Abstract Cold brew dried instant coffee is manufactured by combining two well known processes. First, cold brew coffee extraction has been around since 1964. Second, instant coffee has been around since 1901. Freeze dried and spray dried instant coffee manufacture is well established. However, nobody in the world has commercially manufactured instant coffee using the cold brew method.

1 Description Cold brew dried instant coffee This invention is an improvement over dried instant coffee. Instant coffee is a beverage that starts with coffee beans. Commercial manufacturers of instant coffee prepare it by either freeze-drying or spray drying. The resultant product, sold as instant coffee, can be rehydrated. In manufacturing instant coffee, the first production step after the beans are roasted and ground is to extract coffee. The ground coffee is dissolved in water. Temperatures of 155 to 180 degrees C are used. The coffee solution is concentrated to about 15 to 30% coffee by mass. The coffee solution can be further concentrated by vacuum evaporation or freeze concentration. The cold brew process is significantly different. Ground coffee is mixed in either cold or ambient temperature water. Heat is never used in the extraction process. Instead, the coffee solution is brewed very slowly, between 12 and 24 hours. The characteristics of cold brew coffee are notably different from coffee that uses heat in the extraction. Cold brew coffee is up to 66% less acidic. Consequently, it is not substantially less bitter in taste. No manufacturer anywhere in the world has made instant coffee using a cold brew process. This process creates an instant coffee that is remarkably less bitter than the current instant dried coffees.
