Abstract

Confiteria aireada congelada la cual tiene un exceso de por lo menos 40% y un componente de grasa en una cantidad de 2 a 20% (en peso de la confiteria aireada congelada), el componente de grasa el cual comprende trigliceridos de acidos grasos en donde no mas de 55% (en peso de los acidos grasos) de los acidos grasos en los trigliceridos son saturados, menos de 8% (en peso de los trigliceridos) de los trigliceridos son los trigliceridos SSS de cadena larga, caracterizada porque la proporcion del porcentaje de grasa que es solida en 5 degree C al porcentaje de los acidos grasos en los trigliceridos que son saturados (en peso de los acidos grasos) es mayor a 1 y en que el componente de grasa comprende mas de 60% (en peso) de grasa de cocoa o aceite de nuez de manteca de karite.
