Abstract
Изобретение относится к пищевой промышленности, в частности, к технологии производства быстрорастворимого кофе методом сублимации (freeze-dried coffee) и может быть использовано на производящих кофе предприятиях. Конечная кофейная композиция на основе сублимированного кофе, содержащего внутри сублимированных гранул натуральный жареный кофе тонкого помола, обладает органолептическими свойствами свежеприготовленного молотого натурального кофе, при этом не требует варки, как последний. В описанных способах во время процесса производства натуральный обжаренный кофе тонкого помола одного или смеси различных видов, в зависимости от требуемых органолептических качеств конечного продукта, вводится в концентрированный жидкий кофейный экстракт перед сублимацией. Кофейная композиция и способ согласно изобретению позволяют расширить ассортимент сублимированного кофе путем введения не растворимых в воде пищевых добавок в одном технологическом цикле.
