Abstract
Se describen en general extractos y bebidas con nutrientes, sabores y texturas mejorados y métodos de fabricación de los mismos. Algunas realizaciones se refieren a extractos y bebidas que se obtienen mediante técnicas de filtración. Reivindicación 1: Un método de preparación de un producto de extracto comestible caracterizado porque comprende: proveer una materia prima comestible reducida a partículas; extraer las partículas de la materia prima comestible en agua para producir un extracto de la materia prima comestible; filtrar el extracto de la materia prima comestible con por lo menos un filtro de modo tal que la concentración de ácidos clorogénicos en el extracto filtrado de la materia prima comestible aumente y la concentración de grasa en el extracto filtrado de la materia prima comestible disminuya; y separar el retenido del filtro resultante del extracto filtrado de la materia prima comestible para obtener el producto extracto comestible. Reivindicación 31: Un extracto de café verde comestible caracterizado porque comprende: por lo menos 18 por ciento en peso de ácidos clorogénicos; y menos de 0.05 por ciento en peso de grasa. Reivindicación 47: Una composición comestible caracterizada porque comprende: un extracto de una materia prima comestible, el extracto comprende una mayor cantidad de ácido clorogénico y una menor cantidad de grasa que la materia prima comestible de la cual el extracto se obtiene, y, el extracto posee un umbral de sabor de aproximadamente 30 ppm o superior.
