Abstract

 本発明はS-アデノシル-L-メチオニン生産能を有する酵母を用い、S-アデノシル-L-メチオニンを含有する乾燥酵母を製造する方法において、酵母の菌体培養液より得られる酵母菌体濃縮物にシクロデキストリン類を添加した後に乾燥することを特徴とする、S-アデノシル-L-メチオニン含有乾燥酵母の製造方法、該製造方法で得られたSAMe含有乾燥酵母、及び該乾燥酵母を用いて成形された組成物に関するものである。本発明によって水溶性の生理活性物質として有用なS-アデノシル-L-メチオニンを高濃度に含む保存安定性に優れた乾燥酵母及び該乾燥を用いて成型された組成物を簡便かつ経済的に製造し、市場に提供することが可能となる。
