Abstract

La presente invención se refiere a un proceso para la preparación de alimentos liofilizados que tienen conformaciones geométricas preferentemente predeterminadas y que están listos para comerse, estando dicho proceso caracterizado en que comprende las etapas de: a) mezclar los ingredientes; b) homogeneizar dichos ingredientes o distribuir los mismos uniformemente a través de la mezcla; c) conformar el producto así obtenido en una forma deseada; d) congelar el producto así formado a una temperatura de entre -15 y -60 grados C, y e) liofolizar el producto así obtenido, con parámetros de liofilización a fin de obtener una humedad residual de entre 0 a 10 por ciento (determinada por el método Karl Fisher.
