Abstract
Μέθοδοι παραγωγής προϊόντων τροφίμων τύπου σνακ χαμηλής περιεκτικότητας σε λιπαρά και τα προϊόντα που παράγονται σύμφωνα με τις μεθόδους, στις οποίες κομμάτια τροφίμων υποβάλλονται σε επεξεργασία ενζύμων ή/και κατιόντων ή/και συγκεκριμένες τεχνικές μαγειρέματος ή/και στεγνώματος, για παροχή προϊόντων τροφίμων τύπου σνακ που έχουν την υφή, τη γεύση, καθώς και τα άλλα χαρακτηριστικά των συμβατικών προϊόντων με πλήρη λιπαρά.
