Abstract

La presente invención divulga un método para la elaboración de un extracto a partir de pulpa de café que comprende extraer mecánicamente, filtrar y concentrar pulpa fresca a condiciones de presión y temperatura. Además reclama la presente invención reclama un extracto a partir de pulpa de café caracterizado por tener un porcentaje total de azúcares entre el 8 y el 20%, un porcentaje de cenizas inferior al 20%, fibra insoluble entre el 0,01 y el 1,00%, fibra soluble entre 15,0 y 40,0%, humedad inferior al 20% y cafeína entre 0,5 y 5,0%.
