Abstract

Περιγράφεται μια μέθοδος παραγωγής ενζυματικώς ενός προϊόντος υδρόλυσης πρωτεΐνης από ένα πρωτεϊνικό υπόστρωμα, όπου μια ειδική σε προλίνη ενδοπρωτεάση ή μια σύνθεση που περιέχει μια ειδική σε προλίνη ενδοπρωτεάση και προαιρετικώς μια σουμπτιλισίνη ή μια μεταλλοενδοπρωτεάση, και άλλα ένζυμα όπως καρβοξυπεπτιδάσες, χρησιμοποιείται για να παράξει ένα προϊόν υδρόλυσης πρωτεΐνης εμπλουτισμένο σε πεπτιδικά θραύσματα που έχουν ένα καρβοξυ-τερματικό υπόλειμμα προλίνης. Τέτοια προϊόντα υδρόλυσης πρωτεϊνών μπορεί να χρησιμοποιούνται ως τέτοια ή για να μειώσουν την πικρότητα στις τροφές που είναι θρεπτικώς συμπληρωμένες με προϊόντα υδρόλυσης πρωτεϊνών, καθώς επίσης για να παράξουν τρόφιμα που περιέχουν προϊόντα υδρόλυσης τα οποία έχουν χαμηλή αντιγονικότητα.
