Abstract
Proceso para producir leche libre de lactosa o substancialmente libre de lactosa, preferiblemente sin agregar agua, y el producto que se obtiene como resultado del proceso. El proceso comprende los pasos de: a) Ultrafiltrar la leche original para obtener un primer producto de permeacion y un primer retentato; b) Nanofiltrar dicho primer producto de permeacion para obtener un segundo producto de permeacion y un segundo retentato; c) Mezclar dicho primer retentato con dicho segundo producto de permeacion para obtener una mezcla; y d) Hidrolizar la lactosa restante en dicha mezcla para obtener una leche hidrolizada. El proceso proporciona un producto libre de lactosa con el sabor original de la leche.
