Abstract

本发明涉及一种干燥材料的方法和设备。
背景技术
许多材料在进一步加工或包装前必须首先被干燥。而且,尤其是如果该材料是一种食品产品,那么干燥过程必须尽可能以如下方式进行,即:待干燥的材料和细菌或其它微生物之间的任何接触都能被排除。但是在传统干燥方法中,材料和干空气之间有接触,所以很难实现全面无菌。此外,干燥无可避免地涉及易挥发成分的某种损失,所述易挥发成分由于升高的干燥温度而从材料中逸出。
发明内容
本发明要解决的问题包括提供一种使得如下描述成为可能的方法和设备,即:有效地干燥材料而不使该材料受到任何不希望的细菌污染,而且也不会发生易挥发成分的过度损失。
从工艺学的角度来看,这个问题通过干燥挤出的材料的方法来解决,该方法包括如下步骤:在壳体内提供具有过热水蒸汽的气态气氛,传输材料进入壳体,在所述气态气氛中干燥材料,传输被干燥过的材料离开壳体,并且从所述气态气氛中提取从材料逸出到所述气态气氛内的易挥发物质,尤其是调味料。
待干燥材料的含水重量比能够为小于50%,小于40%,小于30%或小于20%。
待干燥材料的AW值也能为小于0.9、0.8、0.6、0.5或0.4。AW(水分活性)被定义为在所定义的温度下,材料上方的水蒸气压力(p)与纯水上方的水蒸气压力(p0)的商:AW=P/P0。
至少在水平的局部层中,气态气氛的温度能够实现为大于100℃、120℃、140℃、160℃或180℃。
气态气氛可以处于环境压力或者升高或降低的压力下。
优选地设计成:气态气氛是由空气和/或另一种气体(例如CO2、氮气或其它惰性气体)组成的第一组分和作为第二组分的水蒸气的混合物,并且至少在水平的局部层中具有重量比至少为50%、60%、70%、80%、90%、95%、98%或99%的水蒸汽含量。气态气氛还可以由纯水蒸气组成。
在方便的变型中,设计将提取到的物质成比例地或按预定量重新加入材料。所述物质能够被直接加入、或混入例如涂层或填充物的载体材料,或以载体材料的形式提供,被提取的物质首先以液体或糊的形式被加入到所述载体材料。
材料在被移动离开壳体后能够被包装。在这个前提下,能够做到将从气态气氛提取的物质在包装过程中引入包装容器。
从设备的角度来看,本发明要解决的问题通过一种用于干燥挤出材料的设备来解决,该设备包括用于容纳带有过热水蒸汽的气态气氛的壳体,该壳体具有入口端口和出口端口,用于在壳体内部产生带有过热水蒸汽的气态气氛的装置,用于通过入口端口将材料传输进入壳体的第一传输装置,用于通过出口端口将材料传输离开壳体的第二传输装置,和用于从气态气氛提取易挥发物质的提取单元。

能够实现:通风管线与壳体连通,并且在壳体之下、入口端口和出口端口之上的一高度处具有通向外部的出口孔。
可选择地或附加地,提取管线能与壳体连通并且经由风扇引导至冷凝器。

本设备首先包括壳体2,其带有底壁4、右侧壁6a、左侧壁6b、后壁8、相应的前壁(未示出)和上壁10。底壁4基本水平地布置。

在本实例中形成第一和第二传输装置的传输装置30由未示出的首尾相连的(endless)支撑装置(链、线缆、链对或其它类似物)形成,而该首尾相连的支撑装置上保持有碗或托盘34。传输装置30沿朝向上壁10的方向向上延伸通过入口端口40,然后与上壁在竖直方向间隔开地沿着该上壁水平地行进,并且随后沿朝向底壁4的方向折回向下而且穿过出口端口42离开壳体,其中所述入口端口进入底壁4内或处在底壁4下。每个托盘34具有底壁34a和槽状外围侧壁34b,而且用来接收特定数量的待干燥材料。托盘34优选是气体可渗透的,以便允许存在于壳体2中的气态气氛不受阻碍地穿透到材料,并且托盘34例如可以具有穿孔的底壁和/或侧壁,或者可以完全地或部分地由有孔材料、肋条钢丝网或类似物组成,设置在壁中或多孔部分中的开口的大小取决于待干燥的材料。
代替托盘,传送带能够被设置为传输装置,待干燥的材料位于该传输装置上,例如为平坦的传送带或像槽一样凹陷的传送带,其有可能是穿孔的或多孔的。
每个托盘34都方便地挂在位于水平枢转轴36上的承载器上,所述水平枢转轴36在高于托盘34重心的位置运行,从而允许托盘34以钟摆的方式自由地摆动,使得不管支撑装置的方向发生什么改变,托盘34保持它们底壁朝下的定向。
在传输装置30进入入口端口40之前和在传输装置30离开出口端口42之后,传输装置30跟随的路线取决于具体应用的特定环境。在壳体外部并且传输装置进入入口端口之前,装填装置例如可以被设置在托盘34由材料装填之处。传输装置30优选地被导向为连续回路,传输装置30持续地在装填装置、入口端口和出口端口之间循环,尽管作为可选方案,传输装置30也能够被设计成用于分批操作,首尾相连地(endlessly)或作为特定长度的一部分利用单独的起点和终点来回运动。
在示出的实施例中,设置有排出装置52,已干燥的材料在排出装置52处经由收集器托盘53和滑槽55从每个独立的托盘34清空到传送器54上,如果需要,滑槽55将带有锁55a以切断压力,传送器54将材料传输到包装站60。例如能够设计成,托盘34在排出装置52处绕托盘34的枢转轴36旋转180°,使得容纳在托盘34中的材料掉落到收集器托盘53上。
包装传送器62将诸如有螺旋盖的广口瓶、罐头罐、包装袋(pouchpack)或类似物的包装容器64从装料设备66首先传输至包装站的装填站68,其中所述装料设备66是包装容器被送达包装传送器的地方,所述包装站的装填站68是已干燥的材料被装入相应的包装容器内的地方。
在添加站70处,诸如调味料的提取出的易挥发物质能够被加入包装容器。所述物质能够以物质已经被提取出的形式,也就是以纯的形式被加入,或以溶解在诸如水的溶剂中的形式被加入。可选地,提取出的物质在被加入到包装容器之前可以先与载体材料混合,载体材料优选地是以任意方式被附加地加入到包装容器中的已干燥材料中的材料,例如被涂覆的层、涂层、填充物、奶油、肉汁或类似物。例如可以成比例地加入提取物,也就是以它们在先前的干燥过程中从容纳在包装容器中的那个量的材料释放出的相同量添加提取物。以这种方式,易挥发物质在材料中的原始含量被极大程度地保留下来。可选地,可以加入更多或更少剂量的易挥发物质,或者将它们用于某些其它用途。
在密封站72,独立的、装填好的包装容器被密封,也就是例如利用旋拧盖或罐头盖密封,或者在包装袋的情况下通过封接密封。
用于接收诸如调味料的易挥发物质的提取单元80优选地采取旋转圆锥柱或旋转台柱的形式。这是一立式圆柱81,诸如处于正常压力或减小压力的水蒸汽的惰性分离气体在该圆柱中从流体输入物或灰浆分离易挥发成分的蒸气状流。从顶部到底部,交替布置着附接于圆柱内壁的固定金属圆锥片83和附接于旋转轴85的金属圆锥片87。
在冷凝物形成在壳体2内的情况下,待提取的流体输入物经由提取管线84被引入位于上述柱顶部的产品输入口82。在重力的作用下,液体向下、向内流动到第一固定圆锥83的上表面,并且在内侧到达第一旋转圆锥87,由于作用在其上的离心力,液体在所述第一旋转圆锥87上分布为一层薄的紊流膜,而后液体向上、向外流动并且从旋转圆锥的外边缘传递到下一个较低的固定不动的圆锥83上,直到该液体已经流经所有的圆锥,该液体才到达位于上述柱底部的出口86,在那里仅有少量易挥发物质遗留在该液体中。
逆流输入的惰性分离气体(在此情况下是水蒸汽192)从底部向顶部流动通过上述柱,而且从冷凝物吸收易挥发成分。当富含易挥发物质的水蒸汽到达上述柱的顶端时,所述水蒸汽在冷凝器88中冷凝,使得易挥发物质以溶解在水中的浓缩形式获得,并且易挥发物质能够以上面描述过的方式递送给已干燥的材料和/或包装容器或者以其它方式使用。
为了在壳体2内部产生带有过热水蒸汽的所需气态气氛或带有一点或根本不含空气组分的纯过热水蒸汽的气氛,正如在美国专利5711086中描述的那样,管道102内部具有加热装置100,管道102一方面通入位于传输装置30之上的开口101中的上壁10内部,另一方面通入位于底壁4之上某一高度处的后壁8中的开口104内部。流动产生器(在此种情况下为风扇106)提供用于产生气流,从而经由开口101吸气并且吹入开口104内。
附接到开口101之下的上壁8上的是挡板130,它们彼此相向引导充当导流器或密封装置,所述导流器或密封装置确保通过开口101从壳体2吸取的水蒸汽气氛里可能的最大部分流动通过位于开口101的正下方的穿孔托盘或托盘34。这保证了位于托盘中的产品与过热水蒸汽进行密切接触。
另两个挡板132、134被布置成基本平行于左侧壁6b,并且在彼此之间重叠一小部分。这些挡板的任务是尽可能地防止过量的周围环境空气通过移动的传输装置30被引入壳体2内。在底壁4附近的挡板之间的缝隙允许空气或密度相对较高的富含空气的水蒸汽气氛从壳体逸出到外部。
可选地或附加地,能够借助于收缩部件提供用于水蒸汽的喷嘴状导流器,以便引起流速在本地增加,并因而实现水蒸汽对待干燥材料的增强应用和水蒸汽与待干燥材料的改良接触。
在壳体的下部区域中,优选直接在底壁4之上的壳体最深处的区域中,提取管线120通入后壁8中的提取端口122并通到冷凝器124,冷凝物从冷凝器124被引导入容器126内。在提取管线50内部,有受控风扇128,该风扇128由控制单元基于温度和湿度或水蒸汽含量信息控制。为了这个目的,至少一个温度传感器和至少一个水蒸汽含量传感器被布置在壳体内部,以便确定水蒸汽的条件(相对湿度和/或饱和度,或水蒸汽含量),优选地,每个传感器都布置在上壁和下壁附近,和/或提取端口122附近。如果有任何的过热水蒸汽存在,以这种方式有可能确定过热的程度或相对于饱和状态的温差。借助于相对湿润的水蒸汽的加强提取并且同时提供热量,壳体内部的气态气氛的组成能够向更高温度下的过热水蒸汽的更高含量转移。提取端口能够被布置在与底壁相同的高度上,在底壁中或在底壁之上。
经由管道102和壳体2在封闭环路中引导的气体/水蒸汽气氛能够以这种方式被加热至满意的温度。进入壳体2的材料导致壳体中水或水蒸汽的输入,使得如果足够的能量或热被传递入壳体内,那么壳体内部的水蒸汽含量增加。借助于对经由提取管线120提取并且在冷凝器124中冷凝的水蒸汽进行合适的打开或关闭回路控制,壳体2中水蒸汽含量能够被调节。如果没有提取,多出的水蒸汽通过入口端口40和/或出口端口42被释放到外部。
图1示出了从壳体去除水蒸汽的其它可能性,饱和水蒸汽因而也是过剩的湿气从壳体去除,而不是通过经由提取端口122(可选择地,经由通风管线140,或两者)的提取。通风管线140被连接至三通阀142,该三通阀142还经由连接管线144连接至提取管线120和另一个在底壁4中具有开口148的连接管线146。通风管线140具有通到外部的通风孔141。
三通阀142能够被放置在第一位置,管线144和146在该第一位置彼此连接,而通风管线140在此处被封堵,从而提取经由开口122和148实现。如果原意,能够在管线144中设置止回阀以便确保在三通阀的第一位置,提取排它地经由开口122发生。
三通阀142能够被放置在第二位置,通风管线140与管道146在该第二位置连通,而管道144在此处被封闭而且风扇128被关闭,从而壳体内部的水蒸汽气氛经由端口148和管道146和140与环境连通。
图1中示出的设备包括导管、或者入口管150和出口管152,在底壁中的开口的区域中(即入口端口40和出口端口42),所述入口管150和出口管152将壳体向下延伸并且敞开地终止于基本相同的高度。这些导管在入口侧和出口侧围住传输装置30,并且与通风管线140(其在更高些的位置终止)一起确保过剩水蒸汽在三通阀142的第二位置经由通风管线140从壳体2的内部释放。位于壳体内部的水蒸汽具有向下流动通过导管的趋势,但是所述水蒸汽在处理过程中遭遇到相对较冷的周围环境空气,从而在通风孔141的高度水平上在所有导管中形成基本水平的边界层。通风孔141在高度h0处位于导槽的自由端的高度之上,高度h0例如可以是壳体高度H的10%、20%、30%或50%,H代表壳体内部的最高点和最低点之间的竖直距离。另外,高度h0优选在导管的竖直范围hb的大约30%到70%之间(例如50%),所述导管的竖直范围开始于下壁4或壳体的最低点。
在所有的实施例中,壳体的下壁4或壳体的最低点之上的提取端口122的有效高度hs可以实质上为零,或者它也可以是H的大约5%、10%、15%、20%或30%。实际干燥过程主要发生在高度ht并且水平的子层(sub-layer)优选地位于该高度ht或其之上,气态气氛在所述水平的子层中拥有满意的高温并且呈现低氧值,高度ht可以是壳体高度H的大约50%、60%、70%、80%、90%或95%,在各种情况下,壳体的高度H均从壳体的下壁4或壳体的最低点开始测量。
为了加速或加强所期望的气态气氛的生成,水蒸汽供给管线(未示出)能够被用来将过热水蒸汽直接引入壳体2内。可选地,能够设计:诸如水雾化器的水蒸汽或水供给管线通入位于加热装置100上游的管道102,从而通过加热水蒸汽或蒸发水,能够将过热水蒸汽气氛引入到开口104的区域中。
由于不同温度下水蒸汽的密度不同,也由于任何可能混合入内的空气的影响,如图3所示,竖直层有可能并且被有意设计成在壳体内部形成,同时过热水蒸汽在顶部收集,而更潮湿的水蒸汽和/或水蒸汽-空气混合物在底部收集。因为这个原因,传输装置30部分运行在上壁10附近的高度ht处的壳体的上部区域中,即过热水蒸汽区内,在此区域之后,材料随即被朝着位于较低高度水平上的出口端口42传送。出口端口42的低位置使得过热水蒸汽很难直接从壳体逸出,过热水蒸汽的这种逸出将会是一种不愿被看到的损失。
图2示出了本发明的变型,不像在图1所示的实施例中那样,本变型的目的不是为了具有不同的连续水平层(即这样一种水蒸汽气氛:从底部向顶部运动的过程中,其变得愈来愈热、空气和氧气愈来愈稀薄,愈来愈只包含过热水蒸汽),而是为了具有一种尽可能彻底地混合并且在整个壳体内部均质化的水蒸汽气氛。这实现了:壳体内部在至少一个循环风扇160(图2中示出了它们其中的两个)的帮助下均匀混合,使得实质上没有层化现象或不均匀的混合能够在竖直方向上成立。
另外,利用强劲的循环系统改进了待干燥材料和水蒸汽气氛之间的接触,该循环系统由旋风器162、风扇164、热交换器166、风扇168a、168b、168c以及连接至它们的水蒸汽引导箱170a、170b、170c组成。根据哪个更合适一些,旋风器162、风扇164、热交换器166和风扇168a、168b、168c可以被布置在壳体2的内部或外部。根据流动条件,风扇164或风扇168a、168b、168c可以被省去。风扇164抽吸在上游穿过旋风器162的水蒸汽气氛,在所述旋风器中源自于待干燥材料的微粒沉积。旋风器根据其作用,在壳体内部的任意适合点或区域吸入水蒸汽气氛。在风扇164的下游,水蒸汽气氛流动通过热交换器166,所述热交换器166中已经选择性地借助于水蒸汽发生器165事先添加了水蒸汽。在热交换器166中,可以按照要求供应或去除热量,由此水蒸汽气氛随后经由风扇168a、168b、168c进入水蒸汽引导箱170a、170b、170c。水蒸汽引导箱引导水蒸汽气氛通过优选为穿孔的传送带的传输装置30,使得其上的材料被带入与水蒸汽气氛的密切接触。

Claims (29)
1.一种用于干燥材料的方法,其包括如下步骤:
-在壳体(2)内提供具有过热水蒸汽的气态气氛,
-传输所述材料进入所述壳体(2)内,
-在所述气态气氛中干燥所述材料,
-传输被干燥过的材料离开所述壳体(2),以及
-从所述气态气氛中提取从所述材料逸出到所述气态气氛内的易挥发物质,尤其是调味料。
2.根据权利要求1所述的方法,其特征在于:将所述材料干燥至含水重量比小于50%,小于40%,小于30%或小于20%。
3.根据前面任意一项权利要求所述的方法,其特征在于:将所述材料干燥至水分活性值小于0.6、小于0.5或小于0.4。
4.根据前面任意一项权利要求所述的方法,其特征在于:在至少一个水平的局部层,所述气态气氛的温度大于100℃、大于120℃、大于140℃、大于160℃或大于180℃。
5.根据前面任意一项权利要求所述的方法,其特征在于:所述气态气氛处于环境压力、或者升高或降低的压力下。
6.根据前面任意一项权利要求所述的方法,其特征在于:所述气态气氛是由空气和/或另一种诸如C02、氮气或其它惰性气体的气体组成的第一组分和作为第二组分的水蒸气的混合物,并且在至少一个水平的局部层中具有重量比为至少50%、60%、70%、80%、90%、95%、98%或99%的水蒸汽含量。
7.根据前面任意一项权利要求所述的方法,其特征在于:所述气态气氛在至少一个水平的局部层中具有体积比小于15%、小于10%、小于8%、小于5%、小于2%或小于1%的氧气含量。
8.根据前面任意一项权利要求所述的方法,其特征在于:所述气态气氛在竖直方向上是分层的,沿朝向顶部方向,温度增加并且氧气含量减少。
9.根据前面任意一项权利要求所述的方法,其特征在于:在提取后,将提取到的物质成比例地或按预定量重新加入所述材料。
10.根据权利要求9所述的方法,其特征在于:将所述物质直接加入所述材料,或者混入载体材料或以载体材料的形式提供,所述载体材料例如为涂层或填充物。
11.根据权利要求9或10所述的方法,其特征在于:所述物质或者载体材料以液体或糊的形式被加入。
12.根据前面任意一项权利要求所述的方法,其特征在于:在将所述材料移出所述壳体(2)后包装所述材料。
13.根据权利要求12所述的方法,其特征在于:将从所述气态气氛提取的物质在包装过程中引入包装容器(64)内。
14.根据前面任意一项权利要求所述的方法,其特征在于:使所述壳体(2)内部的所述气态气氛彻底地混合,而且避免竖直层化现象。
15.一种用于干燥挤出的材料的设备,包括:
-用于容纳带有过热水蒸汽的气态气氛的壳体(2),所述壳体具有入口端口(40)和出口端口(42),
-用于在所述壳体(2)内产生带有过热水蒸汽的气态气氛的装置(100),
-用于通过所述入口端口(40)将材料传输进入所述壳体(2)的第一传输装置(30),
-用于通过所述出口端口(42)将所述材料传输离开所述壳体(2)的第二传输装置(30),以及
-用于从所述气态气氛提取易挥发物质的提取单元(80)。
16.根据权利要求15所述的设备,其特征在于:所述入口端口布置在一出口管的自由端。
17.根据权利要求15或16所述的设备,其特征在于:所述出口端口布置在一出口管的自由端。
18.根据权利要求16或17所述的设备,其特征在于:所述入口管和/或出口管从所述壳体(2)向下延伸。
19.根据权利要求15-18中任意一项所述的设备,其特征在于:一通风管线(140)与所述壳体(2)连通,而且所述通风管线在所述壳体(2)之下、并且在所述入口端口(40)和所述出口端口(42)之上的一高度处具有通向外部的出口孔(142)。
20.根据权利要求15-19中任意一项所述的设备,其特征在于:一提取管线(120)与所述壳体(2)连通,并且经由风扇(128)引导至冷凝器(124)。
21.根据权利要求15-20中任意一项所述的设备,其特征在于:所述第一传输装置和/或第二传输装置(30)具有穿孔的传送带。
22.根据权利要求15-21中任意一项所述的设备,其特征在于:承受着升高或降低压力的管道(102)沿所述第一传输装置(30)的部分区段布置,所述承受着升高或降低压力的管道(102)与所述壳体(2)连通,尤其是与所述壳体(2)的下部分连通。
23.根据权利要求22所述的设备,其特征在于:在所述管道(102)和所述第一传输装置(30)的部分区段之间设置导流器或密封装置,以便确保有围绕或通过传输装置的密集的流体穿过所述气态气氛。
24.根据权利要求15-23中任意一项所述的设备,其特征在于:设置包装站(60)用于包装已干燥的材料。
25.根据权利要求24所述的设备,其特征在于:所述第二传输装置(30)延伸直至所述包装站(60)。
26.根据权利要求15-25中任意一项所述的设备,其特征在于:所述提取单元(80)采取旋转圆锥柱的形式,以便从来自所述气态气氛的冷凝物中提取易挥发物质。
27.根据权利要求15-26中任意一项所述的设备,其特征在于:循环风扇(160)布置在所述壳体(2)中。
28.根据权利要求15-27中任意一项所述的设备,其特征在于:纯化所述气态气氛的旋风分离器(162)连同风扇(164)布置在所述壳体中。
29.根据权利要求28所述的设备,其特征在于:所述旋风分离器(162)与导流器或水蒸汽引导装置(170a、170b、170c)串联布置,并且选择性地与一个或多个风扇(168a、168b、168c)串联布置。
