Abstract

Aperitivo crujiente de alcachofa y proceso de elaboración, consistente en un aperitivo sólido tipo "snack" a base de alcachofas laminadas y cocinadas para ser crujientes, obtenido a partir de diferentes partes de alcachofas, frescas o congeladas, cuya elaboración comprende, al menos, el corte de corazones y/o fondos en láminas de 0,5 mm a 14 mm, y un tratamiento térmico de fritura y/u horneado, al vacío y/o a presión atmosférica, y en presencia o no de aceite vegetal, contemplando, opcionalmente, baño de deshidratación osmótica, baño de enzimas y coadyuvantes tecnológicos, y baño de ácidos o álcalis para blanquearlas.
