Abstract
"HIDROLISADOS DE PROTEìNA ENRIQUECIDOS EM PEPTìDEOS TENDO UM RESìDUO DE PROLINA DE TERMINAL CARBóXI". A invenção refere-se a um método de enzimaticamente produzir um hidrolisado de proteína de um substrato de proteína que é descrito, onde uma endoprotease específica de prolina ou uma composição contendo endoprotease específica de prolina e opcionalmente uma subtilisina ou endoprotease de metalo, e outras enzimas tais como carboxipeptidases são usadas para produzir um hidrolisado de proteína enriquecido em fragmentos de peptídeo tendo um resíduo de prolina de terminal carbóxi. Tais hidrolisados de proteína podem ser usados como tais ou para reduzir o amargor em alimentos nutricionalmente suplementados por hidrolisados de proteína, bem como para produzir gêneros alimentícios contendo hidrolisado tendo baixa antigenicidade.
