Abstract
Description
Claims (1)
- 【特許請求の範囲】 1.油中の脂肪酸部分の65%より高いC18:1含量、油中の脂肪酸部分の20%未満 のC18:2およびC18:3を合わせた含量、ならびに50時間より大きい活性酸素誘導期 を含んで成る高い酸化安定性を有する高オレイン酸大豆油であって、該酸化安定 性が酸化防止剤の添加無しに達成される上記高オレイン酸大豆油。 2.上記油が、ブレンド油製品を作成するためのブレンド供給源として有用な、 請求の範囲第1項に記載の高い酸化安定性を有する高オレイン酸大豆油。 3.上記油が食品の製造に有用な、請求の範囲第1項に記載の高い酸化安定性を 有する高オレイン酸大豆油。 4.上記油がさらに処理され、該処理が水素化、分別、エステル基交換および加 水分解から成る群から選択される、請求の範囲第1項に記載の高い酸化安定性を 有する高オレイン酸大豆油。 5.請求の範囲第1項に記載の油を中に包含させることにより、酸化に対して向 上した安定性を有する食品。 6.請求の範囲第1項に記載の油の水素化、分別、エステル基交換または加水分 解により作られた生成物。 7.請求の範囲第1項に記載の油を用いて作られたブレンド油生成物。 8.請求の範囲第1項に記載の油の調製中に生成される副産物。 9.上記副産物が、上昇したレベルのトコフェロールを含む脱臭蒸留物であり、 請求の範囲第1項に記載の油の酸化安定性が維持される、請求の範囲第8項に記 載の副産物。
