Description

用于冲泡饮料的方法和装置
技术领域
本发明涉及一种用于冲泡(brewing)饮料的方法和装置。特别地,本发明涉及在具有浸泡(infusion)室的装置中冲泡的浸泡饮料如茶。
背景技术
饮料如茶和咖啡通常在家中用咖啡粉、茶袋或散装茶叶制备。然而,需要长的冲泡时间和所造成的杂乱带给人们不便。因此,已设计出提供方便、快速和消费者友好的冲泡此类饮料的方式的冲泡装置。饮料材料通常在一次性使用囊盒或在冲泡饮料后被处置的其它容器中提供。对于咖啡饮料,囊盒自身通常起到冲泡室的作用。囊盒的体积通常小于最终饮料的体积,故需要冲泡水流经囊盒。这通过在囊盒中设置过滤器使得经冲泡的饮料可得到分配而同时饮料材料被保留并与囊盒一起被处置来实现。
然而,此方法不是很适合于冲泡茶,因为茶叶需要较大的在其中浸泡的空间。因此已设计出具有单独的较大的浸泡室的用于冲泡茶的装置。例如,WO 2007/042485公开了用于制备浸泡饮料的装置,其具有用于容纳液体的浸泡容器。向装置中的空腔中引入含茶叶的筒。筒的底部包含液体可透过的过滤器。浸泡容器和空腔彼此连通,使得当液体被倒入浸泡容器中时其将流向筒。茶叶因此被浸没在液体中并进行浸泡。在浸泡开始后,打开与空腔连通的通道以让浸泡后的液体从浸泡容器通过空腔及通过筒的过滤器流向通道。用过的茶叶被收集在筒中并与筒一起从空腔移除。虽然浸泡室提供了用于茶叶浸泡的空间,但此方法具有诸多缺点。特别地,筒首先得提供足够的区域以便过滤器允许饮料在冲泡开始后于短时间内分配,其次,筒得具有足够的容积以容纳用过的茶叶,用过的茶叶会在浸泡过程中溶胀,通常溶胀至其干体积的四倍左右。因此,筒必须相对大。其还得足够强以在其从装置移除时支承用过的茶叶的重量。此外,其必须以液体不可透过的方式可连接到浸泡室,以便饮料不会漏出,这又需要筒具有至少一个刚性唇部分(lip)或法兰。因此,筒需要由材料如塑料或铝制成,并且因为其尺寸,故需要显著量的此材料。然而,从成本和环境影响二者的角度出发,这都是不期望的。因此,本发明的目的在于提供一种克服该缺点的冲泡饮料的方法。
发明内容

通过在囊盒固持器中而不是在囊盒中设置过滤器,囊盒固持器可实现现有技术中由囊盒实现的功能,因此,囊盒的所需功能显著减少。第一,由于饮料通过囊盒固持器过滤,故无需囊盒为过滤器提供足够的区域;也无需在两个相反侧上刺穿或以其它方式打开囊盒。第二,无需囊盒固持用过的茶叶。第三,囊盒不需要与浸泡室形成水密性连接。事实上,囊盒被浸没在冲泡液体中。因此,囊盒可小得多并且可具有较薄的壁,因为其仅需要大和强到足以容纳干茶叶即可。此外,其可由非刚性材料(例如,纸)制成或甚至可由可溶性材料制成,所述可溶性材料将变为饮料的一部分而不留下废物。
具体实施方式
术语“饮料”指适于人类消费的基本上水性的可饮用组合物。优选地,饮料包含饮料的至少85重量%,更优选至少90%,最优选95至99.9%的水。优选地,饮料为“基于茶的饮料”,即包含至少0.01重量%的茶固体的饮料。优选地,基于茶的饮料包含0.04至3重量%、更优选0.06至2重量%、最优选0.1至1重量%的茶固体。

图5以(a)透视图和(b)横截面图示出了从装置1移除的囊盒固持器。囊盒固持器20具有侧壁24,侧壁24具有上缘23。侧壁24和底座26限定空腔27。过滤器25位于囊盒固持器内。突起28支承囊盒30于空腔27内过滤器25上方。在过滤器25之下为通道29,在分配过程中饮料将通过其流动,并且在冲泡过程中其由排泄阀21关闭。过滤器优选由例如自不锈钢制成的细网格构成。网格尺寸必须足够小以捕获饮料材料的小块但足够大以确保排泄不会太慢。优选地,网格尺寸为100至500微米,更优选150至300微米。优选地,过滤器(当在装置中处于其正常位置时)相对于水平面倾斜5至45°、优选10至30°、例如约20°的角度。使过滤器相对于水平面成一定角度具有两个优点:第一,其提供较大的表面积,并因此增大排泄的速度。第二,饮料材料收集在倾斜的过滤器的底部而上部分没有饮料材料,以便饮料自由地通过其排泄。
图6示出了囊盒30。囊盒30可具有任何合适的设计。为了促进高效和成本有效的制造,优选囊盒通过注塑或通过热成形来形成。优选地,囊盒包含主体部分31和盖32,盖附接到主体部分以将可浸泡的饮料材料36包裹于囊盒内。在此实施方式中,主体部分优选通过注塑或通过热成形来形成,并且饮料材料随后通过附接盖至主体部分而封闭在囊盒内。在一个特别优选的实施方式中,主体部分包含缘33,并且盖通过例如热封绕缘附接到主体部分。盖可由薄膜如箔制成。主体部分优选由水不可透过的材料制成。由于过滤器不位于囊盒中,故无需在囊盒的底座中刺穿或以其它方式制造开口。这将大大简化囊盒的构造,因为主体部分可例如作为单个件注塑,其仅需要填充饮料材料、然后用盖盖上。
由于与含过滤器的已知囊盒相比,本文所述囊盒的所需功能显著减少,故囊盒可小得多和/或可具有较薄的壁,因为其仅需要大和强到足以容纳干的可浸泡饮料材料。囊盒可由方便地用于饮料囊盒的材料如塑料或铝制成。然而,其也可由非刚性材料(例如,纸、卡片或者织造或非织造材料(例如,用于茶袋的材料))制成。囊盒可甚至完全或部分地由其自身为饮料材料的材料制成。在此实施方式中,囊盒将在冲泡过程中分解和/或溶解。例如,囊盒可由米纸、可溶性膜或甚至从已经压制或以其它方式粘在一起的茶叶(在此情况下,囊盒自身为可浸泡的饮料材料)制成。
在使用中,装置如下起作用。使囊盒固持器在其降低的位置,使用者从支撑体移除囊盒固持器。将含有可浸泡饮料材料的囊盒置于囊盒固持器的空腔中并靠在突起上,所述突起保持囊盒处于正确的位置。
然后将囊盒固持器放回支撑体上。使用者然后提升支撑体,例如通过按压装置上的按钮,所述按钮激活执行机构。囊盒固持器垂直地向上行进直至其与浸泡室连接并形成水密性密封。在一个替代的实施方式中,浸泡室可朝向囊盒固持器向下移动。
在本发明的上下文中,“连接囊盒固持器的上缘到浸泡室的底缘”和“将上缘连接到浸泡室的底缘”应理解为指囊盒固持器的上缘和浸泡室的底缘形成水密性接触,使得囊盒固持器和浸泡室形成其中在进行冲泡时可固持冲泡液体的容器。囊盒固持器和浸泡室可通过中间构件如法兰(例如位于囊盒固持器的上缘和/或浸泡室的底缘上的橡胶或泡沫环)来连接以提供良好的密封。优选地,当连接时,浸泡室和囊盒固持器形成封闭的空间。
所述装置可具有用于识别囊盒和/或从囊盒上的代码读取信息的机构。这允许囊盒被装置识别,以便装置可自动地为冲泡操作设置参数如冲泡时间、水温等。其还允许装置被编程以使得其仅在如果存在正确类型的囊盒时运行。因此,有效代码意味着存在期望类型的囊盒,而无效代码意味着存在不期望的类型的囊盒、已经用过的囊盒或不存在囊盒。识别系统可为任何合适的类型,例如:囊盒与囊盒固持器之间的机械联锁;光学识别(例如,通过颜色、荧光或条形码)、电、磁、射频识别(RFID)芯片等。代码可例如作为附接到囊盒的附属物提供。附属物特别适合于将在冲泡过程中溶解或分解的囊盒。
任选地,所述装置还可具有用于让使用者调节冲泡操作的参数如冲泡时间、杯尺寸等的机构。所述机构可合适地包括装置上的与控制系统一起的按钮或其它输入设备。
囊盒优选具有盖,盖需要被打开或移除以释放饮料材料。在一个实施方式中,盖由使用者在将囊盒插入到装置中之前移除。或者,盖由装置在囊盒被插入到囊盒固持器中后例如随着囊盒固持器的上缘被连接到浸泡室的底缘而自动打开。优选地,在盖中造两个开口,一个用来向囊盒中引入液体,另一个用来向浸泡室中释放液体和饮料材料。然而,因为所述囊盒不具有过滤器,故无需在囊盒的底座中刺穿或以其它方式制造开口。这将大大简化囊盒的构造。
在图7中所示的一个优选实施方式中,盖通过在囊盒固持器向上行进以与浸泡室的底缘连接时相对于一个或多个静态造口部件推动盖来打开。相对于位于浸泡室歧管16上的静态造口部件40来推动盖32。所述构件的功能是在盖中创造开口以释放液体和饮料材料。这可由具有锋利边缘的构件来实现,所述锋利边缘切割或刺穿盖。或者,盖可具有预先形成的缺陷(weakness)如穿孔34,所述缺陷减小打开盖所需要的力。在这种情况下,构件40可以是钝的,例如金属丝。优选地,所述构件是成角度的或具有倾斜的后部分41以便随着其移动进囊盒中,因打开盖所形成的翼片(flap)被推离开口并且在饮料材料从囊盒释放时保持不挡道。
在图7中示出的优选实施方式中,用于向囊盒中引入液体的第二个开口通过相对于静态针42推动盖来制造,静态针42由具有尖端的管构成。针42刺破盖。水然后从贮存器泵送到加热器,所述加热器优选流通加热器。所产生的热水(和任选地蒸汽)然后被泵送向囊盒并通过针进入囊盒。热水的流入将可浸泡的饮料材料通过由造口部件40所制造的开口从囊盒推出并进入浸泡室10中。
控制加热器和泵使得在浸泡室中获得目标冲泡温度(其通常在80℃至95℃的范围内)。通常,水流率在200至400ml/min的范围内,水的量为150至300ml,具体取决于所期望的饮料规格。
优选地,浸泡室10由透明材料如玻璃、有机玻璃、耐热玻璃等制成以便在饮料冲泡时使用者可看见可浸泡饮料材料(例如茶叶)的运动。可向囊盒固持器20中泵入空气或可直接向浸泡室10中泵入空气以在水中制造气泡并从而搅动饮料材料。这不仅提高视觉外观,而且帮助浸泡并有助于防止饮料材料粘到浸泡室的侧面上。此外,空气的引入将释放香气,所述香气可任选地经由例如在分配喷口近旁具有出口的管放出,从而在冲泡过程中提供给使用者茶的香气。冲泡时间,其通常在10至120秒的范围内,优选通过使用者输入和/或读自囊盒的信息而设定。
一旦冲泡已进行所需的时间,即打开位于囊盒固持器20的底座中的排泄阀21,从而允许饮料从浸泡室排放。优选地,由机器自动控制排泄阀的打开。饮料从浸泡室流动通过位于囊盒固持器中囊盒下面的过滤器25,然后通过通道29,并最后流进使用者已置于托架8上的杯9中。茶材料由过滤器25阻止进入杯9。
任选地,可在囊盒固持器之下布置分配喷口7,以便饮料通过排泄阀分配并通过喷口分配出。因此,饮料将按与从茶壶的喷口倒出的茶类似的弧形分配到杯中而不是垂直地向下分配到杯中。这将增强机器为使用者提供的“戏剧感(theatre)”并还加重饮料的“茶感(tea-ness)”,这与咖啡制造机截然不同。
在饮料已被分配后,可用更多的热水从冲泡室的壁冲洗可浸泡的材料和/或饮料残余物。优选地,通过位于浸泡室顶部附近的旋转冲洗喷嘴18引入冲洗水。通过旋转冲洗喷嘴而非静态的将获得更好的冲洗。在优选的实施方式中,在饮料被分配后立即进行冲洗,并将冲洗水也分配到杯中并成为饮料的一部分。这将不再需要单独处置冲洗水。在这种情况下,冲洗水提供饮料的总体积的约15-30%,即,使用的冲洗水的量为约50ml。
最后,在饮料已被分配后,使用者使用把手22降低囊盒固持器并将其从支撑体移除。然后处置用过的囊盒和用过的茶叶,并可冲洗囊盒固持器。由于囊盒固持器可从冲泡装置移除,故其易于清洁。然后将囊盒固持器返回到支撑体,为下一次使用做好准备。
所述装置可例如通过无饮料材料地运行冲洗周期或通过使用含清洁材料例如过碳酸钠的特定囊盒运行周期来清洁。
上面各个章节中提及的本发明的实施方式的各种特征可视情况加以必要的变更而适用于其它章节。因此,可视情况将一个章节中指定的特征与其它章节中指定的特征相组合。针对实施本发明描述的模式的各种对于相关领域技术人员来说显而易见的变型意在落在以下权利要求的范围内。

Claims (15)

1.一种在冲泡装置(1)中制备饮料的方法,所述装置包括:
·具有底缘(12)的浸泡室(10),所述底缘(12)限定开口;
·用于接收囊盒(30)的囊盒固持器(20),所述囊盒固持器包括具有上缘(23)的侧壁(24)、过滤器(25)和在所述过滤器相对于所述上缘的相反侧上的可开关通道(29);
所述方法包括步骤:
a)向所述囊盒固持器(20)中插入含有可浸泡饮料材料的囊盒(30);
b)连接所述囊盒固持器(20)的所述上缘(23)到所述浸泡室(10)的所述底缘(12);
c)向所述囊盒(30)中引入液体并从所述囊盒释放所述饮料材料,使得所述液体与饮料材料混合并流入所述浸泡室(10)中以冲泡饮料;
d)在冲泡进行后,打开所述囊盒固持器(20)中的所述通道(29),以允许所述饮料从所述浸泡室(10)流经所述过滤器(25)并通过所述通道流出。
2.根据权利要求1所述的方法,其中所述可浸泡饮料材料包括茶树材料、草本植物材料、花材料和/或水果块。
3.根据权利要求1或权利要求2所述的方法,其中所述液体为温度在80至95℃的范围内的水。
4.根据权利要求1至3中任一项所述的方法,其中所述囊盒(30)包含主体部分(31)和盖(32),所述盖附接到所述主体部分以将所述可浸泡饮料材料(36)包裹于所述囊盒内。
5.根据权利要求4所述的方法,其中所述主体部分由水不可透过的材料制成。
6.根据权利要求4或权利要求5所述的方法,其中所述盖随着所述囊盒固持器的所述上缘被连接到所述浸泡室的所述底缘而自动打开。
7.根据权利要求6所述的方法,其中所述盖通过相对于一个或多个静态造口部件(40,42)推动它来打开。
8.根据权利要求6或权利要求7所述的方法,其中在所述盖中制造两个开口,一个用来引入液体,另一个用来向所述浸泡室中释放液体和饮料材料。
9.根据权利要求8所述的方法,其中所述用来引入液体的开口通过相对于静态针(42)推动所述盖来制造,所述静态针(42)刺破所述盖使得所述液体可通过所述针进入所述囊盒。
10.根据权利要求8或权利要求9所述的方法,其中所述用来释放液体和饮料材料的开口由造口部件(40)制造,所述造口部件(40)是成角度的或具有倾斜的后部分(40),以便随着其移动进所述囊盒中,通过打开所述盖所形成的翼片被推离所述开口。
11.根据权利要求8至10中任一项所述的方法,其中所述盖具有预先形成的缺陷(34),并且其中所述用来释放液体和饮料材料的开口由钝的造口部件(40)制造。
12.一种冲泡装置(1),所述冲泡装置(1)包括
·具有底缘(12)的浸泡室(10),所述底缘(12)限定开口;
·用于接收囊盒(30)的囊盒固持器(20),所述囊盒固持器包括具有上缘(23)的侧壁(24)、过滤器(25)和在所述过滤器相对于所述上缘的相反侧上的可开关通道(29);
·用于移动所述囊盒固持器和/或所述浸泡室的机构,以便将所述囊盒固持器的所述上缘(23)连接到所述浸泡室的所述底缘(24);
·用于向所述囊盒中引入液体的机构(42),以便所述液体和饮料材料可混合并流入所述浸泡室中以冲泡所述饮料;
·用于打开所述囊盒固持器中的所述通道的阀门(21),以允许所述饮料从所述浸泡室流经所述过滤器并通过所述通道流出。
13.根据权利要求12所述的装置,其中所述囊盒固持器可从所述装置移除。
14.根据权利要求12或权利要求13所述的装置,其中在所述囊盒固持器的所述上缘(23)和/或所述浸泡室的所述底缘(12)上具有法兰。
15.根据权利要求12至14中任一项所述的装置,其中所述过滤器(25)相对于水平面倾斜5至45°的角度。
