Abstract

PURPOSE: The hamburger mixture is formed into a long rod with a round cross section, heat treated, cut into an appropriate size, frozen, and packed with aluminum foil to make instant hamburger efficiently and hygienically.
CONSTITUTION: Ground meat of beef or pork is combined with finely cut oniion, bread crumb, egg white and so on and they are processed by a usual method to prepare the hamburger mixture. Then, the mixture is formed into a long rod with a round cross section, steamed at about 100°C for about 10min and fried in oil for 5min. The product is cooled to room temperature, cut into pieces of about 1cm thickness with an autocutter, the pieces are frozen at about -25°C for about 5hr and each piece is wrapped with aluminum foil.
