(a)アルギン酸塩/ペクチン酸塩+tsppの水溶液と油+ビタミン+ミネラル+着色剤+香料などのブレンドとを混合して、安定な乳濁液を得る。この安定な乳濁液を塩化カルシウム溶液(又は相当物)に滴下することによってゲルカプセル剤が得られ、瞬時にアルギン酸塩ゲルカプセル剤が得られる。
(b)アルギン酸塩/ペクチン酸塩+tsppの水溶液と油+ビタミン+ミネラル+着色剤+香料などのブレンドとを混合して、液状安定乳濁液を得る。いくつかの食品成分を、冷凍又は乾燥粉末形態で加えることができる(この場合分散液と称する)。その後、液状安定乳濁液/分散液の粉砕(乳化剤中)を行い、硫酸カルシウム溶液(又は相当物)を乳化剤に切断機の位置で注入し、最終乳濁液をトレイ又は型容器中に注ぐ。3〜5分でゲル化が始まり、7〜10分後に切断が可能になる。ゲルカプセル剤/錠剤を切断する。

分散機中で80℃で2分間、アルギン酸塩1.5%、ピロリン酸四ナトリウム0.5%を水45.5%に分散させる。水浴中で牛脂油40%を溶解させる。分散機中で、前記油、ビタミン/ミネラルプリミックス2%、リン酸三カルシウム10%並びにレシチン+着色剤及び微量成分0.5%の分散液を激しい攪拌下で3分間調製する。油混合物(52℃)をアルギン酸塩/TSPP(80℃)とブレンドし、乳濁液の最終温度は約60〜65℃になる。得られた乳濁液を2%CaCl2溶液に滴下し、そこで瞬時にゲルカプセル剤の形成が起こる。ゲルカプセル剤を回収する。次いで、ゲルカプセル剤を魚/肉フレークと混合し、グレイビー又はゼリーと約50/50の混合比でブレンドし、食品を缶詰にする。缶詰にした食品を125℃で1時間レトルト処理した。
分散機中で室温で2分間、アルギン酸塩1.5%、ピロリン酸四ナトリウム0.5%を水58.5%に分散させる。次いで、分散機中で、大豆油30%、ビタミン/ミネラルプリミックス1.5%、リン酸三カルシウム7.5%並びにレシチン+着色剤及び微量成分0.5%を激しい攪拌下で3分間分散させる。アルギン酸塩/tspp溶液を激しい攪拌下で3分間油混合物に加える。得られた乳濁液を2%CaCl2溶液に滴下し、その結果瞬時にゲルカプセル剤が形成する。ゲルカプセル剤を回収し、さらに0.5%アルギン酸塩溶液に滴下する。ゲルカプセル剤を再度回収し、2%CaCl2溶液に滴下し、そこで瞬時に2重ゲルカプセル剤の形成が起こる(必要な場合はこれらの2つのステップを繰り返す)。
分散機中で80℃で3分間、ペクチン酸塩2.5%+ピロリン酸四ナトリウム0.5%を水59.5%に分散させる。次いで、前記分散機中で、大豆油15%、ビタミン−ミネラルプリミックス1%、乾燥成分(例えばニンジン粉末)5%、リン酸三カルシウム+微量成分5%をペクチン酸塩/TSPP溶液に加える。分散機中で、前記油/プリミックス/triCa+レシチン0.5%及びジャガイモデンプン3%を激しい攪拌下で3分間分散させる。乳濁液が形成される。乳化剤を用いて安定な乳濁液を粉砕する。硫酸カルシウム溶液(CaSO4・2H2O 1.5%、キサンタンガム0.016%、水6.48%)を乳化剤に切断機のレベルで注入する。次いで、最終乳濁液をトレイ又は型容器中に注ぐ。3〜5分でゲル化が始まり、7〜10分後に切断が可能になる。ゲルカプセル剤/錠剤を切断する。
Claims (8)
- 食品であって、アルギン酸塩、ペクチン酸塩又は両方の混合物に基づき、油、ビタミン、ミネラル、リン酸三カルシウム、ピロリン酸四ナトリウム、並びに、塩化カルシウム又は硫酸カルシウムを含むゲルカプセル剤又は錠剤を最大50%含有し、前記食品がドライ、チルド、レトルト及びUHT−製品からなる群に入れられる上記食品。
- 前記ゲルカプセル剤又は錠剤が、さらに、アミノ酸、タンパク質、着色剤、香料、プロバイオティック微生物及び/又は生物活性分子を含む、請求項1に記載の食品。
- ゲルカプセル剤を最大50%含有し、前記チルド製品がヨーグルト、ムース、クリームデザートからなる群に入れられる、請求項1又は2に記載のチルド分野の食品。
- ゲルカプセル剤を最大50%含有し、前記製品が肉とゼリー、魚とゼリー、肉、ゼリーからなる群に入れられる、請求項1又は2に記載のドライ又はレトルト分野の食品。
- ゲルカプセル剤を最大50%含有し、前記UHT製品が牛乳ベース飲料、大豆ベース飲料、清涼飲料からなる群に入れられる、請求項1又は2に記載のUHT分野の食品。
- 前記ゲルカプセル剤の直径が最大で20mmである、請求項1から5までのいずれかに記載の食品。
- 前記ビタミン及びミネラルがビタミン−ミネラルプリミックスであって、
前記ゲルカプセル剤又は前記錠剤が、油50%以下、リン酸三カルシウム15%以下、ビタミン−ミネラルプリミックス3%以下を含む、請求項1から6までのいずれかに記載の食品。 - 前記油がヤシ油、大豆油、ひまわり油、獣脂からなる群に入れられる、請求項1から7のいずれかに記載の食品。
