Abstract
PURPOSE: To prepare an ice cream having agreeable melting characteristics in the mouth, by using cream and other fats composed of the medium-melting fraction of palm oil containing specific amounts of trisaturated-glyceride and 2-unsaturated-1,3- di-saturated glyceride.
CONSTITUTION: The objective ice cream containing (A) cream and (B) other fats which comprise (a) ≤35% of tri-saturated-glycerides and (b) other fats composed of (i) 50W100% of the medium-melting fraction of palm oil containing ≥60% of 2-unsaturated-1,3-di-saturated glycerides and (ii) 50W0% of other fats. Although the (b) component may be only the medium-melting fraction of palm oil, presence of other fats is preferable in view of the taste and flavor of the product. The fats other than cream are animal or vegetable fats having melting points of 20W40°C, pref. coconut oil palm kernel oil or their hardened oils.
