PROCEDIMIENTO DE FABRICACION DE UN PRODUCTO ANALOGO A FILETE DE BOQUERON ANCHOADO Y PRODUCTO ASI OBTENIDO. LA FABRICACION SE HACE A PARTIR DE PESCADO PICADO, SURIMI O UNA MEZCLA DE AMBOS. CONSISTE EN SOMETER A DICHA MATERIA PRIMA A UN PICADO REALIZADO A TEMPERATURA NO SUPERIOR A 5GC, ADICIONAR DEL 1 AL 5% EN PESO DE SAL, PREFERENTEMENTE NACL, Y SE HOMOGENEIZA HASTA QUE LA MASA ADQUIERE UNA CONSISTENCIA PLASTICA, TRAS DE LO CUAL SE AÑADE ALGUNOS O VARIOS DE LOS SIGUIENTES INGREDIENTES: AGUA, SABORIZANTES, HIDROCOLOIDES (COMO ALMIDON, ALGINATOS Y CARRAGENATOS), PROTEINAS (COMO CLARA DE HUEVO, CASEINA, GLUTEN, PROTEINAS DE SOJA) DIVERSAS SALES (COMO TRIPOLIFOSFATO SODICO, SALES CALCICAS, ETC.) ACEITE, COLORANTES, GLUTAMATO MONOSODICO, ANTIOXIDANTES Y AZUCARES. DESPUES SE PROCEDE A UN HOMOGENEIZADO A UNA TEMPERATURA INFERIOR A 5GC.
