Abstract

Se describe una composición de confitería que comprende material particulado comestible que comprende de 80 % a 100 % en peso basado en el peso total del material de un material de tipo salvado procesable, microbianamente liberado, de sabor aceptable, caracterizada por los siguientes parámetros: (i) tamaño de partícula medio por volumen (Vol. MPS) de 5 a 100 micrones; (ii) distribución de tamaño de partícula por volumen (Vol. PSD) caracterizada por los parámetros: D90,3 menor que o igual a 350 micrones, y D50,3 menor que o igual a 50 micrones y, opcionalmente, D10,3 menor que o igual a 15 micrones, (iii) esfericidad de partícula media como se mide por un Smedio mayor que o igual a 0.75; (iv) donde procesable significa que tiene capacidad de retención de aceite (OHC) de 0.7 a 1.5; (v) donde microbianamente liberado significa que el material tiene microbios comunes por debajo de límites dados (preferentemente, libre de microbios comunes) (vi) donde sabor aceptable denota una actividad de lipasa (LA) y una actividad de peroxidasa (PA) menor que o igual a 2 U/g y, opcionalmente, un bajo grado de notas de sabor tostado como se define en la presente descripción. El material de tipo salvado usado en las composiciones de confitería puede añadirse como un ingrediente a granel para reemplazar el azúcar y/o proporcionar rellenos y/o recubrimientos de confitería que tienen una opacidad de ocultación mejorada cuando se usan como capas en productos de confitería de múltiples capas.
