumioner 15-40%, av natriumioner 40-80%, og av dissosierbare hydrogenioner 1-5% av den samlede molare mengden av nevnte ioner.
De konserverende egenskapene av saltblandingen ifølge oppfinnelsen har vist seg å være bedre enn de for andre blandinger som inneholder kalium og magnesium. Det er også mulig å redusere den totale saltmengden som kreves for konserveringen, fordi den reduserte pH'en ytterligere forbedrer konserveringskvaliteten.
I saltblandingen ifølge oppfinnelsen er det også mulig å benytte magnesiumforbindelser, som f.eks. magnesiumoksyd eller —karbonat, som er oppløselige bare i surt medium. Følgelig er det mulig å unngå anvendelsen av magnesiumsulfat eller —klorid, og å gjøre sammensetningene anvendelige også under varme og fuktige klimatiske betingelser.
Det er også funnet at syrer og sure salter intensiverer saltsmaken av blandingen. Dette reduserer også behovet for å benytte natrium.
Saltblandingen ifølge oppfinnelsen også mer akseptable enn vanlige bordsalt eller saltblandinger som kilde for sporele-menter , som f.eks. jod, fluor, kobber, selen, krom, sink, jern etc. eller vitaminer, til hele grupper av befolkninger. Oppløseligheten av mange sporelementforbindelser vil være forøket, dette vil også øke deres biologiske tilgjengelighet.
I blandingen er anvendbare magnesiumforbindelser, spesielt magnesiumsulfat, magnesiumoksyd og magnesiumkarbonat, men også mange andre forbindelser, mulige. Egnede kaliumfor-bindelser er f.eks. kaliumkarbonat, kaliumbitartrat, kalium-natriumtartrat, såvel som, spesielt, kaliumklorid og kaliumbikarbonat. Natriumforbindelser som kan anvendes er f.eks. natriumglutamat, natriumcitrat, såvel som, spesielt, natriumklorid og natriumbikarbonat. Som forbindelser som avgir hydrogenioner benyttes lysinhydroklorid.
Blandingen ifølge oppfinnelsen kan benyttes som et nærings-middeladditiv som erstatter natriumklorid som bordsalt, som konserveringsmiddel, som fruktsalt, som bakepulver.

Spesielt som et konserveringsmiddel er det mulig å benytte en blanding som inneholder 2 til 15% magnesiumioner, 15 til 40% kaliumioner, 40 til 70% natriumioner og 5% hydrogenioner. En av de foretrukne sammensetningene skal gis i eksempel 3.
Spesielt et fruktsaltpreparat inneholder 3 til 15% magnesiumioner, 15 til 40% kaliumioner, 40 til 80% natriumioner og 2 til 5% hydrogenioner. Blandingen innbefatter noe fruktsyre med behagelig smak, f.eks. 2 til 75% av den totale molare mengden av de ovenfor angitte kationene, og fortrinnsvis også bikarbonationer, slik at oppløsningen blir en boblende drikk med frisk smak. Et typisk fruktsaltpreparat skal beskrives i eksempel 4.
Et bakepulver inneholder 4 til 15% magnesiumioner, 15 til 40% kaliumioner, 40 til 80% natriumioner og 1 til 5% hydrogenioner. Videre må blandingen innbefatte bikarbonationer, hvorfra karbondioksyd frigjøres og hever deigen. Eksempel 5 beskriver en foretrukket blanding av bakepulver.

Claims (2)
1.
Saltblanding for anvendelse som tilsetningsstoff til næringsmidler, inneholdende dissosierbar magnesiumforbindelse, kaliumklorid og natriumklorid, karakterisert ved at blandingen inneholder magnesiumklorid, magnesiumoksyd eller magnesiumsulfat, samt videre lysinhydroklorid som forbindelse som tilveiebringer hydrogenioner, samt at innholdet av magnesiumioner er 2-15%, av kaliumioner 15-40%, av natriumioner 40-80%, og av dissosierbare hydrogenioner 1-5% av den samlede molare mengden av nevnte ioner.

Saltblanding ifølge krav 1, karakterisert ved at den inneholder ca. 3% magnesiumioner, 26% kaliumioner, 70% natriumioner og 1% hydrogenioner, alle beregnet på basis av den samlede molare mengden av nevnte ioner.
