Abstract

COMPOSIÇÃO DE CAFÉ QUE CONSISTE EM CAFÉ INSTANTÂNEO SECADO POR CONGELAMENTO E CAFÉ MOÍDO FINO COM TORREFAÇÃO NORMAL E COM O SABOR E AROMA DE CAFÉ RECÉM-PREPARADO, E MÉTODO PARA SUA PRODUÇÃO A invenção refere-se à indústria alimentícia, particularmente, a tecnologia de produção de café instantâneo secado por congelamento, e pode ser usada na indústria produtora de café. A composição de café final baseada em café secado por congelamento, contendo café moído fino torrado normal dentro dos grânulos secados por congelamento, tem o perfil organoléptico do café moído normal recém-preparado, com o que não há a necessidade de coar em comparação com este último. Nos métodos descritos, café moído fino torrado normal de uma variedade ou como uma mistura de variedades, dependendo do perfil organoléptico requerido do produto final, é incorporado no extrato de café líquido concentrado antes da secagem por congelamento. A composição de café e o método de acordo com a invenção permitem expandir a classificação do café secado por congelamento incorporando os aditivos insolúveis em água em um ciclo do processamento.
