Abstract
La invención se relaciona con la industria del alimento, en particular, con la tecnología de la producción de café instantáneo liofilizado, y puede ser usado en la industria de producción de café. La composición de café final basada en café liofilizado que contiene café regular tostado finamente molido dentro de los gránulos liofilizados, tiene el perfil organoléptico del café regular recién hecho, y no tiene la necesidad de ser hervido en comparación con este último. En los métodos descritos, el café regular tostado finamente molido de una variedad ó como mezcla de variedades, dependiendo del perfil organoléptico requerido del producto final, se incorporan en el extracto concentrado líquido de café antes de liofilizar. La composición de café y el método, de acuerdo con la invención, permiten expandir el surtido ó variedad del café liofilizado mediante incorporar aditivos alimenticios no solubles en agua en un ciclo del proceso.
