Abstract
Un método para la harina tratada con calor que comprende los pasos de deshidratación de la harina para minimizar o evitar la gelatinización, y tratamiento térmico de la harina deshidratada. La harina resultante ha incrementado la absorción de humedad. La masa elaborada de harina tratada con calor ha mejorado el comportamiento y horneado de productos hechos de harina tratada con calor y ha mejorado las características relativas a la masa y productos horneados hechos de harina no tratada.
