Abstract
Un alimento fermentado que contiene un extracto de al menos un material de plantas seleccionado del grupo que consiste en curcuma, Houttuynia cordata Thunb, Eucommia ulmoides Oliv, salvado de arroz, hojas de caqui, perilla, clavo de olor, canela y Rubus suavissimus S. Lee (Rosaceae) y bacterias del género Bifidobacterium. El alimento fermentado contiene un material novedoso y excelente con el cual puede aumentarse la viabilidad de las bacterias del género Bifidobacterium en el almacenamiento del producto, y aun cuando se utilice en productos tales como bebidas o alimentos, no deteriora el sabor el producto, por lo cual las bacterias del género Bifidobacterium pueden estar presentes a altas concentraciones, lo que provee diversos efectos fisiologicos.
