Claims (13)
- 精選及び切断された材料を加熱し、材料の深部温度を35〜60℃に到達させ、材料の元の重さの80〜95%となるように乾燥させる熱処理装置と、
0〜30℃の温度を維持する3〜25%濃度の塩水に、前記熱処理装置を通過した材料を浸漬する塩水冷却浸漬装置と、
前記塩水冷却浸漬装置を通過した材料の洗浄を行う洗浄装置と、を備える、
低塩キムチの製造システム。 - 前記塩水冷却浸漬装置が、熱水を貯蔵する浸漬槽と、
前記浸漬槽の内部で材料を塩水に浸漬移動させる移動装置と、
塩水を噴出供給する塩水供給装置と、を備える、
請求項1に記載の低塩キムチの製造システム。 - 前記熱処理装置の前工程に設けられ、精選された材料を2〜4等分に切った後、こま切れにする切断細切装置をさらに備える、

前記回転ドラム式熱風装置が、ケースの内部に回転可能に設けられ、円周面に多数の孔が形成される多孔性回転ドラムと、
前記回転ドラムの内面に中心部に向かって突出する状態で設けられる複数の攪拌羽根と、
前記回転ドラム側に向かって熱風を供給するための送風機と、
前記送風機と回転ドラムとの間に設けられ、送風される空気を加熱するためのヒータと、備え、
前記コンベヤ式熱風装置が、ケースの内部に垂直状に配列され、複数個の段で設けられ、ネットコンベヤや多数の孔が形成される打孔板からなる乾燥コンベヤと、
前記乾燥コンベヤの上下と両側面を取り囲んで設けられる熱風トンネルと、
前記乾燥コンベヤの水平方向に熱風を送風する送風機と、
前記送風機を通過し、前記乾燥コンベヤ側に送風される空気を加熱するためのヒータと、を備える、
請求項5に記載の低塩キムチの製造システム。 - 前記回転ドラム式熱風装置が、前記回転ドラムの内部に設けられ、前記回転ドラムと一緒に回転するように固定設置されるスクリューをさらに備える、
請求項6に記載の低塩キムチの製造システム。 - 前記熱処理装置が、こま切れに切断された材料に送風しながら、マイクロ波を2〜20分間照射するマイクロ波加熱装置と、
移送コンベヤに積載された状態で移送され、または多孔性回転ドラム内に搬入される前記マイクロ波加熱装置を通過した材料に、材料の深部温度が35〜60℃に維持されるように熱風を当て、材料の元の重さの80〜95%となるように10〜40分間乾燥させる熱風装置と、を備える、
請求項1に記載の低塩キムチの製造システム。 - 前記熱処理装置が、同一の移送コンベヤの上に連設される前記マイクロ波加熱装置と熱風装置で構成される、

前記洗浄槽の内部面に連設され、洗浄水を噴出供給する洗浄水供給装置と、を備える、
