Abstract

Se presenta un método que inactiva la enzima de proteasa en pescados, tales como el lenguado de dientes de saeta, que tienen esta enzima en una porción delos mismos. En el proceso, los pescados se muelen y luego se mezclan con un material almidonoso y/o proteinaceo para formar una mezcla que se somete luegoa alta temperatura, procesamiento breve en un extrusor de tornillo con zona de reacción. La presente invención se refiere también a un método para ladegradación proteolítica de músculos de pescado que tienen enzima de proteasa, que incluye la distribución uniforme de la enzima por todo el músculo delpescado, y luego del secado del músculo del pescado. La presente invención se refiere también a un método para elaborar un producto alimenticio e incluye lareducción del músculo del pescado hidrolizado a una forma en polvo, mezclando luego el músculo de pescado en polvo con un material almidonoso y/oproteinaceo para formar una mezcla que luego se somete a un procedimiento deextrusión a alta temperatura para formar un producto alimenticio deseado. Lapresente invención se refiere también a procesos para tiernizar o producir la degradación proteolítica sustancial o completa de músculos animales aplicandoen el músculo animal enzima de proteasa obtenida de pescados que tienen dicha enzima. También se presentan los productos alimenticios resultantes de estosprocesos.
