Abstract
A találmány tárgya eljárás tejszínkrém előállítására, amelynek soránkevertetés közben, 10-20% tejszármazékot, 8-30% cukrot, 10-60%fermentált tejterméket, 0-25%, 25-45% zsiradékanyagot tartalmazótejfölt vagy tejszínt, 0-35% texturálószert, 0-20% aromát adó terméketés 0-0,5% sót tartalmazó keveréket készítenek, a kapott keveréket 60-115°C hőmérsékleten 7 másodperc és 5 perc közti időtartamon áthőkezelik, a keverék hőmérsékletét 15 °C és 40 °C közé állítják, éskevertetés közben, a keverék teljes tömegére számítva 10-45% olvadtzsiradékanyagot adnak hozzá, így homogén tejszínkrémet kapnak.
