Abstract
PURPOSE: An edible chewing candy having a very high elasticity and the chewiness like chewing gum, comprising a small amount of pullular and gelatin.
CONSTITUTION: An edible chewing candy, obtained by foaming a melt, e.g. sugar or thick malt syrup, boiled down with a foaming agent or a thickener, and by adding fats and oils to the foam, is incorporated with 0.5W5wt.% of pullulan and 0.2W 2wt.% of gelatin, and, if necessary, one or two or more types of waxes, hardened oils, monoglycerides, and unsaponified sheanuts.
