(a)提供新的具有不同颜色、形状和大小的营养成分/凝胶罩;

(d)掩盖常用维生素和矿物质预混合料中的令人不悦的气味和味道,并且防止成分间的相互反应降低稳定性。
(e)附加值成分。两个为一个的价钱意味着成品额外的价值增值。
本发明涉及含有至多50%的凝胶胶囊或片(以藻酸盐、果胶酸盐或两者的混合物为基础)的饲料或宠物食品,并含有油、维生素、氨基酸、蛋白质、矿物质、着色剂、香味剂和/或特定目标功能成分(如生态微生物、生物活性分子),所说的食品选自干燥、冷冻、甑馏和超高温处理的产品。
本说明书中的食品,可理解为人用食品和宠物食品。
除藻酸盐和果胶酸盐外,加入其他如carraghenate、吉兰糖胶或琼脂的水胶体的微量成分也可。在这种情况下,微量成分的量不超过藻酸盐、果胶酸盐和微量成分总量的10%。
用于制备凝胶胶囊的技术通常为包囊(包衣)。在本说明书中,采用包埋技术制备片剂。根据本发明,也可根据包埋原理制备片剂,然后将所述的片剂包衣,所以最后不得不将它们称为胶囊剂。
根据本发明,在成品中有高浓度的凝胶胶囊是可能的。凝胶胶囊的含量优选为0-12%。说明书中的百分比是以成品的重量为基础的。
根据第一个实施方案,所述产品为冷冻产品,选自奶制品和非奶制品。在产品为奶制品的情况下,所述产品可以为酸奶、木斯和奶油甜品。在产品为非奶制品的情况下,所述产品可以为大豆或豆腐制品。
根据第二个实施方案,所述产品为干燥或甑馏的产品,选自肉冻、鱼冻、肉、冻、肉基的蔬菜。这是宠物食品的典型实例。在所用的原材料中,肉或肉类副产品均为所屠宰的新鲜或适当方法保存的温血动物的多肉部分,或者为得自温血动物身体或部分身体的产品或副产品。肉尤其指鸡肉、兔肉、牛肉或羊肉以及下水。下水是指两肺叶及肝或肾。肉副产品是指从上述动物胴体所获得的食品。在本说明书中,鱼和鱼的副产品是指新鲜或适当方法保存的鱼或鱼的部分以及它们转变的副产品。鲑鱼、沙丁鱼或金枪鱼可作为鱼肉用,鱼膳食也可作副产品用。
在典型的甑馏的宠物饲料组合物中,成品由50%的鱼或肉以及50%的冻组成。因为凝胶胶囊或片部分代替鱼,所以目的在于:在营养上使最后的成品中含有38-45%鱼或肉、50%冻及5-12%凝胶胶囊或片。
根据第三个实施方案,所述产品为超高温处理产品,选自奶饮料、大豆饮料、软饮料。
食品组合物中的凝胶胶囊或片可以是球形或非球形。通常它们的直径可达到20mm,优选0.1-5mm。
典型的凝胶胶囊或片的成分如下:至多50%的油、至多15%的钙盐、至多3%的维生素和矿物质的湿预混合物。钙盐选自磷酸三钙、氯化钙、硫酸钙。所用油选自植物或动物油,如棕榈油、大豆油、葵花籽油、猪或牛脂。
根据本发明,也可将凝胶胶囊或片进行第二次包衣或包囊。
由于适度、操作简便和实用,凝胶包埋是广泛应用的包囊技术。含有营养素(如维生素和矿物质的预混合物、着色剂、油等)的水胶体胶囊是在球形或非球形聚合物膜内包囊的液体/营养素的实例。
用藻酸盐或低甲氧基胶质(果胶酸盐)制备热稳定的凝胶胶囊/片的方法如下:
(a)将藻酸盐/果胶酸盐+tspp的水溶液与油、维生素、矿物质、着色剂、香味剂等的混合物混合,得到稳定的液态乳液。将稳定的液态乳液滴入氯化钙溶液(或相当物)中,得到凝胶胶囊,即瞬时的藻酸盐凝胶胶囊;
(b)将藻酸盐/果胶酸盐+tspp的水溶液与油、维生素、矿物质、着色剂、香味剂等的混合物混合,得到稳定的液态乳液。可以冰冻或干粉形式(在此情况下,指分散体)加入某些食品成分。然后,继续研磨(在乳化器内)稳定的液态乳液/分散体,从切削装置的位置,将硫酸钙溶液(或相当物)注入乳化器内,将成品乳液倒入盘内或模具内。在3-5分钟内,开始胶凝并且7-10分钟后可切削。切削凝胶胶囊/片剂。
(a)和(b)两种方法制备的稳定的凝胶胶囊/片可在125℃下甑馏60分钟。
所发现的主要问题是当藻酸盐/果胶酸盐溶液与含有油、维生素矿物质预混合物以及至多10%的磷酸三钙混合时,弱凝胶也几乎瞬时形成。发现加入螯合剂可避免预胶凝现象。
按照上述方法制备凝胶胶囊/片后,可考虑进行第二次包衣/包囊。与凝胶胶囊/片浸入藻酸盐、果胶酸盐或两者的溶液内相似,将凝胶胶囊/片收集后浸入氯化钙溶液或相当物内。
根据本发明,也可将凝胶胶囊/片着色使消费者能真实地感知所说的胶囊。
然后将制备的凝胶胶囊与相应的产品混合。如果为冷冻制品,将酸奶与胶囊混合,然后采用无菌填充。如果为甑馏制品,可以将凝胶胶囊进行灭菌,混合物由肉或鱼制成,然后填充入罐头中,将上述罐头密封,然后通过无菌区。关于超高温处理,可以使凝胶胶囊与待生产的饮料混合物流经超高温处理装置,然后进行无菌填充。
为了阐明上述应用,在下面提供了配方和操作方法的实施例。
实施例1:40%大豆油的藻酸盐胶囊/片
在室温下、于分散器内,用2分钟将1.5%藻酸盐、0.5%Tetra焦磷酸钠分散于45.5%的水中。
然后在分散器内,将40%大豆油、2%维生素/矿物质预混合物、10%磷酸三钙和0.5卵磷脂+着色剂以及微量成分强力搅拌3分钟分散。强力搅拌3分钟,将藻酸盐/tspp溶液加入油混合物中。将所得的乳液滴入2%的CaCl2溶液中,得到瞬时形成的凝胶胶囊。收集凝胶胶囊。
然后将凝胶胶囊与鱼/肉片混合,与肉汁或冻以约50/50的混合率混合并罐装食品。在125℃下甑馏罐装的食品1个小时。
实施例2:40%牛脂油的藻酸盐胶囊/片
在80℃下、于分散器内,用2分钟将1.5%藻酸盐、0.5%Tetra焦磷酸钠分散于45.5%的水。在水浴中融化40%的牛脂油。在分散器内,将上述油、2%维生素/矿物质预混合物、10%磷酸三钙和0.5卵磷脂+着色剂以及微量成分强力搅拌3分钟,制备分散体。
将油混合物(52℃)与藻酸盐/TSPP(80℃)混合,且乳液的最终温度为60-65℃。将所得的乳液滴入2%的CaCl2溶液中,出现瞬时形成的凝胶胶囊。收集凝胶胶囊。然后将凝胶胶囊与鱼/肉片混合,与肉汁或冻以约50/50的混合率混合并罐装食品。在125℃下甑馏罐装的食品1个小时。
实施例3:30%葵花籽油的藻酸盐胶囊/片(两次包衣)
在室温下、于分散器内,用2分钟将1.5%藻酸盐、0.5%Tetra焦磷酸钠分散于58.5%的水中。然后在分散器内将30%葵花籽油、1.5%维生素/矿物质预混合物、7.5%磷酸三钙和0.5卵磷脂+着色剂以及微量成分强力搅拌3分钟分散。强力搅拌3分钟,将藻酸盐/tspp溶液加入油混合物中。将所得的乳液滴入2%的CaCl2溶液中,得到瞬时形成的凝胶胶囊。收集凝胶胶囊并再次滴入0.5%藻酸盐溶液。再收集凝胶胶囊并滴入2%的CaCl2溶液,出现两倍的瞬时形成的凝胶胶囊(如果需要,可重复这两个步骤)。
然后将凝胶胶囊与鱼/肉片混合,与肉汁或冻以约50/50的混合率混合并罐装食品。在125℃下甑馏罐装的食品1个小时。
可干燥凝胶胶囊以减少/控制它们表面的湿度,而不是将凝胶胶囊与肉汁和冻混合。然后将凝胶胶囊与干的宠物食品(如丸状)以约10/90的混合率混合。将成品包装。
实施例4:15%大豆油的果胶酸盐胶囊/片
在80℃下、于分散器内,用3分钟将2.5%果胶酸盐、0.5%Tetra焦磷酸钠分散于59.5%的水中。
然后在前述分散器内,将15%大豆油、1%维生素/矿物质预混合物、5%的干成分(如胡萝卜粉)、5%磷酸三钙+微量成分加入果胶酸盐/TSPP溶液中。在分散器内,将上述油/预混合物/磷酸三钙+0.5%卵磷脂和3%马铃薯淀粉强力搅拌3分钟分散。形成乳液。用乳化器研磨稳定的液态乳液。在切削装置处将磷酸钙溶液(1.5%CaSO4.2H2O、0.016黄原胶、6.48水)注入乳化器内。然后将成品乳液倒入盘内或模具内。在3-5分钟内开始胶凝,7-10分钟后可切削。切削凝胶胶囊/片。
然后将凝胶胶囊与鱼/肉片混合,与肉汁或冻以约50/50的混合率混合并罐装食品。在125℃下甑馏罐装的食品1个小时。
也可收集凝胶胶囊并滴入0.5%藻酸盐溶液中。再收集凝胶胶囊并滴入2%的CaCl2溶液,出现瞬时形成的凝胶胶囊。如果需要,可重复这两个步骤。然后将凝胶胶囊与鱼/肉片混合,与肉汁或冻以约50/50的混合率混合并罐装食品。在125℃下甑馏罐装的食品1个小时。
Claims (11)
1.含有至多50%凝胶胶囊或凝胶片的食品,所述胶囊或凝胶片:
(a)以藻酸盐、果胶酸盐或两者的混合物为基础,
(b)包括油、维生素、氨基酸、蛋白质、矿物质、着色剂、香味剂和/或选自生态微生物、生物活性分子的特定目标功能成分,
(c)含有至多50%的油、至多15%的钙盐、至多3%的维生素-矿物质预混合物;
所述食品为干燥、冷冻、甑馏或超高温处理的产品的形式。
2.根据权利要求1的食品,其中所述食品为宠物食品。
3.根据权利要求1的食品,该食品为冷冻食品,含有至多50%凝胶胶囊,所说的冷冻制品选自酸奶、木斯、奶油甜品。
4.根据权利要求1的食品,该食品为干燥或甑馏食品,含有至多50%凝胶胶囊,所说的制品选自肉制品或冻。
5.根据权利要求4的食品,所说的冻为肉冻或鱼冻。
6.根据权利要求1的食品,该食品为超高温处理食品,含有至多50%凝胶胶囊,所说的超高温处理制品为软饮料。
7.根据权利要求6的食品,所说的软饮料为奶饮料或大豆饮料。
8.根据权利要求1-4中任一项的食品,其中所述凝胶胶囊的直径达到20mm。
9.根据权利要求4的食品,其中所述凝胶胶囊的直径为0.1-5mm。
10.根据权利要求1-4中任一项的食品,其中所述钙盐选自磷酸三钙、氯化钙和硫酸钙。
11.根据权利要求1-4中任一项的食品,其中所述油选自棕榈油、大豆油、葵花籽油和牛脂。
